This is awesome! If you love brisket or beef cooked in the smoker and just don't have time to, or maybe the weather won't permit- you have to try this. I have used EVERY cut of beef roast or brisket, it always comes out great! Enjoy!

2 -4 lbs beef roast or 2 -4 lbs beef brisket
2 tablespoons liquid smoke
2 tablespoons fresh coarse ground black pepper
2 tablespoons kosher salt
2 minced fresh garlic cloves

Steps:

  • Trim beef of any large extra fat. A little is good for flavor.
  • Place the roast in the middle of a large piece of aluminum foil.
  • Rub beef all over with all of the spices.
  • Sprinkle liquid smoke over beef and rap tightly in foil. Make sure it's completely wrapped.
  • DO NOT ADD ANY LIQUID TO THE CROCKPOT!
  • Place in crock pot and cook on low setting for 8-10 hrs (10 for a larger cut of beef).
  • Unwrap beef and serve with the "smoker" juices in the crock pot or with your favorite barbecue sauce.

This is a variation of recipe #140878 that I posted under KellyinNC (I can't access my old account!!). My family enjoys Western style Mexican dishes and I use this for tacos, enchiladas, stuff Anaheim peppers, tostados, the list goes on. You can make it as spicy as you like. Season heavily because the spices "steam away".

2 -4 lbs of any cut beef roast
1 tablespoon kosher salt
1/2-1 tablespoon cracked pepper
2 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 (6 ounce) can diced green chilies
1/2 teaspoon cayenne pepper
1 teaspoon liquid smoke

Steps:

  • Wash and pat dry the roast. Trim any access fat. Set on top of the foil. Season all over with all of the spices.
  • Add the chilis over the top of the beef and fold the foil tightly around the roast or brisket.
  • Place in the crock pot and cook on a low temperature for 8-10 hours. Do not add any liquid to the crock pot!
  • Pull, chop, shred for your favorite dish or just eat it sliced!

1 (4 lb) beef brisket, with 1/3-inch layer fat
salt
fresh ground black pepper
1/4 cup extra virgin olive oil
5 garlic cloves, smashed
2 medium onions, coarsely chopped
2 medium carrots, coarsely chopped
1 celery rib, coarsely chopped
3 bay leaves
2 rosemary sprigs
2 small dried red chilies
2 cups dry red wine
1 (14 ounce) can plum tomatoes, drained
3 cups low sodium chicken broth

Steps:

  • Preheat oven to 325 degrees. Season brisket with salt and pepper. In a large skillet, heat the oil. Add the brisket, fat side down, and cool over moderately high heat until richly browned, about 5 minutes. Turn and brown on the other side, about 5 minutes longer. Transfer the brisket, fat side up, to a roasting pan.
  • Add the garlic, onions, carrots, and celery to the skillet and cook over moderate heat, stirring occasionally, until softened, about 10 minutes. Add the bay leaves, rosemary, and chiles, and cook, stirring, for 2 minutes. Add the wine and boil over high heat until reduced by half, about 6 minutes. Add the tomatoes and simmer over low heat for 15 minutes. Pour the mixture over and around the brisket.
  • Add chicken broth to the skillet and bring to a simmer over high heat. Pour the broth around the brisket. Cover the roasting pan with foil, transfer to the oven and braise until the brisket is very tender, about 3 hours. Transfer the brisket to a platter and cover with foil.
  • Strain the contents of the roasting pan through a coarse straiiner set over a large saucepan, pushing the vegetables through as much as possible. Boil the sauce over high heat until reduced to 3 1/4 cups, about 20 minutes; season with salt and pepper.
  • Carve the brisket into 1/3" slices. Pour some of the sauce over the brisket to keep it moist and serve, passing the rest of the sauce at the table.
  • Best brisket: Refrigerate sliced and sauced brisket for up to two days. Cover with foil and bake in a 350 degree oven until heated through, about 30 minutes.

4-5 pound beef brisket
Salt
1-2 Tbsp olive oil
3 large onions, sliced
5-6 garlic cloves, minced
1 sprig thyme
1 sprig rosemary
3-4 bay leaves
2 cups of beef stock
2-3 large carrots, peeled and cut into 1 1/2 inch pieces
1 Tbsp mustard (optional)
1 Large pieces of fat will not be able to render out completely. Using a sharp knife, score the fat in parallel lines, about 3/4-inch apart. Slice through the fat, not the beef. Repeat in the opposite direction to make a cross-hatch pattern. Salt the brisket well and let sit at room temperature for 30 minutes.

Steps:

  • 2 You'll need an oven-proof, thick-bottomed pot with a cover that is just wide enough to hold the brisket roast with a little room for the onions. Pat brisket dry and place it, fatty side down, in pot and place it on medium high heat. Cook for 5-8 minutes, lightly sizzling, until the fat side is nicely browned. Turn the brisket over and cook for a few minutes more to brown other side. 3 When the brisket has browned, remove it from pot and set aside. There should be a couple tablespoons of fat rendered in the pot, if not, add some olive oil. Add the chopped onions and increase the heat to high. Sprinkle a little salt on the onions. Sauté, stirring often, until the onions are lightly browned, 5-8 minutes. Stir in the garlic and cook 1-2 more minutes. 4 Preheat the oven to 300°F. Use kitchen twine to tie together the bay leaves, rosemary and thyme. Move the onions and garlic to the sides of the pot and nestle the brisket inside. Add the beef stock and tied-up herbs. Bring the stock to a boil. Cover pot, place the pot in the 300°F oven and cook for 3 hours. Carefully flip the brisket every hour so it cooks evenly. 5 After 3 hours, add the carrots. Cover the pot and cook for 1 hour more, or until the carrots are cooked through and the brisket is falling-apart tender. 6 When the brisket is falling-apart tender, take the pot out of the oven and remove the brisket to a cutting board. Cover it with foil. Pull out and discard the herbs. 7 You can serve as is, or you can make a sauce with the drippings and some of the onions. To make a sauce, remove the carrots and half of the onions, set aside and cover them with foil. Blend remaining ingredients to make sauce.Put into a small pot and keep warm. 8 Serve the brisket, sliced in 1/4-inch to 1/2-inch slices, against the grain of the meat, with the onions, carrots and gravy. Serve with mashed, roasted or boiled potatoes, egg noodles or polenta.

Steps:

  • Brown of all sides of joint in a frying pan to seal. (this is the correct way but I often don't bother and it is still delicious)
  • Place in deep roasting pot/casserole dish.
  • Season well with salt and pepper and sprinkle crushed Oxo cubes over joint.
  • Pour boiling water over joint so that it measures about 3/4 of an inch deep. I put the end of a dry wooden spoon into the water (like a dip-stick) to measure how much water is in pot.
  • Add vegetables if required.
  • Place tight lid on pot (or cover tightly with foil).
  • Place in oven and cook for 30 minutes at 200 degrees celsius (9 gas).
  • Turn oven down to 170 degrees (3 gas) and continue cooking for 2 1/2 hours.
  • Rest for at least 20mins before carving
