A creamy soy-ginger dressing nicely complements this pasta salad with broccoli, red pepper, bean sprouts, and peanuts.

3 medium garlic cloves, minced
6 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1 teaspoon ground ginger
¾ teaspoon hot red pepper flakes
2 tablespoons mayonnaise
¼ cup vegetable oil
2 tablespoons salt
1 pound penne pasta
8 ounces broccoli florets
1 pound rare deli roast beef, sliced 1/8 inch thick and cut into bite-size strips
3 medium carrots, peeled and coarsely grated
1 medium red bell pepper, cut into bite-size strips
2 cups bean sprouts
3 green onions, thinly sliced
½ cup chopped roasted (or honey-roasted) peanuts
¼ cup chopped fresh cilantro

Steps:

  • Mix garlic, soy sauce, vinegar, sugar, sesame oil, ginger, and pepper flakes in a 2-cup Pyrex measuring cup. Whisk in mayonnaise until smooth, then in a slow steady stream, whisk in oil to make an emulsified dressing; keep chilled until ready to toss with salad. Store in a clean jar with lid.
  • Bring 1 gallon of water and 2 tablespoons of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding broccoli the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside while preparing remaining salad ingredients.
  • Place all salad ingredients (except soy-ginger dressing) in a large bowl or transfer to a gallon-size zipper bag. (Can be covered and refrigerated several hours at this point). When ready to serve, add dressing; toss to coat and serve.

3 tablespoons grated parmesan cheese
3/4 lb penne pasta or 3/4 lb other penne pasta
3 tablespoons all-purpose flour
1 teaspoon thyme
1/4 teaspoon crushed red pepper flakes
1 lb ground beef
1 tablespoon unsalted butter
1/8 teaspoon nutmeg, grated
1 1/2 cups reduced-sodium chicken broth
1 cup fresh breadcrumb
1 1/2 cups low-fat milk
1 cup fat-free cheddar cheese, shredded
2 cups broccoli florets
1 small onion, chopped
2 garlic cloves, crushed

Steps:

  • Preheat oven to 375°F
  • Place broccoli in a steamer basket over boiling water.
  • Cover pan and steam 3 minutes or until tender.
  • Rinse broccoli under cold running water and drain well.
  • Transfer to a buttered, deep casserole dish.
  • Cook pasta in a large pan of boiling water 7 minutes, or until al dente. Drain, rinse under cold water, and drain again.
  • Stir into broccoli.
  • Melt 2 tsp butter in a heavy nonstick skillet over medium high heat.
  • Sauté meat, onion and garlic 5 minutes, stirring often to break up meat, until browned.
  • Sprinkle on flour and thyme.
  • Sauté 2 minutes, stirring often.
  • Stir in next 4 ingredients and salt to taste.
  • Bring to a boil, stirring until thickened.
  • Reduce heat to low and simmer 3 minutes, stirring often.
  • Remove from heat and stir in Cheddar cheese until melted.
  • Stir into casserole and toss.
  • Top with breadcrumbs and Parmesan and dot with remaining butter.
  • Bake about 30 minutes until casserole is bubbling and top is golden brown.

3 cups uncooked pasta (, radiatore)
3/4 lb boneless beef top sirloin steak, cut into 1/4 inch strips
1/2 teaspoon pepper
1 (16 ounce) package frozen broccoli or 1 (16 ounce) package fresh broccoli
1 (14 1/2 ounce) can diced tomatoes with garlic
1 (14 1/2 ounce) can ready-to-serve beef broth
2 tablespoons cornstarch
2 tablespoons Worcestershire sauce

Steps:

  • Cook and drain pasta as directed on package.
  • While the pasta is cooking, spray 12 inch skillet with nonstick cooking spray; heat over med-high heat.
  • Add beef to skillet; sprinkle with pepper.
  • Cook 2-3 minutes, stirring frequently, until beef is brown.
  • Stir in broccoli, tomatoes and broth; reduce heat to low.

1 - med. onion, thinly sliced
1 cup(s) rotini pasta, uncooked
1/2 teaspoon(s) dried basil

1/2 teaspoon(s) dried thyme
1 can(s) italian style tomatoes, undrained
2 cup(s) broccoli florets or 1 pkg. (10 oz) frozen broccoli, thawed
3 ounce(s) shredded cheddar or grated parmesan cheese

Steps:

  • Combine meat & garlic in lge. non-stick skillet; cook over high heat till meat is no longer pink, breaking meat apart. Drain. Place meat in large bowl; set aside.
  • Add broth. onion, pasta, oregano, basil, and tyme to skillet. Bring to boil. Reduce heat to medium-high and boil 10 minutes; add tomatoes with juice. Increase heat to high and bring to a boil; stir in broccoli. Cook, uncovered, 6 - 8 minutes, stirring occasionaly, until broccoli is crisp-tender and pasta is tender. Drain excess liquid. Add pasta mixture to beef, and mix well.
  • Spoon mixture into well greased 9 inch baking dish. Bake uncovered, at 350 degrees for 20 minutes or until bubbly hot.

500 g box cut pasta - preferably penne
3 T extra virgin olive oil
1 1/2 lb lean ground beef
1 onion, diced
3 cloves of garlic, chopped
1 red pepper, diced
several sprigs fresh thyme, chopped
1/2 C beef broth
1 head fresh broccoli, cut into florets
salt and pepper to taste
fresh parmesan cheese for serving

Steps:

  • Place a large pot of water with a handful of salt on stove and bring to a boil. In a large skillet, brown the beef in olive oil on medium high setting, for about 5-8 minutes, or until golden brown. Lower heat to medium and add the onions, garlic, peppers, and thyme, and continue to brown until vegetables are soft, about 5 minutes. Add the beef broth and reduce to low heat, season with salt and pepper, cover and simmer for 20 minutes, while pasta is cooking. Remove 1/3 beef mixture, if desired, for next meal. Meanwhile, cook pasta in boiling salted water, about 6-7 minutes or according to package directions for al dente. Pasta will still be too hard to eat at this point. Add broccoli florets to the pasta and cook for an additional 2 minutes, or until pasta is firm to bite and broccoli is cooked. Drain pasta and broccoli into the skillet with 2/3 beef mixture. Toss pasta and broccoli with beef mixture and sprinkle with parmesan cheese. Serve immediately.

3/4 cup(s) beef broth

Steps:
