Make Ahead Breakfast Parfaits are a quick, healthy breakfast for busy mornings. Yogurt, granola, and fruit will start your day off right. Just grab and go!

32 oz plain or vanilla yogurt (Greek yogurt works great)
1 1/2 c. strawberries
1 1/2 c. raspberries
1 1/2 c. blueberries
4-5 c. granola (Our recipe for Vanilla Granola is my favorite)

Steps:

  • Layer 1/4 - 1/3 c. of mixed berries in the bottom of each cup.
  • Next spoon about 1/4 - 1/3 c. of yogurt on top of the berries.
  • Continue layering until the cup is as full as you would like (with yogurt being the top layer).
  • Fill a snack-sized ziploc bag with granola and seal (one for each cup).
  • Cover each cup tightly with plastic wrap and seal with rubber band.
  • Place (or tie on) a granola bag on each cup along with a plastic spoon (see picture above).
  • Place in refrigerator for up to 5 days.

¾ cup blueberries
1 (6 ounce) container vanilla yogurt
1 tablespoon wheat germ
½ banana, sliced
⅓ cup granola

Steps:

  • Layer 1/4 cup strawberries, 1/4 cup blueberries, 1/3 container yogurt, 1/3 tablespoon wheat germ, 1/3 of the sliced banana, and about 2 tablespoons of granola in a large bowl. Continue to build the parfait, repeating the layers until all of the ingredients are used completely.

1 1/2 cups old-fashioned rolled oats
1/3 cup sliced almonds
1/3 cup black chia seeds
1/3 cup unsweetened coconut flakes
1/3 cup sunflower seeds
1/3 cup chopped walnuts
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse sea salt
3 cups 2-percent yogurt
3 cups assorted fresh berries, grapes, cut-up bananas or apples

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • Stir together the oats, almonds, chia seeds, coconut flakes, sunflower seeds, walnuts, maple syrup, vanilla and cinnamon in a large bowl. Pour the mixture onto the prepared baking sheet and season with the salt. Bake, stirring halfway, until the nuts are golden brown, 20 to 30 minutes. Let cool. The granola will keep in an air-tight container for up to 1 week.
  • Put 1/4 cup yogurt in a juice or parfait glass and top with 1/4 cup fresh fruit and then 1/4 cup granola. Repeat with the remaining ingredients in 5 more glasses and serve.

8 ounces vanilla yogurt, divided (or other flavors)
1 cup granola cereal, divided (I prefer homemade)
mixed fruit (optional)

Steps:

  • Place 1/3 cup of granola in a parfait glass. Top with half of the yogurt.
  • Repeat layers.
  • Top with remaining granola.
  • Note, mix any of your favorite fruits into the yogurt before assembling or layer fruit in between yogurt and granola layers if so desired.
