WAFFLE BREAKFAST SANDWICH



Waffle Breakfast Sandwich image

For 12-year-old Jeffrey (a.k.a. JD), cooking is all about being adventurous, which explains why he tried putting Hawaiian rolls in a waffle iron for our Kid Cooks contest. JD is admittedly obsessed with the rolls ("They're one of my favorite foods!" he says), and he wanted to make something new with them. His invention was a big hit in our test kitchen!

4 slices pork roll
2 tablespoons maple syrup
1/2 teaspoon hot sauce
1 tablespoon ketchup
Butter cooking spray
16 Hawaiian sweet rolls (from a 24-pack)
4 large eggs
4 slices American cheese
Salt and pepper

Steps:

  • Preheat the oven to 350˚ F. For the pork roll: Prep a cookie sheet with a piece of parchment paper. Lay the pork roll slices on the parchment paper evenly spaced apart. Using 1 tablespoon of maple syrup, brush both sides of the pork roll generously with syrup. Bake for 15 minutes, flipping one time halfway through. The pork roll should be nicely browned on both sides. While the pork roll is cooking, prep the sauce and waffles.
  • For the sweet and tangy sauce: Mix the hot sauce, ketchup and 1 tablespoon maple syrup in a bowl. Set aside.
  • For the waffles: Heat a waffle iron to medium high. Spray with cooking spray. Take 4 Hawaiian rolls in a square, being careful not to pull them apart, and place on the waffle iron. Close the waffle iron and cook for 2 to 3 minutes, or until golden brown. Carefully remove and repeat three more times to have a total of 4 waffles.
  • Heat a nonstick pan and spray with cooking spray. Carefully crack the eggs into the heated pan. After 3 to 4 minutes, break the yolks and cook for an additional minute. Flip when the edges of the whites get crispy and cook on the other side for an additional 2 to 3 minutes. Add 1 slice of American cheese to each egg. Let the cheese melt, then remove from the heat.
  • To assemble the sandwiches, generously spread the sweet and tangy sauce on all 4 waffles. Layer 2 eggs and 2 slices of pork roll on top of 1 waffle. Season with salt and pepper. Cover with a second waffle to form a sandwich. Repeat for the second sandwich. Cut in half and enjoy!

2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
4 tablespoons unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/3 cup semi-sweet chocolate chips
2/3 cup freeze-dried strawberry (ground into powder in food processor)
red food coloring
chocolate syrup, sliced strawberries, whipped cream (for topping)

Steps:

  • Preheat waffle iron.
  • In one bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In another bowl, whisk together buttermilk, butter and eggs; add flour mixture and mix until just combined.
  • Divide the batter evenly between three bowls. In one bowl, stir in the vanilla extract. In another bowl, stir in the melted chocolate until thoroughly combined. In the third bowl, stir in the strawberry powder and red food color if using.
  • Coat the waffle iron with cooking spray. Take a heaping spoonful of the strawberry batter and pour it into a stripe in the waffle iron; use the back of the spoon to spread it into place if needed. Spoon a stripe of the vanilla batter next to the strawberry batter, spreading it into place. Put a stripe of chocolate batter next to the waffle batter. All three lines of batter should be touching each other--also you can pipe in each color using a piping bag.
  • Close the waffle iron and cook according to manufacturer instructions; epeat the cooking process with the remaining batter.
  • Serve the waffles with a drizzle of chocolate sauce, a dollop of whipped cream, and fresh strawberries.

2 cups Hungry Jack® Complete Buttermilk Pancake & Waffle Mix (Just Add Water)
1 ¼ cups water
¼ cup Crisco® Pure Canola Oil
1 egg
¾ cup Jif® Chocolate Flavored Hazelnut Spread, divided
1 serving Crisco® Original No-Stick Cooking Spray
¾ cup Hungry Jack® Original Syrup
4 cups sliced strawberries
1 tablespoon Whipped cream in aerosol container

Steps:

  • Heat waffle iron according to package directions. Whisk pancake mix, water, oil, egg and 1/2 cup chocolate hazelnut spread together in large bowl just until blended.
  • Coat hot waffle iron with no-stick cooking spray. Pour about 1 cup of batter onto center of waffle iron and close lid. Bake 5 to 6 minutes or until steaming stops. Repeat with remaining batter, making 16 (4x4) waffles.
  • Combine syrup and 1/4 cup chocolate hazelnut spread in small microwave-safe bowl. Microwave on HIGH for 30 seconds. Stir until smooth.
  • Place waffle on serving plate. Top with 1/4 cup strawberries, whipped cream, another waffle, 1/4 cup strawberries and finish with whipped cream. Repeat with remaining waffles. Serve with chocolate hazelnut syrup.
