OVERNIGHT BREAKFAST STRATA
Strata is a great breakfast casserole to make. Eggs, bread, ham, and cheese rest overnight to be baked in the morning.

Steps:
- Butter a 9 X 13-inch pan and line with bread. Put a layer of Spam or ham thinly sliced over the bread and cover with cheddar cheese cover with bread again. Mix together eggs, milk, and dry mustard. Pour over the egg mixture and set over night in refrigeration. Before baking sprinkle with corn flakes or potato chips and bake for 1 hour at 350 degrees.

MOM'S BREAKFAST STRATA
This strata makes breakfast less hectic because all the prep work is done the night before. The quantities of mushrooms, onions, and green peppers can be varied to suit the tastes of those who will be eating this dish.

- Grease a 9x13 inch baking dish. Layer half of the torn bread in the bottom of the dish. Sprinkle the mushrooms and green bell pepper evenly over the bread layer. Sprinkle with half of the cheese. Top with remaining bread pieces, then layer with the onion and ham. Sprinkle with remaining cheese. Whisk together eggs and milk; pour over the entire pan. Cover with aluminum foil, and refrigerate for 12 to 24 hours.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake covered for 35 minutes, then remove foil and bake for an additional 15 minutes, or until top is evenly brown.

BREAKFAST STRATA TOPPED WITH POTATO CHIPS
I got this recipe back in the 70's from a co-worker. I have been making it ever since. Makes the perfect casual brunch entree for a crowd. Serve it with fresh fruit and your all set! I use a large aluminum foil baking pan. Make the night before or a minimum 4 hours ahead. Be sure to take out of the fridge an hour before baking.

Steps:
- Assemble the night before.
- Grease pan with a light coat of nonstick cooking spray or butter.
- Trim the crusts off the bread slices. Butter on one side of bread.
- Place buttered slices of bread **butter side up on the bottom of the baking dish.
- Sprinkle with all the bacon and cheese.
- Top with layer of buttered bread slices, butter side up.
- Beat eggs, milk and mustard together.
- Pour over bread, gently press slices into the egg mixture to coat. Cover with foil and refrigerate overnight.
- In the morning:.
- One hour before baking, remove from fridge and bring to room temperature. (cuts down on the baking time).
- Preheat oven to 350°.
- Bake COVERED for 40 minutes. After 40 minutes remove foil.
- Continue baking for approximately 10-15 minutes until center is done and top is lightly browned. *check fro doneness like you would a cake.
- Top with crumbled potato chips, bake for an additional 5 minutes.
- Let stand for 5-10 minutes before slicing into squares.
- NOTES:
- To halve the recipe, use an 8x8 pan and approx 6-8 slices of bread.
- 9x12 pan, use approx 12 slices.
- Large aluminum baking pan, use 18 slices.

BREAKFAST STRATA
This is the only breakfast casserole I make. It's worth the effort. You could probably throw some breakfast sausage in here instead of the ham and bacon. This one has to sit overnight in the refrigerator before baking in the morning.

Steps:
- In a skillet, cook bacon until done.
- Remove bacon from skillet, leaving drippings in the pan.
- Add ham and onion to skillet.
- Cook and stir until onion is tender.
- Drain grease from ham and onion.
- In a bowl, combine bacon, ham, and onion.
- In a greased 13x9x2 baking dish, layer half the bread cubes, potatoes, and cheese, in that order.
- Top with all of the bacon mixture.
- Repeat another layer of bread, potatoes, and cheese.
- In a bowl, beat the eggs.
- Add milk, Worcestershire sauce, mustard, salt, and pepper to the eggs.
- Pour over all in the baking dish.
- Cover and refrigerate overnight.
- Remove from the refrigerator 30 minutes before baking.
- Bake, uncovered, at 325 degrees for 65-70 minutes or until a knife inserted near the center comes out clean.

HASH BROWN STRATA
An old favorite with a spicy twist.

- 1. Preheat oven to 350. Lightly brown potatoes in olive oil in sauté pan. Press potatoes over the bottom of a greased 9 inch pie plate or tart pan. Sprinkle with the cheese and ham. Whisk milk, butter, eggs and salt in a bowl until blended and pour over the prepared layers. Bake for 30 to 40 minutes or until la knife inserted in center comes out clean, arranging the tomatoes over the top in a decorative pattern and sprinkling with the basil during the last 10 minutes of the baking process. - Generously grease a 9x13-inch casserole dish.
- Heat a skillet over medium heat; cook and stir sausage until crumbly and completely browned, about 10 minutes. Transfer cooked sausage to the prepared casserole dish.
- Cook and stir mushrooms in the same skillet over medium heat until liquid has been released and mushrooms are lightly browned, 5 to 10 minutes; drain.

- Place bread cubes in a greased 13x9-in. baking dish. In a large skillet, cook and crumble sausage with pepper and onion over medium-high heat until no longer pink, 5-7 minutes. With a slotted spoon, place sausage mixture over bread. Sprinkle with cheese., In a large bowl, whisk together eggs, mustard and milk; pour over top. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats., Bake, uncovered, until a knife inserted in center comes out clean, 30-35 minutes.
