2 lbs alligator tail steaks (steaks or chunks)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 cup powdered milk
1/2 cup flour
2 cups cornmeal
oil (for deep frying, peanut is best)

Steps:

  • salt and pepper alligator meat set aside mix flour, corn meal, salt, pepper, garlic powder, onion powder, powdered milk.
  • heat oil to about 400F in deep fryer dredge meat pieces in flour mixture fry for about 3 to 5 minutes until brown overcooking will make tough put cooked pieces on paper towel to drain serve with favorite dipping sauce.

1 lb cooked flaked alligator meat
1 red bell pepper, diced
1 onion, diced
3 tablespoons cajun seasoning
1 tablespoon sea salt
1/2 tablespoon black pepper
1 garlic clove, minced
1 egg
1 cup unseasoned breadcrumbs
2 cups cornmeal
3 cups peanut oil
1 tablespoon Frank's red hot sauce

Steps:

  • Mix everything but cornmeal and oil together.
  • heat oil.
  • shape into balls.
  • roll balls in cornmeal until coated.
  • fry in oil until golden brown.
  • drain on paper towels.

1 medium onion
6 cherry tomatoes, finely diced
1 green pepper, finely diced
8 whole mushrooms
1 cup orange juice
1/2 cup teriyaki sauce
cajun seasoning

Steps:

  • Marinate alligator in orange juice and teriyaki for 6 to 24 hours.
  • Place meat, onions, peppers, tomatoes and mushrooms in a small pan and baste with marinade.
  • Place in broiler for 2 to 3 minutes total, turning once.
  • Sprinkle with Cajun seasoning.
