MAPLE PECAN BAKED BRIE

This savory-sweet appetizer is a decadent way to start your feast, but I promise there won't be a bite left over. A creamy Brie is baked to perfection and then smothered with a spicy pecan praline sauce. Be generous with the coarsely ground black pepper, as it really sends the dish over the edge!

1 (16-ounce) wheel of Brie
1/2 cup (1 stick) unsalted butter
2 tablespoons packed brown sugar
1/3 cup pure maple syrup
1 cup toasted and chopped pecans
1 teaspoon coarsely ground black pepper
Crackers, to serve

Steps:

  • Preheat oven to 350 degrees.
  • Shave off the top rind of the Brie (it is easiest to do this after it has been in the freezer for about 20 minutes). If the Brie came in a wooden box, return it to the original container. If not, create a makeshift "box" out of a few layers of aluminum foil, leaving the top of the Brie exposed.
  • Place the cheese on a rimmed baking sheet. Bake until warm and gooey, 15 to 20 minutes. Remove from the oven and allow to cool for 20 minutes before serving. Carefully transfer to a serving platter; you do not want the rind to puncture, if possible.
  • While the Brie is cooling, make the praline sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar, maple syrup, and pecans. Cook, stirring constantly, until all of the ingredients are well combined, 3 to 5 minutes. Stir in coarsely ground black pepper and remove from heat. Allow the mixture to cool for 5 to 10 minutes, until it has thickened up just a bit. Dollop the warm sauce over the baked cheese. (There may be extra praline sauce.) Serve with assorted crackers.

Great combination of flavors. (The firm rind of Brie or Camembert is edible, so scoop it up aloing with the warm, melted cheese and chopped pecans).

1 (13 -15 ounce) brie round or 1 (13 -15 ounce) camembert cheese
1/2 cup orange marmalade
2 tablespoons brown sugar
1/3 cup chopped pecans
toasted baguette, slices (or both) or assorted plain cracker (or both)

Steps:

  • Preheat oven to 350.
  • Place the round of cheese in a shallow oven proof serving dish or pie plate.
  • In a small bowl stir together orange marmalade and brown sugar.
  • Spread over top of cheese.
  • Sprinkle with pecans.
  • Bake about 15 minutes for smaller round (about 20 minutes for larger round) or until cheese is slightly softened and topping is bubbly.
  • Serve with baguette slices and/or crackers.

This is a wonderful Holiday recipe for a gathering of friends. I also change it a bit with just heating whole cranberry sauce and pouring it over a whole brie or camembert cheese.

1 small brie cheese (single double or triple creme)
1 tablespoon brown sugar
1 tablespoon chopped pecans
1 teaspoon butter, melted
strawberries or butter cookie

Steps:

  • With a long sharp knife, cut off and discard the top rind of the cheese.
  • Combine sugar, pecans and butter, mix well.
  • Sprinkle mixture evenly over surface of cheese.
  • Place cheese in an ovenproof container slightly larger than the cheese.
  • Broil 6 inches from source of heat until cheese is soft, slightly melted and topping is bubbly.
  • Serve warm with strawberries or cookies.
  • Variations: Replace brown sugar, pecans and butter with 1/4 cup apricot jam mixed with 2 tsp.
  • brandy.
  • After removing top rind from cheese, prick surface with fork and pour 1 tsp.
  • more brandy over all.
  • Top with apricot mixture and bake in 350 degree oven 10 minutes.
  • Sprinkle with toasted sliced almonds to serve Note: Praline and Apricot Toppings can easily be doubled or tripled to cover a large wheel of Brie or Camembert.

1 13 to 15 ounce round brie
1/2 c orange marmalade
2 Tbsp packed brown sugar
1/3 c chopped and toasted pecans (can use walnuts)
box of crackers

Steps:

  • 1. Place the round of cheese in a shallow oven proof serving dish or pie plate.
  • 2. In small bowl stir together the orange marmalade and brown sugar. spread on top of cheese. Sprinkle with toasted pecans/walnuts.
  • 3. Bake in a 350 degree oven about 15 minutes for small round 20 minutes for larger round. Or until cheese is slightly softened and topping is bubbly. Serve with crackers/ or baguette slices.

1/2 cup heavy cream
2T butter
2T sugar
2.5 ounces brown sugar
2.5 ounces chopped pecans
1/2 apple
2 slices of sourdough bread
Brie cheese

Steps:

  • Bring cream, butter, sugar, brown sugar and pecans to a boil for 10 minutes. Put the Brie on top of the bread, and spread with the praline sauce. Heat at 400 degrees for three minutes. Serve with sliced apple.
