SAUSAGE AND CRESCENT ROLL BREAKFAST CASSEROLE
I have experimented with many breakfast casseroles, the cream cheese adds extra flavor, and in my opinion, a must!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with nonstick spray. Line the bottom of the pan with crescent roll dough, pinching the perforated seams together.
- Heat a large skillet over medium-high heat. Cook and stir sausage, bell pepper, and both onions in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Remove any extra oil from the pan. Stir in cream cheese and black pepper; cook until cream cheese is melted, 2 to 3 minutes. Remove from the heat and let cool slightly.
- Arrange sausage-cream cheese mixture evenly over the dough and sprinkle Cheddar cheese over top. Beat eggs and milk together and pour over the cheese.
- Bake casserole in the preheated oven until the bottom is brown, cheese is melted, and eggs in the center are set, about 30 minutes.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove sausage to a plate; drain and discard most of the grease from the skillet. Add hash browns and cook until golden brown, 5 to 7 minutes.
- Beat eggs, milk, salt, and pepper together in a bowl.
- Arrange crescent rolls on the bottom of a 9x13-inch baking dish. Layer with sausage and hash brown potatoes. Pour egg mixture over top and sprinkle with pepper Jack cheese.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 30 minutes. Remove from the oven and let set before serving, about 10 minutes.

Steps:
- Thaw dough at room temperature until about double in size.
- Brown sausage with onions, oregano, and a dash of garlic powder. Drain.
- Separate one of the eggs, setting aside the white for later.
- Place the other egg and the egg yolk from above in large bowl with cheeses. Add sausage mixture and toss all together.
- Cover a cookie sheet with foil and flatten out dough to cover.
- Spread meat mixture over dough.
- Roll dough up in jelly-roll style (i.e., from long end to long end) with mixture inside. Pinch seam together to seal.
- Place seam-side down on cookie sheet. Brush top with reserved egg white.
- Bake at 350 degrees for 40 minutes.
- After baking allow to cool for 10 minutes, then cut into slices about 1-inch thick.

- Lightly grease a cookie sheet.
- Open the French loaf and find the crease.
- Unroll the loaf on a cookie sheet.
- Fry sausage into small pieces.
- Drain and put a line of sausage on the loaf.
- Roll over once or twice and put another line of sausage.
- Finish rolling over the loaf.
- Cook at preheated oven for 11-15 minutes.

- Rub the frozen bread dough with vegetable oil, cover and allow to thaw overnight at room temperature.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.

Steps:
- Allow dough to rise and double in size.
- Cook sausage, add mushrooms and onions.
- Cook until tender.
- Drain and cool.
- Beat 2 eggs, set aside.
- To sausage, add cheese and seasonings and the 2 eggs.
- Mix well.
- Roll each loaf of dough to about 16x12.
- Spread 1/2 of the mixture with in 1 inch of edge.
- Roll jelly roll style and seal ends.
- Put on greased cookie sheet.
- Bake at 350F degrees for 25 minutes.
- Beat remaining egg.
- Brush over the bread.
- Bake 5-10 minutes more, until brown.

- Brown the sausage and drain. Add the sausage back to the skillet and add the cream cheese. Stir until it melts. Set aside. Saute' the chopped peppers in the butter. Add the pico and stir well. Drain. Add the pepper mixture to the sausage mixture and stir well. Add 1 cup of the shredded cheese and combine. Tear the rolls into large hunks and place in a large bowl. Whisk the eggs with the heavy cream and pour over the rolls. Add the sausage mixture to the roll mixture and stir. Stir in 1 cup of the shredded cheese. Pour into 13 x 9 baking dish and add the remaining cup of cheese. Cover with foil and bake 45 minutes at 350 degrees.
