Number Of Ingredients 8

1/4 cup margarine
1 small sweet onion, chopped
1 small green pepper, chopped
2 -3 medium tomatoes, chopped
1 (24 ounce) bag frozen hash brown potatoes
12 eggs, beaten
1/2 lb cooked crumbled bacon or 1/2-1 lb sausage
3 cups cheddar cheese, shredded

Steps:

  • Melt margarine and place in the bottom of 9" by 13" baking pan.
  • Spread potatoes (still frozen is okay) in bottom of the pan.
  • Sprinkle chopped vegetables over potatoes.
  • Add salt and pepper to taste.
  • Sprinkle meat over potatoes and vegetables.
  • Note: At this point you may continue or casserole may be refrigerated overnight.
  • Pour beaten eggs over potatoes.
  • Bake at 350 degrees for 45 minutes.
  • Remove from oven and sprinkle cheese evenly over top.
  • Bake another 5-10 minutes or until cheese is hot and bubbly.
  • Remove from oven and let set for approximately 5 minutes.
  • Cut into 2.5"-3" squares and serve with a spatula. Enjoy.

This is a great way to use up left over recipe #20574. Try a combination of the meats suggested or just chose one of them. Make this casserole lasagna style.

1 lb bacon, crumbled (try Recipe #242966 for easy bacon bits) or 1 lb breakfast sausage, browned
8 large eggs, scrambled
4 -5 large potatoes, peeled and diced
1 small onion, diced
1 small bell pepper, diced
salt
black pepper
garlic powder
10 flour tortillas
2 cups green chili sauce (canned green enchilada sauce works well if you don't wish to make green chili)
2 cups shredded cheese

Steps:

  • Pan fry the diced potatoes, salt, pepper and garlic powder in a little shortening, vegetable oil or rendered bacon fat until browned and nearly done; add onions and peppers and continue to cook until potatoes are done and onions and peppers are tender. (or you can fry up a pre-packaged bag of O'Brian potatoes if desired).
  • Remove from heat and stir in the meat and scrambled eggs.
  • Cut the tortillas in half; lay them in a 9 x 13 rectangular pan, placing the cut edges square to the side of the pan, over lapping as needed.
  • Spread a 1/3 of the meat, potato and egg mixture on top of tortillas.
  • Pour 1/2 cup of the sauce over the meat, potatoes and egg.
  • Sprinkle on 1/2 cup of the cheese.
  • Repeat layer once more.
  • Add one more layer by adding tortillas and meat, potatoes and egg.
  • Top with another layer of tortillas; pour last cup of sauce over the tortilla covered casserole.
  • Sprinkle with remaining cheese.
  • Bake in 350 degree oven until hot and the cheese is melted.
  • Top with lettuce and tomatoes if desired.
  • Serve with sour cream.

4 slices wheat bread
4 tablespoons barbeque sauce
2 teaspoons butter
4 eggs
1 avocado
¼ cup shredded mozzarella cheese

Steps:

  • Toast bread in a toaster until medium brown, about 2 minutes. Spread each slice equally with barbeque sauce.
  • Melt butter in a small skillet over medium-high heat. Crack eggs in and fry on both sides, about 4 minutes.
  • Place each fried egg on a piece of toast. Top each with 1/4 of an avocado. Sprinkle an equal amount of cheese on top of each toast.

1 pound bulk pork sausage
1 pound ground beef
1 small onion, chopped
3/4 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1 to 1-1/2 teaspoons salt
1/4 to 1/2 teaspoon pepper
2 tablespoons butter, melted
2 cups shredded cheddar cheese, divided
12 large eggs, lightly beaten
2/3 cup heavy whipping cream

Steps:

  • In a large skillet, cook the sausage, beef, onion, mushrooms and green pepper over medium heat until meat is no longer pink; drain. Stir in salt and pepper; set aside., Pour butter into an ungreased 13x9-in. baking dish. Sprinkle with 1 cup cheese. Pour eggs over cheese. Top with sausage mixture. , Pour the cream over sausage mixture. Sprinkle with remaining cheese. Cover and refrigerate for 8 hours or overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

  • Melt margarine and place in the bottom of 9" by 13" baking pan. Spread potatoes (still frozen is okay) in bottom of the pan. Sprinkle chopped vegetables over potatoes. Add salt and pepper to taste. Sprinkle meat over potatoes and vegetables. Note: At this point you may continue or casserole may be refrigerated overnight. Pour beaten eggs over potatoes. 1 cup Cheddar cheese, grated
1 dozen egg
1 pound Jimmy Dean sausage
8 ounces can sliced mushrooms
2/3 cup whipping cream
1 pound , lean ground beef
2 tablespoons butter
salt and pepper to taste

Steps:

  • Must use glass baking dish and put together the night before. Coat an 8 x 10 inch baking dish with butter and spread half of cheese on bottom. Break eggs one beside the other on top of the cheese break yolks, but do not mix them up. Cook sausage and hamburger and drain off fat, then crumble over eggs. Pour cream over all. Sprinkle the rest of the cheese on top. Let stand overnight (refrigerated), then bake at 250 degrees for 45 minutes.
