Steps:
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish thoroughly with the butter.
- Heat a pan over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 5 to 8 minutes. Add the spinach and cook until wilted, about 1 minute. Set aside to cool.
- Whisk the eggs in a large bowl with some salt and pepper. Add the cheese and stir until combined. Mix in the cooled sausage and spinach mixture.
- Pour the egg mixture into the prepared baking dish and bake until the eggs are cooked through and firm, 20 to 30 minutes. Let cool slightly, about 5 minutes, then cut into squares and serve.

- Heat oven to 425°F. Grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 12-inch skillet, cook sausage, onion and garlic over medium heat, stirring frequently, until sausage is no longer pink; drain. Stir in bell pepper; remove from heat.
- In large bowl, beat flour, salt, crushed red pepper, milk and eggs with wire whisk until smooth. Pour into baking dish. Spoon pork mixture over batter. Sprinkle with cheese.
- Bake 22 to 27 minutes or until top is golden brown.

PEACH & SAUSAGE BREAKFAST SQUARES

- Drain peaches, reserving juice; set aside. In a small saucepan, combine sugar and cornstarch; stir in 1/2 cup reserved peach juice until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Stir in syrup and butter; set aside and keep warm. , Combine the remaining juice and enough water to measure 1 cup. In a small bowl, combine the pancake mix, egg, oil and juice mixture. Pour into a greased 13x9-in. baking dish. Arrange sausages and peaches over the top. , Bake, uncovered, at 350° for 30-40 minutes or until a toothpick inserted in the center comes out clean. Cut into squares; serve warm with peach syrup.

CHILE RELLENO SQUARES- BREAKFAST VERSION
A friend made this for breakfast at our MOPS meetings (Mothers of Preschoolers). They were always a hit!! Very YUMMY but not low fat! I make them every year for our Christmas morning relative open house (if you have kids, you know what I mean- all the grandparents and friends stop by to bring the kids something...). Not a big hit with the kids but the adults love it- and it is REALLY EASY!. Of course, it could be made for dinner as well. However, this tastes nothing like authentic Chile Rellenos. Yummy- but not authentic. PS- Not spicy unless you substitute in another kid of chile for the diced green canned chilies.

- In a 13x9 in baking dish, place the stick of butter.
- Place dish in the oven and set to 350 degrees (the butter will melt while the oven preheats).
- Meanwhile, beat eggs in a large bowl.
- Blend in- by hand- cottage cheese and grated cheese. Add flour, baking powder and green chilies.
- Remove the baking dish from the oven once the butter has melted and add the egg mixture- no need to stir. Cover with foil. If the oven has not yet preheat, wait until then, otherwise --
- Bake 45 mins at 350. Remove foil and bake an additional 15 minutes.
- Optional- serve with sour cream and salsa.
CHEESY HAM, MUSHROOM AND CORN BREAKFAST SQUARES

- 1. Preheat oven to 375 degrees F. Unroll both cans of crescent rolls into 4 long rectangles. In a 15 x 10 baking pan, place crescent rectangles crosswise. Firmly press over bottom to seal perforations and allow 3/4 " of rolls up sides of pan.
- 2. Sprinkle crescent rolls with chopped ham, shredded cheese, drained corn and drained mushrooms evenly over the dough.
- 3. In a bowl, beat egg with milk, salt and pepper until well mixed. Pour evenly over ham mixture. Bake for 35-40 minutes or until crust is golden brown and egg mixture is set. Test with a knife inserted into the center -- it should come out clean. Allow casserole to cool for 5 minutes and then cut into squares.
SAUSAGE, SPINACH AND CHEESE BREAKFAST SQUARES
Easy peasy and adjustable. These are good served hot, fresh from the oven, but I make them for us to take to work and eat there. They also freeze and reheat very well. I also used cubed ham if sausage isn't available. And if I have a lot of chopped green or spring onions left over from something, I use those as well as yellow or white onion. Feel free to play with the ingredients. I use 14 large eggs - adjust accordingly. Nuking the sausage ahead of time makes clean up way easier. I end up putting the eggs, baking mix, spinach, salt pepper in the Cuisinart then I just stir in the sausage and cheese.

- Spread the sausage out on a microwave-safe bowl and microwave until it's cooked. Drain it and crumble it and set aside.
- Beat the eggs with the baking mix (we use Carbquick) and salt and pepper.
- Drain the spinach and add to the eggs.
- Add the cheese.
- Add the sausage.
- Bake in large rectangular pan that's been well sprayed with non-stick spray (I use a 13x8" pan) You could also bake these (for less time) in sprayed muffin tins.
- Bake 350 degrees for about 40 minutes or until the center is set. Cool and cut into squares.

- 1. Preheat oven to 350 degrees. Crumble and cook sausage in medium skillet over medium heat until browned. Drain off any drippings.
- 2. Spread bread cubes in greased 9 x 13 baking dish; mix sausage, peppers, mushrooms, onion, and spread on top of bread cubes. Layer cheese over all. Whisk eggs, milk, salt and mustard until well blended; pour over cheese evenly.
- 3. Bake 30-45 minutes or until toothpick comes out clean. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.

Bake at 450 for 13-15 mins. until crust start to brown and cheese is melted. . ingredients 8 ounce cream cheese (softened) 12 eggs 1/2 teaspoon course ground black pepper instructions Whisk softened cream cheese until smooth, gradually add eggs and black pepper. . ingredients 8 ounces thick sliced deli ham (coarsely chopped) 3/4 cup green onions with tops (divided) instructions Saute the ham and ¾ cups of green onion over medium heat until hot. Stir ham mixture into egg mixture. . ingredients 3 plum tomatoes (sliced in half lengthwise and remove seeds and dice) 1 cup Colby and Monterey jack cheese (shredded) 1/4 cup green onions with tops (divided) instructions When hash browns are brown remove from oven and pour egg mixture over crust. Return to oven and cook 6-8 mins. or until center is set. Remove form oven: top with remaining cheese, tomatoes and reserved green onion. Sprinkle with black pepper, if desired. Cut into squares and serve.
BISQUICK SAUSAGE BREAKFAST SQUARES
I found this recipe on the back of a box of link sausage. I haven't tried it yet but it sounds tasty. I am always on the lookout for easy breakfast casseroles and this is unlike anything I have seen on Zaar. It could be easily modified to suit individual tastes but this is the version directly from the box.

- Grease an 8 x 8-inch baking pan.
- In a small heat-proof bowl mix together the 1/2 cup All Bran cereal with boiling water; let stand until softened.
- In a large bowl mix/whisk egg (or egg substitute) buttermilk, sugar and applesauce; add in the softened bran/water mixture to the egg mixture.
- In a bowl mix together both flours, baking soda and salt; add to the wet mixture; mix only just until combined.

- Preheat oven to 375 degrees.
- Spray a 9 x 13 baking dish with non stick cooking spray.
- In a large bowl, add non fat Greek yogurt, egg, and self-rising flour. Use a rubber spatula to mix together. It will be crumbly at first which is totally normal.
- Flour your hands and work surface and begin kneading. Knead until you can easily form a small ball. Place at the bottom of the 9x 13 baking dish. Using your hands or small spatula spread the dough evenly into the bottom of the prepared baking dish. Pressing down around all the sides and corners.Â
- Cook for 8-10 minutes or until lightly brown.
- Meanwhile, spray a skillet with non stick cooking spray. Cook onion over medium heat until onions are soft and translucent.
- Remove from heat.Â
- In a large mixing bowl, combine eggs, unsweetened almond milk, oregano, sausage crumbles, garlic powder, pepper flakes, cooked onions, salt and pepper. Stir until well combined.
- Pour egg mixture over the top of the crust.Â
- Bake for 15-18 minutes or until eggs are completely cooked.
- Using a knife, cut into 8 even slices.Â
