This recipe just caught my eye while I was reading Cooking Light, Sept/07, issue. Have taken the liberty of adding some toasted almonds and crushed red pepper flakes to an otherwise wonderful recipe. It was awesome! UPDATE: Made this again & had no almonds but did have cashews, so I used them and they were even better! 09/15/07

1 tablespoon olive oil
4 cups sliced mushrooms
1/4 cup sliced shallot
1/4 cup dry sherry
4 cups broccoli florets
1/2 teaspoon kosher salt
crushed red pepper flakes
1/2 cup reduced-sodium fat-free chicken broth
1/4 teaspoon fresh ground black pepper
slivered & toasted almonds or toasted cashews

Steps:

  • Heat oil in a large Dutch oven over medium-high heat.
  • Add mushrooms and shallots to pan; sauté 10 minutes or until mushrooms are lightly browned.
  • Stir in sherry; cook 2 minutes or until liquid evaporates, stirring frequently.
  • Add broccoli and salt to pan; stir well.
  • Stir in broth & red pepper flakes; bring to a boil.
  • Cover and cook 5 minutes or until broccoli is crisp-tender.
  • Stir in black pepper, if using, and toasted slivered almonds or toasted cashews.
  • Enjoy!

PASTA WITH MUSHROOMS AND BROCCOLI



Pasta With Mushrooms and Broccoli image

Broccoli stems and flowers can be prepared and cooked separately, like two different vegetables. For this pasta I used a vegetable peeler to shred the broccoli stems into thin ribbons, which I cooked briefly with the mushrooms. I sliced the crowns very thin and blanched them briefly with the pasta. The result is a dish with different textures and shades of green: the stems should be crisp-tender, their color faded. The crowns will be bright green, and 2 to 2 1/2 minutes cooking will render them tender but not mushy.

2 large stalks broccoli (stems and crowns)
2 tablespoons extra-virgin olive oil
1/2 pound mushrooms, sliced 1/3 to 1/2 inch thick
2 garlic cloves, minced
Salt and freshly ground pepper
1 teaspoon fresh thyme leaves (optional)
8 ounces spaghetti
Freshly grated Parmesan

Steps:

  • Cut broccoli stalks away from crowns and peel stalks. Use a vegetable peeler to shave stalks into thin ribbons. Set aside. Cut crowns into thin slices (about 1/4 inch). Combine with the little flower buds that fall off onto your cutting surface in a bowl.
  • Begin heating a large pot of water for the pasta. Heat 1 tablespoon of the oil over medium-high heat in a large, heavy skillet. Add sliced mushrooms and sauté until lightly colored and beginning to sweat, 3 to 5 minutes. Reduce heat to medium, add salt to taste, another tablespoon of oil, and shaved broccoli stems. Continue to sauté until the broccoli stem ribbons are crisp-tender, 3 to 5 minutes. Add garlic and thyme, season to taste with salt and pepper, and cook, stirring, until garlic smells fragrant, 30 seconds to a minute. Remove from heat.
  • When water in the pasta pot comes to a boil, add salt to taste and spaghetti. Set timer for 2 minutes less than the cooking time suggested on the package. When it goes off, add thinly sliced broccoli crowns and flower buds, and cook 2 minutes more, or until the pasta is al dente. Using a ladle, transfer 1/2 cup of the pasta cooking water to the pan with the mushrooms and shaved broccoli stems. Drain the pasta and broccoli and toss with the mushroom and stem mixture, either in a large bowl or right in the pan. Serve with Parmesan cheese.

1 head broccoli, cut into florets

1 pound broccoli, crowns broken or cut into small florets, stems peeled and diced
2 tablespoons canola oil or peanut oil
6 ounces shiitake mushrooms, stems removed, caps quartered
2 plump garlic cloves, minced
2 teaspoons minced fresh ginger
6 scallions, white and light green parts only, sliced
1/2 teaspoon red-pepper flakes
1/2 pound firm tofu, sliced and drained on paper towels
1 cup chicken stock or vegetable stock
2 tablespoons soy sauce (more to taste)
1/2 pound soba or udon noodles, or dried rice sticks (soak rice sticks in hot water for 20 minutes)
1/4 cup chopped cilantro
2 teaspoons sesame oil

Steps:

  • Bring a large pot of salted water to a boil. Fill a bowl with ice water. Add the broccoli to the boiling water and blanch for 1 minute. Remove to the ice water. Allow to cool, then drain and dry on paper towels. Cover the pot of water and keep hot.
  • Heat a wide, heavy skillet or wok over medium-high heat and add 1 tablespoon of the oil. When it is rippling hot, add the mushrooms and sear for 5 minutes, stirring from time to time. Turn the heat to medium, add the garlic, ginger, scallions, and red pepper flakes and cook for another 30 seconds to a minute, until fragrant. Remove from the heat and transfer the contents of the pan to a bowl.
  • Return the pan to medium-high heat and heat the remaining tablespoon of oil until rippling. Add the tofu and sear on both sides until it begins to color, about 1 minute per side. Add 1 teaspoon soy sauce and stir together. Return the mushroom mixture and the broccoli to the pan. Add the stock and soy sauce, bring to a simmer and turn the heat to low. Simmer uncovered for a minute or two, until the broccoli is crisp-tender, then turn off the heat.
  • Meanwhile, bring the pot of water back to a boil and add the pasta. Cook soba or udon noodles until al dente, about 5 minutes. Cook softened rice noodles for 1 minute. Drain and toss with the mushrooms and the broccoli. Heat through, add the cilantro and sesame oil, toss together, and serve.

I love all kinds of pizza, my sister owned a Pizzeria in Buffalo for years and this was one of her best sellers. She cut down the dough recipe for me as hers made about a hundred pounds of dough at a time.

PIZZA CRUST
1 c white whole wheat flour
1 c unbleached bread flour
1 tsp kosher salt
1 tsp sugar
1 2/2 tsp vital wheat gluten
2 tsp instant yeast
1 Tbsp olive oil, extra virgin
3/4 c water, warm (90-110-degrees)
WHITE SAUCE
1 Tbsp olive oil, extra virgin
pinch red pepper flakes
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp freshly ground black pepper
1/4 tsp kosher salt
1 c milk
1 Tbsp all purpose flour
1/4 c mozzarella cheese, freshly shredded
2 Tbsp parmigiano-reggiano, grated
TOPPINGS
1 Tbsp olive oil, extra virgin
2 c mushrooms, fresh, sliced
3 c broccoli florets
kosher salt and freshly ground black pepper to taste
1 clove garlic, minced
1 1/2 c chicken, cooked and shredded
1 c mozzarella cheese, freshly shredded

Steps:

  • 1. In the bowl of your stand mixer, combine the flours, salt, sugar, wheat gluten and instant yeast. Whisk together. Add the olive oil and the water. Using dough hook, mix and knead dough for 8-10 minutes, adding more water or flour as needed, until dough is smooth and elastic. Spray a large bowl with cooking spray and transfer dough to bowl, rolling it around to completely coat with oil. Cover bowl with plastic wrap and let proof at room temperature until doubled, about one hour. Gently punch dough down to degas, knead again for a few minutes and return to bowl. Cover bowl again with plastic wrap and refrigerate overnight. The next day, remove dough from fridge about an hour and a half before you want to bake the pizza. Spray some cooking spray on your counter top and transfer dough. Cover dough with plastic wrap that has been sprayed with cooking spray. Let rest while you make your sauce and put the rest of your pizza ingredients together.
  • 2. In a saute pan heat olive oil over medium heat. Add crushed red pepper flakes, onion powder, garlic powder, salt, pepper and flour. Cook and stir for 2-3 minutes than whisk in milk. Reduce heat and whisk and stir until sauce is smooth and has started to thicken. Remove pan from heat and whisk in the Parmigiano-Reggiano and mozzarella cheeses. Set aside. In a skillet heat olive oil over medium heat. Add mushrooms and saute until they've given up most of their liquid, 5-6 minutes. Add the broccoli florets and season with salt and pepper. Saute for another minute or two then add minced garlic and saute for one more minute. Remove from heat and add chicken. Stir well to combine.
  • 3. Place pizza stone in oven and preheat oven to 475-degrees. Spray parchment paper with cooking spray and lightly dust with cornmeal (optional.) Place dough on prepared parchment paper and flatten. Working from the middle to the outside, press and stretch the pizza dough into a 12-14 inch round. If it resists, just let it rest for 5-10 minutes and then work with it again. Transfer pizza crust and parchment paper to pizza stone. Bake for 5 minutes then remove crust from oven, leaving stone in oven. Spread white sauce evenly across crust, then top with the chicken, mushroom and broccoli mixture. Sprinkle mozzarella cheese over all. Return crust to oven. You should be able to do this without the parchment paper at this point. Bake for an additional 8-10 minutes, or until crust is evenly browned and cheese is bubbly.

FETTUCCINE WITH BRAISED MUSHROOMS AND BABY BROCCOLI

I buy baby broccoli at my local Trader Joe's. The stalks are thin, like broccoli raab's, and the flowers are delicate. If you really want an intense mushroom experience, seek out the fabulous mushroom fettuccine made by Al Dente Pasta. You can find it in gourmet markets, in catalogues such as Zingerman's, and online.

1/2 ounce (about 1/2 cup) dried porcini mushrooms
2 tablespoons extra virgin olive oil
1 small shallot, minced
1 pound mushrooms, cleaned, trimmed and sliced 1/2 inch thick
Salt to taste
2 garlic cloves, minced
1/4 cup dry white wine or red wine
1 teaspoon chopped fresh rosemary or fresh thyme leaves
1/2 pound baby broccoli, cut in 1-inch pieces
Freshly ground pepper
3/4 pound fettuccine or egg noodles
Freshly grated Parmesan for serving

Steps:

  • Place the dried mushrooms in a Pyrex measuring cup and pour on 2 cups boiling water. Let soak 30 minutes while you prepare the other ingredients. Place a strainer over a bowl; line it with cheesecloth, a coffee filter or paper towels; and drain the mushrooms. Squeeze the mushrooms over the strainer to extract all the flavorful juices, and measure out 1 1/2 cups of the broth. Rinse the mushrooms, away from the bowl with the broth, until they are free of sand. Squeeze dry and set aside. If very large, chop coarsely.
  • Begin heating a large pot of water for the pasta. Heat the olive oil in a large, heavy nonstick skillet or saucepan over medium heat, and add the shallot. Cook, stirring for a few minutes, until tender, and add the fresh mushrooms and salt to taste. Cook, stirring often, until the mushrooms begin to soften and to sweat, about five minutes. Add the garlic, and continue to cook the mushrooms, stirring often, until they have softened a little more, about two minutes. Add the reconstituted dried mushrooms, the wine and rosemary (or thyme), and turn the heat to high. Cook, stirring often, until the wine evaporates and the pan is almost dry, five to 10 minutes. Stir in the mushroom broth. Bring to a simmer, and cook over medium heat, stirring often, until the mushrooms are thoroughly tender and fragrant and the surrounding broth is thick and gravy-like, about 20 minutes. Taste and adjust salt and pepper. Remove from the heat, and keep warm.
  • When the pasta water comes to a boil, salt generously and add the baby broccoli. Blanch for five minutes, until tender but still bright. With a slotted spoon or skimmer, transfer to the pan with the mushrooms.
  • Add the pasta to the boiling water. Cook al dente, until firm to the bite, following the directions on the package but checking a minute or two before the end of the designated cooking time. (Note that some egg noodles, such as Al Dente Pasta, take only three to four minutes). Add a ladleful of pasta cooking water to the mushrooms and baby broccoli, drain the pasta, and toss with the mushrooms and broccoli in a large pasta bowl or in the pan. Serve at once, passing Parmesan at the table.

2 tablespoons thai green curry paste
2 tablespoons fish sauce
2 tablespoons brown sugar
1 1/2 chicken breasts, sliced thin (boneless and skinless)
2 1/2 cups broccoli
4 ounces button mushrooms, sliced
1 medium bell pepper, sliced
1 chile, seeded and quartered
1 tablespoon lime juice
1/2 cup fresh basil leaf

Steps:

  • 1. Carefully spoon off about 1 cup of the top layer of cream from one can of coconut milk -- this layer will be thick and possibly solid. Place the coconut cream and curry paste in a large Dutch oven and bring to a simmer over high heat, whisking to blend, about 2 minutes. Maintain this brisk simmer and whisk frequently until almost all of the liquid evaporates, 3 to 5 minutes. Reduce the heat to medium-high and whisk constantly until the cream separates into a puddle of colored oil and coconut solids, 3 to 8 minutes. (You should hear the curry paste starting to fry in the oil.) Continue cooking until the curry paste is very aromatic, 1 to 2 minutes.
  • 2. Whisk in the remaining coconut milk, the fish sauce, and the brown sugar. Bring back to a brisk simmer and cook until the flavors meld and the sauce thickens, about 5 minutes. Season the chicken with salt and add it to the pot, stirring until the pieces are separated and evenly coated with the sauce, about 1 minute. Stir in the broccoli and mushrooms and bring back to a brisk simmer over medium heat. Cook until the vegetables are almost tender, about 5 minutes. 4 slices white bread, torn into quarters
2 tablespoons unsalted butter, melted

1 bunch broccoli, stalks discarded, florets trimmed into 1-inch pieces (1 1/2 lb.)
3/4 lb penne
3 tablespoons olive oil
1 1/4 lbs cremini mushrooms, stems trimmed, brushed clean, and sliced thin
1 medium onion, minced
8 garlic cloves, minced
1 tablespoon minced fresh thyme leave
1/4 cup all-purpose flour
1 cup white wine
1/4 ounce dried porcini mushrooms, rinsed and re-hydrated, with soaking liquid reserved
2 cups low sodium chicken broth
1 cup heavy cream
1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
2 ounces asiago cheese, shredded (about 1 cup)
1/4 teaspoon ground black pepper

Steps:

  • Topping: process the bread and butter in a food processor fitted with the steel blade until coarsely ground, about six 1-second pulses; set aside.
  • Filling: adjust an oven rack to the middle position; preheat oven to 400°.
  • Bring 4 quarts of water to a boil in a Dutch oven over high heat.
  • Stir in 1 T salt and the broccoli; cook until bright green, about 1 minute.
  • Remove the broccoli using a slotted spoon or wire spider and spread it out on a baking sheet to cool.
  • Return the water to a boil; add in the pasta and cook, stirring occasionally, until al dente.
  • Drain the pasta and toss with 1 T olive oil; leave it in the colander and set aside.
  • Wipe the pot dry; add in the remaining 2 T oil and return to medium heat until shimmering.
  • Add in the cremini and 3/4 t salt; cook until the mushrooms have released their juices and are brown around the edges, about 10 minutes.
  • Add in the onion and cook until softened and beginning to brown, about 8 minutes.
  • Stir in the garlic and thyme; cook until fragrant, about 30 seconds.
  • Add in the flour and cook, stirring constantly, until golden, about 1 minute.
  • Slowly whisk in the wine and the dried porcini with their reserved liquid; cook until the liquid is almost evaporated, about 1 minute.
  • Slowly whisk in the broth and cream; bring to a simmer, whisking often.
  • Add in the chicken and cook, stirring occasionally, until no longer pink, about 4 minutes.
  • Off the heat, stir in the Asiago and pepper.
  • Add in the cooked pasta and broccoli to the sauce; stir to combine.
  • Transfer to a 13 x 9 inch baking dish and sprinkle with the bread crumb topping.
  • Bake until the casserole is bubbling and the crumbs are lightly browned, about 15 minutes.
  • Serve immediately.

8 ounces wide (about 3/8 inch) or other rice noodles
12 ounces Chinese broccoli (also called gai lan), cut into 2-inch pieces
3 tablespoons low-sodium tamari soy sauce
1 tablespoon plus 1 teaspoon Thai fish sauce (also called nam pla)
1 tablespoon plus 1 teaspoon rice-wine vinegar (not seasoned)
1 teaspoon sugar
3/4 cup homemade or low-sodium store-bought chicken stock
1 tablespoon canola oil
1 tablespoon minced peeled fresh ginger, or more to taste
2 garlic cloves, minced
8 shiitake mushrooms, stemmed, caps quartered
2 teaspoons cornstarch mixed with 2 tablespoons cold water
4 scallions, white and pale-green parts only, cut on the diagonal into 1-inch pieces
2 teaspoons toasted sesame oil
Crushed red-pepper flakes, for sprinkling (optional)
Sesame seeds, for sprinkling (optional)
Coarse salt, for sprinkling (optional)

Steps:

  • Cover noodles with very hot water in a large bowl, and let soak 30 minutes. Drain noodles, and set aside.
  • Meanwhile, bring a large pot of water to a boil. Add broccoli; cook until crisptender, about 1 minute. Drain; set aside.
  • Stir together tamari, fish sauce, vinegar, sugar, and stock in a small bowl; set aside. Heat canola oil in a large nonstick skillet or a wok over medium heat until hot but not smoking. Add ginger, garlic, and mushroom caps; cook, stirring, until mushrooms are soft, about 2 minutes.
  • Add tamari mixture to skillet; bring to a simmer over high heat. Stir in cornstarch mixture, and simmer 2 minutes. Add reserved noodles and broccoli, along with the scallions, and toss to coat. Drizzle with sesame oil, and toss again. Serve with red-pepper flakes, sesame seeds, and salt for sprinkling, if desired.

4 cups cauliflower, cut up
2 cups mushrooms, sliced
2 tablespoons garlic, minced
1/3-1/2 cup olive oil
salt and pepper, to taste

Steps:

  • Mix cut-up broccoli and cauliflower, sliced mushrooms and minced garlic. Season with salt and pepper to taste. Cover and let stand an hour, if possible.
  • Heat oil in a large saute or fry pan until very hot.
  • Add vegetables all at once, spreading in an even layer. Do not stir until bottom of layer begins to brown.
  • Flip and stir to get unbrowned pieces to bottom. Let cook until beginning to brown.
  • The trick here is to keep heat high and brown pieces without overcooking or burning them. If pieces are browned, but not soft enough for your taste, turn off heat and cover pan for a few minutes.

Steps:

  • Combine cornstarch, paprika, kosher salt, white pepper, and cayenne (if using) in a plate. Pat fish dry with paper towels. Coat fish on all sides with the seasoning mix.
  • Heat butter and oil in a 12-inch skillet over medium heat. Add minced garlic and cook until garlic is fragrant but not brown, about 30 seconds. 1 ounce dried Chinese mushrooms (donggu or doong gwoo, similar to Japanese shittake but more earthy and smoky)
2 1/2 ounces broccoli florets, cut through their stems into thin slices (1 cup)
1 lb napa cabbage or 1 lb kale
2 ounces jicama, peeled & cut into 2-inch-by-1/4-inch strips
2 ounces bamboo shoots, drained rinsed & finely shredded
1 tablespoon peanut oil or 1 tablespoon bacon fat
1 tablespoon fresh ginger, peeled & grated
water (if needed)
1 1/2 teaspoons sesame oil
2 teaspoons rice wine or 2 teaspoons dry sherry
4 teaspoons light soy sauce
2 teaspoons dark soy sauce
1 teaspoon hawaiian salt

Steps:

  • In a small bowl, mix together the sauce ingredients and set aside.
  • Soak the mushrooms in hot water until they soften (15-20 minutes).
  • Rinse under cold running water to remove any sand and squeeze out excess water to drain.
  • With a sharp knife, remove the stems & discard.
  • Finely shred the caps; set aside.
  • Blanch broccoli in boiling water and drain.

FETTUCCINE NO-FREDO WITH BROCCOLI AND SAUTÉED MUSHROOMS image

Sauce:
1 head cauliflower, chopped into small pieces
4 cups water
4-6 cloves garlic
1-2 tsp. basil
1/2-2 tsp. oregano
pinch cayenne pepper
salt to taste
freshly ground black pepper
pinch nutmeg
1 1/2 tbsp. nutritional yeast
Main:
2 large Portabella mushrooms, sliced 1/4-inch thick
2 cloves garlic
1/8 cup wine (I used white, but red will do)
salt to taste
1 pound fettuccine
1 head broccoli, cut into florets

Steps:

  • Sauce: Using the lesser amounts of each seasoning, place all the sauce ingredients except nutritional yeast into a large saucepan and cook, covered, until the cauliflower is very soft, about 15 minutes. When it's completely tender, use a blender to puree the cauliflower to a smooth sauce. (If you have a good hand blender, I recommend you do this in the pot.) Check the seasoning of the sauce, and add more to taste; add the nutritional yeast. Allow the sauce to simmer and thicken while you prepare the mushrooms and pasta. Sautéed Mushrooms: Heat a non-stick skillet brushed or sprayed with a little olive oil. Add the garlic and mushrooms, and cook, stirring, until the mushrooms begin to exude their juices. You can prevent them from drying out by keeping the skillet covered between stirrings. When the mushrooms get juicy, add the wine and salt to taste. Cook just until the wine is absorbed and then set aside, covered, until ready to serve. Pasta: Bring a large pot of water to a boil, add the fettuccine and salt, if desired, and set a timer for 3 minutes less than the amount of time indicated on the package. When the timer goes off, add the broccoli and cook for three minutes, or until the pasta is al dente. (For my fettuccine, this meant I cooked it for 9 minutes, added the broccoli, and cooked it for 3 more.) Drain the pasta and broccoli and return it to the pan. Stir in the cauliflower sauce and serve topped with sautéed mushrooms The pureed cauliflower forms a light yet creamy sauce that moistens the pasta and broccoli, while the sautéed mushrooms add chewy texture and earthy flavor. Besides being a great way to sneak a vegetable into a meal, this just tastes good. Try it with your favorite blend of spices and let me know your results.
