CRAB & BRIE OMELET (TREASURE TROVE #12)
We have some definite themes goin on here as I wind down entering my treasure trove of long-lost & newly found recipes. Here's another breakfast dish using Brie that seems to warrant a spec brunch occasion for 4 in my book. Times were estimated. Enjoy!

Steps:
- Preheat broiler.
- Whisk 1st 4 ingredients in lrg bowl to blend. Melt 1 tbsp butter in 10-in flame-proof non-stick omelette pan over med-high heat.
- Pour 1/2 of egg mixture into pan & cook till almost set, tilting pan & lifting egg mixture w/rubber spatula to allow uncooked portion to run underneath (about 1-2 min).
- Spoon 1/2 of crab over rt half of omelet. Sprinkle 1/2 of green onions & 1/2 of cheese over crab. Season w/salt & pepper.
- Place pan under broiler til cheese begins to melt & egg is almost cooked (about 15-20 seconds).
- Fold lt side of omelet over filling. Slide omelet onto plate & keep warm.
- Wipe pan w/paper towel & repeat Steps 3-6 w/rest of ingredients, forming 2 omelets. Serve omelets immediately.

CRISPY BACON AND SWEET ONION OMELET

- Cook bacon in a skillet over medium-high heat until crisp. Remove with a slotted spoon to paper towels to drain and cool; crumble the bacon and set aside.
- Melt the butter in a skillet over medium heat. Cook and stir the onions in the butter until tender, about 10 minutes.
- Prepare a 10-inch non-stick skillet with cooking spray and place over a cold burner. Whisk together the eggs and water; pour the egg mixture into the cold skillet. Cover and turn the burner on for medium-low heat. Cook until steam begins to vent from the skillet. Remove the lid. Sprinkle the crumbled bacon, Cheddar cheese, American cheese, salt, and red pepper over the eggs. Spread the onions over the eggs. Gently swirl the skillet in a circular motion to release the omelet and slide it onto a plate. Fold the omelet in half. Allow the cheese to melt, about 2 minutes.

- Turn on the grill and heat 1 tsp of the oil in a small pan. Add the lardons and fry until crisp and golden. Drain on kitchen paper.
- Heat 2 tsp of the oil in a non-stick frying pan. Mix together the eggs, lardons, chives and some ground black pepper. Pour into the frying pan and cook over a low heat until semi-set, then lay the brie on top. Grill until set and golden. Remove from the pan and cut into wedges just before serving.
- Meanwhile, mix the remaining olive oil, vinegar, mustard and seasoning in a bowl. Toss in the cucumber and radishes, and serve alongside the omelette wedges.

THE CHILDERZ SMOKED GOUDA AND BACON OMELETTE
I was sifting idly through ingredients in my fridge one morning, when Divine Inspiration or something like it struck, and I came up with the most winning combination of ingredients, ever: Smoked Gouda and Bacon...and then I made an omlette. You can customize it in any way you like; adding different types of cheeses, meats, vegetables, minerals...there are myriad possibilities. I like it simple.

Steps:
- Firstly, fry up your bacon until it's crispy, in a frying pan set on medium heat.
- Remove from pan. (If you're health conscious, or you just don't like to eat grease, pat the bacon with a paper towel to remove some of the grease.) After it's cooled, crumple into smallish pieces and set aside.
- Dump most of the grease out of the pan, but reserve about a tbsp or so in which to cook the eggs.
- Crack the two eggs in a separate bowl and whisk with milk, salt, and pepper until a bit frothy. (The milk makes the omlette fluffier, but isn't necessary).
- Pour into the pan. Top with the smoked Gouda and bacon.
- Cook until the bottom of the omlette (the part in contact with the pan) has become a light shade of brown, then attempt to flip one side of the omlette over, folding it in half.
- Continue frying until the eggs are cooked through and the cheese is nice and melted.
- Put it on a plate, and enjoy.

- Add oil to a skillet over high heat.
- Remove the rind from 3 slices of Brie.
- Whisk eggs for 1 minute. While moving the skillet in a circular motion, pour the eggs in continuing motion, cook until the outside edges are firm (approximately 1 minute). Then flip the omelet to finish cooking (about 30 seconds). Place the cheese slices in the center and fold the omelet. Salt and pepper to taste.
- Try this recipe with Camembert as well.

Steps:
- In a med bowl, beat eggs w/salt & pepper till just blended.
- In a 9-in skillet over med-heat, heat the oil & saute onion (stirring often) till soft & caramelized (10-12 min).
- Turn out of the pan & set aside.
- In the same skillet, melt butter over med-heat.
- Pour eggs into the pan & cook, lifting from the edge to let the runny portion flow underneath.
- When almost set, scatter the onion & salmon over it.
- Roll over 1/3 of the omelet & tilt it onto a warm plate, making another fold.
- Divide omelet into 2 servings.
- Spoon sour cream over the top, sprinkle w/chives & serve immediately. (Serving w/toasted bagels was suggested).

- Combine the eggs, basil, parsley, thyme, milk, salt and pepper in a mixing bowl. Whisk well to combine.

Oh my, this entry from my treasure trove of lost and newly found recipes (source unknown) looks like it would definitely be a crowd-pleasing brunch dish. Despite evidence to the contrary, I reduced the calories and fat content with the use of half-and-half instead of whipping cream which I thought was pure excess, especially when combined with low-fat milk. (Times have been estimated). Enjoy!

Steps:
- Trim rind from Brie and discard.
- Cut cheese into small cubes and set aside.
- Cook sausage in a large skillet over med-high heat, stirring until it crumbles and is no longer pink; drain well.
- Cut crusts from bread slices.
- Place crusts evenly in the bottom of a lightly greased 13x9-inch baking dish.
- Layer evenly with bread slices, sausage, Brie and Parmesan cheese.
- Whisk together 5 eggs, 2 cups half-and-half, low-fat milk, sage, seasoning salt, and dry mustard.
- Pour evenly over cheeses.
- Cover and chill mixture for 8 hours.
- In the morning, preheat oven to 350°F.
- Whisk together remaining 2 eggs and 1 cup half-and-half.
