While searching for a great make ahead breakfast I tried this and it worked great! Hope you enjoy it too :)

12 miniature bagels (whole wheat or white)
1/2 cup butter
12 pieces bacon (fried crisp and cut in half)
12 eggs
1 cup cheddar cheese, grated (or your favourite kind)

Steps:

  • Slice each bagel in half.
  • Lightly butter each side.
  • To cook eggs, lightly grease a mug or small bowl or ramekin; beat eggs in that bowl and microwave 30 seconds; remove egg in one piece and repeat for remaining eggs. Or take Swan Valley Tammi's idea and pre-cook the bacon, chop it up and add it to the eggs. Pour into greased muffin tins. Bake at 400 degrees Fahrenheit for 12 minutes so all 12 egg/bacon 'patties' are done at the same time.
  • On the bottom half of the bagel place cooked egg.
  • Top each egg with approximately 1 Tablespoon grated cheese.
  • Stack bacon on top.
  • Complete sandwich with top of bagel.
  • Cool slightly; wrap in plastic wrap individually; place in a large labeled zipper freezer bag.
  • To serve, remove 1 bagel sandwich from bag and remove wrapping.
  • Place upside down in microwave and heat for 30 seconds.
  • Place right side up and microwave for 30 seconds more or until heated through. **Time may vary in your microwave**.
  • Eat warm.

4 tablespoons salted butter
1/4 cup half-and-half
3 large eggs, beaten
Kosher salt and freshly ground black pepper
4 precooked sausage patties, such as Jimmy Dean
4 mini bagels, split
1/4 cup bottled chipotle mayonnaise
2 slices American cheese, split
2 slices pepper jack cheese, split
1 small tomato, sliced thin
1 small avocado, sliced
1 tablespoon everything seasoning

Steps:

  • Heat a griddle over medium heat.
  • Melt 2 tablespoons of the butter in a nonstick skillet over medium-low heat. Mix the half-and-half, eggs and a good pinch of salt and pepper in a measuring cup. Gently pour the mixture into the skillet. Turn the heat to low, cover and wait until the eggs are set, 4 to 5 minutes.
  • While the eggs cook, add the sausage patties to one half of the griddle and cook until heated through, about 2 minutes per side. Grease the other half of the griddle with the remaining 2 tablespoons butter. Add the bagels, cut-side down, and toast until golden, 1 to 2 minutes. Remove the bagels and sausage to a board.
  • Roll the eggs into an omelet to fit the width of the bagels and cut into 4 pieces.
  • To build, spread 1 tablespoon of chipotle mayonnaise on the bottom half of a bagel. Top with a sausage patty, 1/2 slice of the American and 1/2 slice of the pepper jack cheese. Top with a slice of the rolled omelet, a slice of tomato and a few slices of avocado. Sprinkle some of the everything seasoning over the avocado. Place the other half of the bagel on top. Assemble the other 3 sandwiches, then serve.

Other than the processed cheese slices, everything about these sandwiches is healthier than the store-bought kind. I tried using regular cheddar cheese instead of the processed slices, but it just wasn't the same, so processed cheese it is! I got lucky and happened to have a round cookie cutter that is the exact same size as my English muffins (3.5-inches) and a perfectly sized casserole dish (10.5x14-inches) for cooking my eggs in. I'm able to do three rows of four, and the only "extras" are the little diamond shapes between the circles, which I usually wrap up in a tortilla with ham and cheese for a bonus breakfast burrito for my fiance. The 'Zaar-calculated nutrition info does not match my calculations, which are: 350 calories, 11.6 g fat, 210 mg cholesterol, 1082 mg sodium, 32 g carbs, and 24.8 g fat.

1 1/2 dozen large egg whites
1 dozen large whole egg
salt and pepper
1/2 medium yellow onion, diced
1/2 large green bell pepper, diced
12 slices ham
12 slices american pasteurized sandwich cheese, unwrapped (I prefer to use 2% cheese if available)
12 100% whole wheat English muffins, split in half

Steps:

  • Preheat oven to 350 degrees.
  • Whisk together the eggs and stir in salt, pepper, onion, and bell pepper.
  • Pour into a casserole dish that has been sprayed with non-stick cooking spray.
  • Bake in preheated over for 15 minutes.
  • Stir.
  • Bake for 15 more minutes.
  • Remove from oven and let cool slightly.
  • Cut out 12 "egg circles" with a cookie cutter; place on bottom halves of the English muffins.
  • Top with ham, cheese, and top of English muffin.
  • Wrap sandwiches in foil, then freeze.
  • To serve, allow to defrost in the fridge overnight. Alternatively, you can defrost for a few minutes in the microwave.
  • Microwave on high for about a minute, or until heated through and cheese is melted.
