Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Line baking sheets with parchment paper.
  • Mix rolled oats, flax seed meal, steel-cut oats, oat bran, wheat germ, and pecans in a large bowl. Whisk agave nectar, pumpkin, brown sugar, water, canola oil, vanilla extract, pumpkin pie spice, and sea salt in a separate bowl, stirring until brown sugar and salt are dissolved. 1 cup firmly packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
2 large eggs
1 cup rolled oats
1/2 cup dried cranberries
1/2 cup roasted and salted pepitas
Greek yogurt, optional

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Mix the peanut butter, brown sugar, vanilla, cinnamon and eggs in a large bowl with a handheld mixer until smooth. Add the oats, cranberries and pepitas and mix until just combined. Use a 1/4-cup dry measuring cup or 1/4-cup ice cream scoop to scoop the dough onto the baking sheets, leaving at least 1 inch between scoops, making about 9 per tray. Flatten the scoops slightly with the back of a spoon. Bake until the cookies are starting to brown, 10 to 12 minutes.
  • Let them sit on the baking sheets for a couple of minutes to let them set up a little bit. Serve warm, or let cool completely, then store in an airtight container for up to a week. Also great for freezing and eating straight out of the freezer! Serve with Greek yogurt for slathering or dipping, if using.

1/3 cup honey or molasses
1/4 cup canola oil
1 teaspoon vanilla extract

1 cup sweetened shredded coconut
1 cup raisins
1 cup chopped dates
Optional: Yogurt and fresh fruit

Steps:

  • Spread rolled oats on a 15x10x1-in. baking pan. Bake at 350° for 5 minutes. Stir; bake 5 minutes longer or until toasted. Meanwhile, combine honey and oil in a small saucepan. 1/3 cup extra-virgin olive oil
1 to 3 tablespoons crushed red-pepper flakes, such as Calabrian
1 teaspoon ground cinnamon
3 cups old-fashioned oats (not quick-cooking)
1/2 cup toasted buckwheat groats (kasha)
1/2 cup seeds (such as flax, hemp, and sesame)
1/2 cup sliced almonds
1/2 cup good quality maple syrup
2 teaspoons kosher salt (we use Diamond Crystal)
2 egg whites, beaten
4 to 6 favorite mixed citrus, such as blood oranges, Cara Cara oranges, grapefruits, and satsuma mandarins, sliced and segmented
Sheep's-milk yogurt (plain or maple-flavored), for serving (optional)
Flaky salt

Steps:

  • Preheat oven to 350°F. In a small pot over medium heat, bring oil and red-pepper flakes to a simmer, then remove from heat. Swirl in cinnamon and let stand a few minutes (the longer it sits, the spicier it will be). Strain into a large bowl though a fine-mesh sieve; remove 1 tablespoon or so of spicy oil and set aside.
  • To that same large bowl with spicy oil, add oats, buckwheat, seeds, almonds, maple syrup, kosher salt, and egg whites. Combine with a wooden spoon until everything is mixed and moistened. Transfer to a parchment-lined rimmed baking sheet and bake, rotating and mixing every 15 minutes, until golden brown and fragrant, 25 to 30 minutes.
  • Arrange citrus on your plate or plates. Scatter with a handful of granola and top with a spoonful of yogurt (use the back of a spoon to give it a nice swoop), if desired. Drizzle with reserved spicy oil and sprinkle with flaky salt. Save any remaining granola in an airtight container up to 3 weeks.

This can be served anytime for anything. It is so good and refreshing and with the temperature rising all summer, we have been making different versions of this.

2 cups cubed cantaloupe
2 large red apples, chopped
1 cup red grapes or 1 cup green grape
1 medium firm banana, sliced
1/2 cup lemon yogurt
1/4-1/2 tablespoon lemonade concentrate (more if needed)
granola cereal, for sprinkling over the top
sugar, sprinkling over the top (if needed)

Steps:

  • In a serving bowl, combine the fruit.
  • Combine the yogurt with the lemon juice concentrate; drizzle over fruit.
  • Top with granola and sugar, if needed.

Simple, tasty basic granola recipe. I like this just as it is, but you can also mix up the ingredients. Some ideas: Substitute nuts for dried fruit or berries; use half almonds and half broken pecans; use half pecans and half dried cherries; omit the coconut and replace with the same amount of oats. You get the idea. This makes more than the recipe lets on, so you may have to use two cookie sheets. Enjoy!

4 cups old fashioned oats
1 cup wheat germ
1 1/2 cups sliced almonds
1/2 cup shredded coconut
1/2 cup vegetable oil
1/2 cup honey

Steps:

  • Preheat oven to 350F degrees.
  • In a huge bowl, mix all ingredients together until well blended, evenly coating all pieces.
  • Spread onto a cookie sheet.
  • Bake for 15 minutes.
  • Stir well.
  • Bake for 15 minutes more.
  • Cool completely.
  • Store tightly covered in giant container or zip lock bags.

BREAKFAST GRANOLA

My family loves this granola! We usually mix about 1/4-1/3 cup of it in a smoothie for breakfast every morning because it tastes so great with the smoothie and it lasts us a couple of weeks this way. Tastes great on its own or mixed with your favorite cereal also. You can also add some raisins after its finished baking.

1 -2 cup coconut
6 cups rolled oats
1 cup wheat germ
1 tablespoon salt
1/4 cup honey or 1/4 cup maple syrup
3/4 cup sugar
1 tablespoon vanilla flavoring
4 tablespoons oil
1 cup pecans (or whatever else you have on hand) or 1 cup walnuts (or whatever else you have on hand)
1 cup water
cinnamon
nutmeg, to taste

Steps:

  • Mix coconut, oats, wheat germ, salt, sugar, nuts, cinnamon, and nutmeg in a large mixing bowl.
  • Add honey, vanilla, oil, and water.
  • Mix well again squishing and compacting with both hands.
  • Place granola on 2 cooking pans, can make some clumps and some flat, and cook at 150°C (300°F).
  • Take granola out every 10-15 minutes to mix on pan so it doesn't burn.
  • Cook until dry and has started to turn slightly brown throughout. Can take 1-2 hours (or more) to bake (I usually double the recipe and cook on 4 pans throughout the day to have more stored because of the long cooking time).
