4 slices bacon, cut into 1-inch pieces
1 medium onion, chopped
1/4 cup all-purpose flour
2 cans (14.5 ounces each) reduced-sodium chicken broth
1 large baking potato, peeled and diced
1 head broccoli (about 1 pound), cut into bite-size florets, stalks peeled and thinly sliced
1 package (10 ounces) frozen corn kernels
1/2 teaspoon dried thyme
1 cup whole milk
Coarse salt and ground pepper

Steps:

  • In a large pot, cook bacon over medium-low, stirring occasionally, until crisp, 8 to 10 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate. Increase heat to medium. Cook onion, stirring, until it begins to soften, 6 to 8 minutes.
  • Add flour; cook, stirring constantly, 30 seconds. Add broth and potato; bring to a boil. Reduce to a simmer; cook until potato is tender, about 10 minutes. Add broccoli, corn, thyme, and milk. Cook until broccoli is crisp-tender, 8 to 10 minutes. Season with salt and pepper. Serve topped with bacon.

1 bonless sninless chicken breast,cooked and diced in bite sized
1 broccoli crown,chopped in bite sized pieces
1 c onion,chopped
2 Tbsp diced garlic
2 Tbsp butter
4 c chicken stock or vegetable stock
2 can(s) kernel corn,drained
1 c half and half

Steps:

  • 1. In a 6 Quart Dutch oven,melt butter on med./high heat. Add Onion and Garlic.Saute' until onion is tender. Add broth,chicken,corn,and broccoli.Cook until brocoli is crisp tender.Reduce heat.Add 1 cup Half and half.Cook for 2-3 min. Do Not Boil!
  • 2. Serve w/ crusted bread and top chowder with Shredded cheese. Enjoy!

2 cups frozen sweet corn (from 16-oz bag)
1 cup half-and-half

Steps:

  • In 4-quart saucepan, melt butter over medium heat. Cook onion and garlic in butter 2 to 3 minutes, stirring frequently, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, 1 minute.

2 medium leeks, (1 1/2 C) white part only, thoroughly rinsed and thinly sliced
2 large potatoes (1 lb), peeled and cut into 1" chunks
Stalks from 2 heads broccoli (3/4 lb), peeled and coarsely chopped
5 C vegetable broth
1/2 t salt
1 C fresh or frozen corn kernels
1/4 C fresh parsley, finely chopped
1/2 C milk or half and half

Steps:

  • 1. Saute leeks and onion on melted butter until lightly browned. 2. Stir in potatoes, broccoli, broth and salt. 3. Lock lid and bring to high pressure. Adjust the heat to maintain high pressure for 4 minutes. 4. Use quick-release method. 5. Stir in the corn, parsley, and milk. Simmer until the corn is tender (1-2 Min). Adjust seasonings before serving.

This chowder warms you to the bones when its cold and bitter outside. A nice hearty chowder.

10 ounce(s) package frozen broccoli w/cheese sauce
12 ounce(s) can of mexicorn with red and green peppers
1 1/2 cup(s) diced ham
1 cup(s) 2 % milk
1 cup(s) half n half
1 medium potato, peeled and diced
dash(es) black pepper
1 slice(s) 1/2 thick of velveeta cheese, diced

Steps:

  • Put frozen broccoli w/cheese in a micro safe bowl and cook for 3 minutes. Dump into a large sauce pan along with contents of the mexicorn, potato, ham and 1 cup 2% milk.
  • Heat till it starts to boil, stirring several times so it doesn't stick. Turn it down to simmer till broccoli and potatoes are cooked to your liking. Then put the velveeta cheese in and stir until dissolved. Add the 1 cup of Half n half.
  • Bring the chowder back up to almost boiling and then serve with favorite crackers or fresh baked bread.

2 medium leeks, white parts, sliced
1 medium onion, coarsely chopped
2 large potatoes, peeled and cut in 1/2" chunks
2 stalks broccoli, cut into florets
1 c corn, fresh or frozen
5 c vegetable stock
1/2 tsp salt
1/4 c sprigs fresh parsley
1/2 c milk

Steps:

  • 1. Melt the butter in a pressure cooker; saute the leeks and onions, stirring frequently, until the onion is lightly browned, about 4 minutes.
  • 2. Stir in the potatoes, broccoli, corn, stock, salt and half the parsley; lock the lid in place and over high heat bring to high pressure.
  • 3. Adjust heat to maintain high pressure and cook for 3 minutes.
  • 4. Reduce the pressure with a quick release method. Remove the lid, tilting it away from you to allow any excess steam to escape.
  • 5. Stir in the remaining parsley and milk.
  • 6. Adjust seasonings before serving.
