Fresh broccoli & spicy turkey sausage combined with pasta serves up a tasty dish. I usually have to double it because everyone wants seconds!

8 ounces hot Italian sausage (hot turkey sausage works well & less fat)
2 tablespoons unsalted butter
2 tablespoons flour
2 cups milk
8 ounces ziti pasta
1 large head of broccoli
1/2 cup grated parmesan cheese

Steps:

  • Heat oven 350.
  • Boil water for Ziti
  • Lightly grease 13x9 casserole dish.
  • Cook sausage in pan, break up to small pieces.
  • Add butter and stir.
  • Sprinkle flour on and stir (2 minutes).
  • Pour in milk, stir constantly until smooth and thick.
  • Season w/salt and pepper.
  • Cook Ziti 5 minutes then add broccoli pieces & cook 3 more minutes.
  • Drain.
  • Stir ziti/broccoli w/sausage mixture.
  • Put all in casserole dish.
  • Sprinkle parmesan cheese on top.
  • Bake 25 mins or until top is brown and bubbly.

The original recipe calls for roasted red peppers but we like them without. I usually cook the sausage with onions and crushed garlic for awesome flavor. If I don't have any sausage on hand I'll sometimes do a package of vegetable medley instead. This is a great quick meal that I make on weeknights.

1 (1 lb) jar alfredo sauce
1/3 cup milk
1 lb sweet Italian sausage, cooked and crumbled
1 (9 ounce) package frozen chopped broccoli, thawed
8 ounces egg noodles, cooked and drained
1 cup shredded cheddar cheese, divided or 4 ounces cheddar cheese
1 1/2 teaspoons salt (to taste)
1 teaspoon pepper

Steps:

  • Preheat oven to 350. In large bowl, combine Alfredo sauce and milk, stir in sausage, broccoli, noodles, salt, garlic powder and pepper, and 3/4 cup cheese.
  • In a 13x9 inch baking dish, evenly spread sausage mixture. Sprinkle with remaining 1/4 cup cheese.
  • Bake 30 minutes or until heated through.

1 pound hot Italian sausage, casings removed
½ yellow onion, coarsely chopped
4 cloves garlic, minced
1 (15 ounce) can cannellini beans, drained and rinsed
1 (8 ounce) package sliced baby bella mushrooms
1 cup chicken broth
1 bunch broccoli rabe, coarsely chopped
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sausage in an oven-safe pot or Dutch oven over medium heat; cook and stir until crumbled and browned, about 5 minutes. Transfer sausage to serving plate, reserving drippings in the pot. Add onion; cook and stir until softened, about 5 minutes. Add garlic; cook and stir until fragrant, about 3 minutes.
  • Stir sausage, cannellini beans, mushrooms, and chicken broth into the pot. Increase heat and bring to a boil. Remove from heat. Place all broccoli rabe on top.
  • Bake in the preheated oven, covered, until broccoli rabe wilts, about 15 minutes. Remove from oven; stir well and season with salt and pepper. Continue baking until flavors combine, about 15 minutes more.
