- In a large pot, cook bacon over medium-low, stirring occasionally, until crisp, 8 to 10 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate. Increase heat to medium. Cook onion, stirring, until it begins to soften, 6 to 8 minutes.
- Add flour; cook, stirring constantly, 30 seconds. Add broth and potato; bring to a boil. Reduce to a simmer; cook until potato is tender, about 10 minutes. Add broccoli, corn, thyme, and milk. Cook until broccoli is crisp-tender, 8 to 10 minutes. Season with salt and pepper. Serve topped with bacon.

- 1. In a 6 Quart Dutch oven,melt butter on med./high heat. Add Onion and Garlic.Saute' until onion is tender. Add broth,chicken,corn,and broccoli.Cook until brocoli is crisp tender.Reduce heat.Add 1 cup Half and half.Cook for 2-3 min. Do Not Boil!
- 2. Serve w/ crusted bread and top chowder with Shredded cheese. Enjoy!

- Put frozen broccoli w/cheese in a micro safe bowl and cook for 3 minutes. Dump into a large sauce pan along with contents of the mexicorn, potato, ham and 1 cup 2% milk.
- Heat till it starts to boil, stirring several times so it doesn't stick. Turn it down to simmer till broccoli and potatoes are cooked to your liking. Then put the velveeta cheese in and stir until dissolved. Add the 1 cup of Half n half.
- Bring the chowder back up to almost boiling and then serve with favorite crackers or fresh baked bread.

- 1. Melt the butter in a pressure cooker; saute the leeks and onions, stirring frequently, until the onion is lightly browned, about 4 minutes.
- 2. Stir in the potatoes, broccoli, corn, stock, salt and half the parsley; lock the lid in place and over high heat bring to high pressure.
- 3. Adjust heat to maintain high pressure and cook for 3 minutes.
- 4. Reduce the pressure with a quick release method. Remove the lid, tilting it away from you to allow any excess steam to escape.
- 5. Stir in the remaining parsley and milk.
- 6. Adjust seasonings before serving.
