WHITE PIZZA WITH BROCCOLI

This delicious vegetarian pizza features steamed broccoli, creamy ricotta, mozzarella, red pepper flakes, lemon zest, and garlic.

2.5 cups broccoli florets (cut into bite-size pieces)
2 tbsp olive oil (divided)
1/4 tsp red pepper flakes (more to taste)
Salt (to taste)
Freshly ground black pepper (to taste)
12 ounces pizza dough (store-bought or homemade)
1 cup ricotta cheese
2 cloves garlic (minced)
1.5 cups shredded mozzarella cheese
2 tsp lemon zest (more to taste)

Steps:

  • Preheat the oven to 450 degrees F. Place the pizza stone on the center rack of the oven while the oven preheats. If you don't have a pizza stone, you can still preheat the pan or baking sheet you are using to cook the pizza.
  • Meanwhile, steam the broccoli by placing the florets in a large skillet. Cover them with water, bring to a boil, cover, and cook for 3 to 5 minutes until bright green and crisp-tender. (Be careful not to make the broccoli mushy.) You can also steam the broccoli in a vegetable steamer basket if you have one or use roasted broccoli instead. Drain the broccoli, transfer to a mixing bowl, and toss in about 1 tbsp olive oil and the red pepper flakes. Season with salt and pepper.
  • Prepare the pizza dough by pulling/rolling it into a ~12-inch flat circle on a floured surface. Set aside. In a small bowl, mix together the ricotta cheese, minced garlic, salt, and pepper.
  • When you are ready to make the pizza, remove the pizza stone from the oven. Spray with nonstick cooking spray if needed (some pizza stones are inherently nonstick). Carefully slide the pizza dough onto the stone. You should hear it sizzle slightly; this is a good sign and means that you will have crispy crust! Brush the dough with a little bit of olive oil, then sprinkle with about half of the mozzarella cheese (~3/4 cup).
  • Place the steamed broccoli florets on top of the pizza, followed by dollops of the ricotta cheese and garlic mixture. Sprinkle the rest of the mozzarella cheese and lemon zest on the pizza. I like to finish the process by adding some more freshly ground black pepper and a drizzle of olive oil on top.
  • Place the pizza stone on the center rack of the oven, and cook for 15 to 20 minutes until the cheese bubbles and the crust is slightly browned. Remove from oven, let cool for a few minutes, and cut into slices. Enjoy!

1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
1 cup pizza sauce or marinara
2 cups baby spinach
2 to 3 cups (8 to 12 ounces) shredded low-moisture part-skim mozzarella cheese
1/2 cup jarred or canned artichoke, cut into 1" pieces
1/2 cup fresh red or orange bell pepper, cut into narrow 2″ strips
1/2 cup red onion, cut into thin wedges
1/2 cup halved cherry tomatoes
1/2 cup pitted Kalamata olives, halved lengthwise
1/2 cup sliced almonds (optional)
Optional garnishes: Fresh basil (small leaves or torn), red pepper flakes and/or finely grated Parmesan cheese

Steps:

  • Preheat the oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you're using a baking stone or baking steel, place it on the upper rack. Prepare dough through step 5.
  • Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce, followed by the cheese (use all three cups if you want a cheesy pizza as shown here).
  • Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives and almonds (if using).
  • Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes (or significantly less, if you're using a baking stone/steel-keep an eye on it).
  • Transfer pizzas to a cutting board and sprinkle with with fresh basil, red pepper flakes and Parmesan, if using. Slice and serve! Leftover pizza keeps well in the refrigerator for 4 days, or for several months in the freezer.

1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
1 teaspoon olive oil
1/2 teaspoon sugar
1/2 cup whole wheat flour
1/2 teaspoon salt

TOPPINGS:
1 tablespoon olive oil
1 cup sliced fresh mushrooms
1/4 cup chopped onion
4 garlic cloves, minced
3 cups broccoli florets
2 tablespoons water

4 plum tomatoes, sliced
1/4 cup chopped fresh basil
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a bowl, dissolve yeast in warm water. Add oil and sugar; mix well. Combine whole wheat flour and salt; stir into yeast mixture until smooth. Stir in enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. 1 small onion, chopped
3 large minced garlic cloves
1 lb broccoli (fresh)
1 large red bell pepper, seeded and chopped
1 lb mozzarella cheese (skim milk, shredded)
2 prepared pizza crust (deep dish thick)
6 ounces provolone cheese, grated
4 ounces parmesan cheese, shredded
4 tablespoons unbleached flour
salt & pepper (to taste)

Steps:

  • Preheat oven to 425 degrees F.
  • Spray small nonstick skillet with cooking spray; add oil, onion and garlic.
  • Cook over low heat for about five minutes, until soft; transfer to a mixing bowl.
  • Separate broccoli florets then chop and add to the mixing bowl.

1/2 cup Simple Three-Cheese Blend for Pizza
Garlic, chopped
Red onion
Kalamata olives, pitted
Broccoli florets, sliced

  • Heat oven to 450 degrees.

2 cloves garlic, minced, or to taste

1 cup shredded Italian cheese blend, or to taste
¾ cup ricotta, or to taste
1 cup broccoli florets, or to taste
