Broccoli-Bacon Salad image

We can't think of a better picnic food, lunch snack or side dish than this crunchy and creamy broccoli-bacon salad. Packed with vitamin C (thanks to all those fresh florets) and coated in a smooth sauce, this is the refreshing salad you never knew you needed in your life. Topped with crunchy sunflower seed and crispy bacon, when you bring this dish to the potluck, you can bet everyone is going to be asking for the recipe.

1/2 cup mayonnaise or salad dressing
2 tablespoons sugar
2 tablespoons white vinegar
1 pound broccoli, cut into flowerets (5 cups)
1/4 cup chopped red onion
1/4 cup chopped yellow onion
1/4 cup sunflower nuts
6 slices bacon, crisply cooked and crumbled

Steps:

  • Mix mayonnaise, sugar and vinegar in large bowl. Stir in broccoli and onion; toss until coated. Cover and refrigerate 2 hours to blend flavors.
  • Sprinkle with nuts and bacon before serving.

Broccoli salad,broccoli slaw, whatever you want to call it, just as long as you call it a side dish :) This is so super easy to make and so delish. This goes great with just about anything. Store in the fridge and enjoy the next day, if there is any left. Hope y'all enjoy.

2 large heads of broccoli
1 c golden raisins
1/2 c diced red onion
1 c cooked bacon , crumbled
1/2 c mayonnaise
2 Tbsp sugar
3 Tbsp apple cider vinegar
pinch of s&p

Steps:

  • 1. Cook bacon & let cool. Cut broccoli into small florets ( I blanched mine then into ice water, optional)
  • 2. Add everything into a medium bowls and combine. Not at this point you can play around with the mayo , raisins, onions, maybe you want a little more or less.
  • 3. Serve now or let chill. Really great the next day. ENJOY ( told ya it was super easy)

This is the problem with a broccoli gratin made in a casserole-style baking dish, meaning the ratio of crispy-cheesy-crumb-y topping to soft, tender broccoli is just way under optimal balance. With a sheet pan, however, every single morsel of broccoli gets an ample coating of crunch. You know what else is awesome? With a preheated sheet pan (see note), the time it takes to roast the broccoli is minimal-I'm talking 15 minutes, tops, for caramelized edges and florets. Meaning you can hit broccoli bliss in under 20 minutes. Are you in?

1 1/4 pounds broccoli florets (I like leaving about 1 inch of the stem attached)
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
2 tablespoons unsalted butter
2 garlic cloves, minced
1/3 cup panko bread crumbs
3/4 cup grated Cheddar cheese
1/4 cup finely grated Parmigiano Reggiano cheese

Steps:

  • Adjust one oven rack to the upper-middle position and another rack to the position. Place a rimmed sheet pan on the middle rack and preheat the oven to 400°F.
  • Toss the broccoli florets with the olive oil and salt in a medium-size bowl. Turn the broccoli out onto the hot sheet pan (it should sizzle!) and roast until the bottom of the florets are nicely browned, about 15 minutes.
  • Meanwhile, combine the butter and garlic in a ramekin and place it in the oven until the butter melts, 5 minutes. (Alternatively, combine them in a microwave-safe bowl and microwave on high power in 15-second increments, swirling between each, until the butter melts, 45 seconds to 1 minute.)
  • Place the bread crumbs in a medium-size bowl, add the butter-garlic mixture, and toss with a fork. Add the Cheddar and Parmigiano Reggiano cheeses and toss to combine.
  • Remove the sheet pan from the oven and sprinkle the broccoli with the cheesy bread crumb mixture. Turn the broiler to high and place the sheet pan on the upper rack. Broil until the cheese is melted and browned, 1 to 2 minutes (watch the bread crumbs closely as broiler intensities vary and you don't want them to burn). Remove from the oven, transfer to a platter-making sure to scrape up all of the crispy, crunchy cheesy bits-and serve.

1 red onion
½ pound bacon
¾ cup raisins
¾ cup sliced almonds
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar

Steps:

  • Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  • Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  • To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.
