2 broccoli heads ((BIG!))
1 cup shredded cheese (or more!)
2 tsp lemon zest
2 tbsp lemon juice ((or more!))
5 tbsp extra virgin olive oil
1/3 cup parmesan (, finely grated)
2 garlic cloves (, minced)
1 tsp mixed dried herbs ((or fresh!))
1/2 tsp+ red pepper flakes ((add more if you want spicy!))
1 tsp sugar
3/4 tsp salt
1/2 tsp pepper

A cheesy, savory broccoli cheese pasta bake made with Parmesan and Gruyere cheeses! It's a warm and comforting casserole everyone will love.

8 ounces uncooked penne pasta (or other short pasta noodle)
4 cups fresh broccoli florets
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 tablespoons garlic, minced or pressed
1 teaspoon salt
½ teaspoon dried basil
½ teaspoon dried oregano
1 cup heavy cream
1 cup chicken broth
1 cup shredded gruyere cheese, divided
1 cup shredded parmesan cheese, divided

Steps:

  • Preheat the oven to 350°F, and lightly grease a 2.5 quart baking dish. Set aside.
  • Bring a large pot of salted water to a boil, and cook the pasta for 5-6 minutes. Add the broccoli florets and cook for an additional 1 minute. The pasta should be al dente, and the broccoli should be lightly blanched.
  • Drain the pasta and broccoli, rinse under cold water, drain again, and set aside. In a large skillet over medium heat, melt the butter. Whisk in the flour, and cook for 2-3 minutes. Then, add the garlic, salt, basil, and oregano, and whisk to combine.
  • Adjust the heat to low. While continuing to whisk, slowly pour in the heavy cream and broth. Continue whisking until wisps of steam begin to rise from the liquid. Then, add half the Gruyere and half the Parmesan cheese a little at a time, whisking between each addition until the cheese is melted. Remove from heat.
  • Transfer the pasta, broccoli, and sauce to the prepared baking dish. Stir to combine. Top with the remaining cheese. Bake uncovered for 20-25 minutes or until the cheese is golden brown and the sauce is bubbling around the edges.

This is a simple dish my grandmother made for me when I was a child. Now I make it for my daughter, Xea, and she loves it. As the broccoli takes on a toasty brown color, it develops a delicious nutty flavor that even picky kids will like.

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water
8 garlic cloves, roughly chopped
1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

1 (8 ounce) package fusilli pasta
1 tablespoon olive oil
2 teaspoons salt
⅓ cup butter
⅓ cup all-purpose flour
3 cups milk
¾ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon garlic salt
⅛ teaspoon ground nutmeg
⅛ teaspoon dried thyme
1 ½ cups shredded sharp Cheddar cheese
1 ½ pounds fresh broccoli, cooked
¾ cup shredded Swiss cheese

Steps:

  • In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.
  • Meanwhile, in a large saucepan melt butter or margarine. Stir in flour and milk and whisk until mixture boils and thickens. Add grated Parmesan cheese, salt, garlic salt, nutmeg, thyme and grated Cheddar cheese and stir until blended.
  • Add cooked broccoli and drained pasta to cheese sauce. Mix well. Pour into a greased 9x13 inch baking dish. Sprinkle with grated Swiss cheese.
  • Bake uncovered at 350 degrees C(175 degrees C) for 20 minutes. Let stand 10 minutes before serving.

Steps:

3 cups dried penne or 3 cups fusilli (about 1/2 package)
1 broccoli
4 sun-dried tomatoes packed in oil (optional)
2 cloves garlic
2 cups grated cheddar cheese
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Bring a large saucepan of water to a boil.
  • Add pasta and cook according to package directions, about 8 minutes.
  • Meanwhile, cut stems from broccoli.
  • Peel, then slice into thin rounds.
  • Slice sun-dried tomatoes into thin strips.
  • Mince garlic.
  • Place cheese in a large bowl.
  • Stir in sun-dried tomatoes and garlic.
  • When pasta has cooked 8 minutes, add broccoli stems and florets.

1 bunch broccoli (about 1 pound), trimmed and cut into large florets
4 tablespoons (1/2 stick) unsalted butter
Kosher salt and freshly ground pepper
12 ounces spaghetti
2 cloves garlic, minced
2 tablespoons olive oil
1/2 cup grated Parmesan cheese

Steps:

  • Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.
  • Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.
  • In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. 300g short wholemeal pasta shapes
800g broccoli (about 3 heads), cut into large florets
2 tbsp olive oil
1.2 litres milk
1 bay leaf, scrunched up a little
60g butter
60g plain flour
200g cheddar, grated
1 tbsp Dijon mustard
¼ tsp freshly grated nutmeg
60g fresh brown breadcrumbs

Steps:

  • Bring a large pan of salted water to the boil and cook the pasta until al dente - this will take a couple of minutes less than pack instructions. Halfway through the pasta cooking time, add the broccoli to the pan. Drain, then toss the pasta and broccoli in the oil to coat.
  • While the pasta and broccoli are cooking, bring the milk to a simmer with the bay leaf in a separate pan, then remove from the heat and set aside. Melt the butter in a saucepan over a medium heat, add the flour and whisk together. Reduce the heat to medium-low and cook for a couple of minutes, stirring often until combined and beginning to stick to the pan.
  • Whisk in the warm infused milk gradually, making sure there are no lumps, then reduce the heat to low and cook gently for 8-10 mins until the sauce is thickened and smooth. Remove from the heat and stir in three-quarters of the cheese, the mustard (you can add more, if you like), nutmeg, plenty of black pepper and some salt. Remove the bay leaf. Heat the oven to 180C/160C fan/gas 4.
  • Tip the cooked pasta and broccoli into a large baking dish (ours measured 30 x 22cm) and pour over the sauce. Sprinkle over the remaining cheese and the breadcrumbs. Bake for 30-35 mins until golden brown and bubbling. Remove from the oven and leave to rest for 5 mins before serving.
