BREAD MACHINE CINNAMON ROLLS

You can make cinnamon rolls like Cinnabon in your bread machine with this easy recipe.

1 cup milk
1 beaten egg
4 tablespoons melted butter
4 tablespoons water
1/2 box instant vanilla pudding ((3.4 ounce box))
4 cups bread flour
1 tablespoon sugar
1/2 teaspoon salt
2 1/2 teaspoons bread machine yeast
1/2 cup butter (softened)
1 cup brown sugar
2 teaspoon ground cinnamon
1/4 cup chopped walnuts
1/4 cup raisins (optional)
8 ounces butter
8 ounces cream cheese
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 pound powdered sugar

Steps:

  • Place all of the cinnamon roll dough ingredients in your bread machine in the order recommended by your machine's manufacturer.
  • Set the machine to run the dough cycle.
  • When the cycle is finished, remove the dough and knead it enough to punch down.
  • Roll out the dough to a 17 X 10-inch rectangle.
  • Place butter, brown sugar, and cinnamon in a small bowl. Mix well.
  • Heat the filling in the microwave for 10 seconds to make it spreadable.
  • Spread the filling over the rolled-out dough with a rubber spatula. Get as close to the edges as possible.
  • Sprinkle nuts and/or raisins over the dough, if using.
  • Starting with the widest end, roll the dough into a tight log. Pinch the edge to seal.
  • Cut the log into 1-inch slices.
  • Place the slices cut-side down in a lightly greased baking dish with sides.
  • Put the dish in a warm draft-free place and allow the dough to rise until double.
  • Bake at 350 for 15 to 20 minutes, until golden brown.
  • Place softened butter and cream cheese in a bowl. Mix together with a mixer.
  • Add lemon juice, vanilla, and blend well.
  • Slowly add in the powdered sugar, beating with a mixer, until all powdered sugar is incorporated.
  • Spread the frosting on the cinnamon rolls when they have cooled slightly.

1 cup milk
3 tablespoons water
1 egg, beaten
1/4 cup butter
3 1/3 cups all-purpose white flour
3 tablespoons granulated sugar
3/4 teaspoon salt
2 teaspoons yeast
3/4 cup packed brown sugar
3 3/4 teaspoons cinnamon
2 tablespoons softened butter or 2 tablespoons margarine
3/4 cup powdered sugar
1/4 teaspoon vanilla
2 -3 teaspoons milk

Steps:

  • Put yeast in bread machine first on bottom, then flour, sugar and salt.
  • Then melt butter in microwave. Add beaten egg, milk and water.
  • Pour onto dry ingredients in bread machine on the dough setting.
  • When dough is done, put it onto a lightly floured surface.
  • Knead in enough flour to make it easy to handle.
  • If it is too elastic, cover and leave 10 minutes.
  • Use floured rolling pin to roll out dough on floured surface.
  • Roll out into rectangular shape to approx 1/4-inch thick.
  • Use filling and spread over entire surface of dough with spoon.
  • Roll up dough.
  • Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
  • Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
  • Bake in a 350° oven for about 25 minutes, light brown on top.
  • When done, make glaze and swirl over buns.

1 cup milk
2 eggs
¼ cup butter
4 cups bread flour
¼ cup white sugar
1 teaspoon salt
1 ½ teaspoons active dry yeast
½ cup chopped walnuts
½ cup packed brown sugar
2 teaspoons ground cinnamon
2 tablespoons softened butter, divided
2 teaspoons sifted confectioners' sugar, divided

Steps:

  • Place milk, eggs, 1/4 cup butter, bread flour, sugar, salt, and yeast into a bread machine in the order recommended by the manufacturer, select the dough setting, and start the machine. When dough cycle is complete, transfer dough to a floured work surface and punch down. Let dough rest for 10 minutes.
  • Mix walnuts, brown sugar, and cinnamon in a bowl.
  • Divide dough in half and roll each half into a rectangle about 9x14 inches. Spread 1 tablespoon softened butter over the top of each dough rectangle and evenly sprinkle dough with half the walnut mixture. Roll dough rectangles, starting from the short ends, and pinch seams closed.
  • Grease 2 9x5-inch loaf pans. Fit the rolled loaves into the loaf pans with seam sides down. Cover and let rise until nearly doubled in size, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake loaves in the preheated oven until lightly golden brown and bread sounds hollow when tapped, about 30 minutes. If loaves brown too quickly, lightly cover with aluminum foil for the last 10 minutes of baking. Let bread cool for 10 minutes before removing to finish cooling on wire racks. I have a bread maker and use it frequently to make all kinds of dough. It really saves time and gives your dough a professional consistency.

1 c warm milk
2 large eggs slightly beaten
3/4 c softened butter or margarine
4 1/2 c all purpose flour
1/3 c granulated white sugar
3/4 tsp table salt
1/8 tsp ground cinnamon
2 1/2 tsp breadmaker yeast
3/4 c raisins (optional)
CINNAMON FILLING
1 c brown sugar, firmly packed
2 tsp ground cinnamon
3 Tbsp melted butter
ICING
1 1/4 c powdered sugar
1/2 tsp vanilla extract
2 Tbsp half and half or milk
1/8 tsp salt

Steps:

  • 1. Place the first 8 ingredients into the breadmaker pan in order given. Select dough cycle and start. It takes about an hour and a half. If adding raisins, wait for beep in dough cycle to add ingredients. Check with your breadmaker manual.
  • 2. Melt 3 TBSP butter and set aside. Mix together the brown sugar and 2 tsp. cinnamon in a small bowl.
  • 3. When the dough is finished, cover it with a damp clean towel and let it rest for 10 minutes. Turn the dough out onto a floured pastry mat. Sprinkle enough flour on dough and rolling pin to prevent sticking. Roll out dough into 16 x 20 inch rectangle.
  • 4. With a pastry brush, cover the rolled dough with the melted butter to within 1 inch of edges. Sprinkle the brown sugar/cinnamon mixture evenly over the butter.
  • 5. Start rolling up the dough "jelly roll fashion" starting with the edge of the 20" section. Roll as tightly as you can using floured hands. Seal the long edge with a little water on your finger.
  • 6. Cut the dough into 12 equal pieces gently. They should resemble pinwheels. Place them into a lightly greased 9 x 13 baking pan with space in between for rising.
  • 7. Cover the buns with a damp towel and let them rise for 30 minutes in a warm, draft free place. When the buns have doubled in size, place them in a 400 degree preheated oven and bake for 15-20 minutes until they are lightly browned. Make sure all dough is cooked through evenly. The dough should bounce back when lightly touched with a wooden spoon.
  • 8. Remove baking pan to a cooling rack and mix together the icing ingredients. Drizzle the icing on the buns while they are still slightly warm. Serve warm or cool. Store in a tightly covered container at room temperature. Use them within 2 days for freshness.

½ cup butter, softened
1 cup brown sugar

½ teaspoon vanilla extract
1 ½ teaspoons milk

Steps:

  • In the pan of your bread machine, combine water, 1/4 cup melted butter, vanilla pudding, 1 cup warm milk, egg, 1 tablespoon sugar, salt, bread flour, and yeast. Set machine to Dough cycle; press Start.

I am NOT a dough maker so I stay clear of cinnamon roll recipes because of it. BUT if you do exactly what this recipe says you will...

1 c plus 2 tablespoons warm milk
3 Tbsp vegetable oil
1 egg plus two egg whites all beaten
1/2 c sugar
4 1/4 c white flour
1 tsp salt
3 tsp bread machine yeast (quick rise kind)
FILLING:
1/2 stick butter, room temp
1 c brown sugar
2 Tbsp cinnamon 1 cup chopped walnuts or pecans
ICING:
2 tsp milk
1 1/2 c powdered sugar
1/2 stick butter
1 tsp vanilla extract
THIS RECIPE CALLS FOR A 2LB. BREAD MAKER

Steps:

  • 1. Drop in first 7 ingredients for dough IN ORDER AS THEY APPEAR in bread machine. Do not stir. Close breadmaker and start it going. (Mine took 1hr 59 minutes from start to finish, includes raise time.) Meanwhile, in one bowl, stir together filling EXCEPT nuts. In another bowl, stir together icing ingredients. Flour your surface and rolling pin well. When dough is done roll it out to a large rectangle. The dough is like elastic so you will just need to roll it out until you get a rectangle of about 15x8. Apply all the filling evenly over the dough. Add chopped nuts. Roll Jelly roll style until you have a nice roll. (I thought I had made them too loose but they were just fine.)Cut into 15 slices (about 1 inch). Place on two greased cookie sheets. Bake each cookie sheet individually. Bake for 15 minutes at 325 degrees PREHEATED OVEN. While still on sheet, immediately spread icing on the rolls, including the sides. Makes 15 rolls about 5 inches in diameter. DELICIOUS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
  • 2. Note: I am going to add raisins the next time. NOTE: These can be refrigerated on a cookie sheet or pan to use next day AND can even be frozen in a pan for another time.
  • 3. Note: You can let these rise for an hour before you bake. Not necessary though but I like them that way. Also, adding 1 8oz. cream cheese to the icing will make a cream cheese icing. Not as sweet. Then add a tablespoon of milk to make a runnier consistancy, if you want. I like to put 2 teaspoons of orange extract in the cream cheese icing for a nice orange zing in the cinnamon and sugar flavors.

  • Roll dough into a 16x21-inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
