¾ cup grated Parmesan cheese
1 (1 ounce) envelope ranch salad dressing mix
8 (4 ounce) skinless, boneless chicken breast halves
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine corn flakes, Parmesan cheese, and ranch dressing mix in a bowl. Dip chicken in melted butter; roll each chicken breast in corn flake mixture until evenly coated. Place coated chicken in the prepared baking dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

½ cup finely crushed herb-seasoned stuffing mix
3 tablespoons grated Parmesan cheese
1 tablespoon dried parsley
1 teaspoon curry powder
1 tablespoon Italian-style seasoning
3 tablespoons butter
6 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small shallow dish combine the stuffing mix, cheese, parsley, curry powder and seasoning. Mix together.
  • In an 8x11 inch baking dish, melt the butter/margarine in the microwave. Dip the chicken breasts in the stuffing mixture, coating both sides of each breast.
  • Place chicken in baking dish and sprinkle any leftover stuffing mixture over the chicken. Bake in the preheated oven for 20 minutes, then turn chicken pieces over and bake for another 20 to 25 minutes or until chicken is cooked through. Enjoy!

Breading is one of the finest and most versatile cooking techniques. It's easy and quick, and foods properly breaded and cooked are particularly tempting. Pair this dish with a quick ratatouille, a white or red wine (try a lightly chilled Beaujolais), a tossed green salad, and a sherbet or ice for dessert.

4 skinless, boneless chicken breast halves, about 1 1/4 pounds
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons flour
1 large egg, beaten
2 tablespoons water
1 cup fine fresh bread crumbs
1/4 cup freshly grated Parmesan cheese
2 tablespoons corn, peanut or vegetable oil
4 tablespoons butter
1 tablespoon finely chopped fresh tarragon
2 tablespoons freshly squeezed lemon juice

Steps:

  • Cut away and discard any white membranes or traces of fat from the breast halves. Sprinkle each with salt and pepper.
  • Put the flour in a shallow dish. Dip the breasts in the flour. Coat well, and shake off excess.
  • Combine the egg with water, salt and pepper in another shallow dish, and beat to blend.
  • Combine the bread crumbs with Parmesan cheese in a third dish, and blend.
  • Dip the breast halves in the egg mixture, coating thoroughly. Drain off excess. Dip the pieces in the bread-crumb mixture, also coating thoroughly. Pat the pieces lightly with the flat side of a large knife to make the crumbs adhere.
  • Heat the oil, preferably in a nonstick skillet, and add the breasts. Cook over moderately high heat until golden brown on one side, 3 to 4 minutes. Turn and cook 3 to 4 minutes or until golden brown on the second side.
  • Transfer the chicken to a warm platter; pour the fat from the skillet.
  • Add the butter to the skillet, and cook until bubbling. Add the tarragon and lemon juice; blend. Pour the sauce over the chicken, and serve immediately.

I like my breaded chicken with a crisp crust, but a lot of juice on the inside. I added some twists onto your basic parmesan and breadcrumb crusted chicken to suit my tastes and thought I'd share the wonderful results. I'm sure you have all of these ingredients on hand in your pantry already. Seasoning in the breading is subject to taste and can be varied to suit your spice mood ;-)

1 tablespoon nonfat plain yogurt
1 teaspoon garlic powder
1 tablespoon Italian style breadcrumbs

1 tablespoon vegetable oil
1 small green bell pepper, chopped (1/2 cup)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 can (8 oz) tomato sauce
1/2 cup reduced-fat shredded mozzarella cheese (2 oz)

Steps:

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • In shallow dish, mix bread crumbs and Parmesan cheese. In another shallow dish, place egg product. Dip chicken into egg product, then coat with crumb mixture.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add chicken; cook about 5 minutes, turning once, until brown on both sides.

CHICKEN PESTO PARMESAN (NON-BREADED)

A non-breaded but super tasty spin on chicken parmesan. This is a recipe I just threw together one day when I was trying to think of something to do with chicken breasts and a little leftover pasta sauce. It's EASY and takes no time at all to prep if you have pre-made sauce and pesto. I make this with Kittencal's Perfect Pesto (#144195) and my own Magic Fresh Tomato Sauce (#388224). I never bother measuring myself, so you might have to adjust the amount of tomato sauce so it's close to but not covering the top of the chicken. Serve this with angel hair pasta if desired. Once again, I will beg you to use real shredded parmesan cheese and not the powdered stuff in a can. This makes a huge difference, and you don't even have to shred it yourself if you don't want to - just pick up a bag of pre-shredded. Any Italian blend cheese works great too.

4 boneless skinless chicken breasts (thawed if using frozen)
2 cups tomato sauce (you can use regular spaghetti or pizza sauce)
4 teaspoons prepared pesto sauce
1/2 cup parmesan cheese, shredded (or a mixture of parmesan and mozzarella)

Steps:

  • Spoon a little tomato sauce in a baking pan to cover the bottom and lay chicken breasts on top. Add more sauce around (but not on top of) breasts as desired, but only enough to come a little way up the sides of the chicken - make sure the top is uncovered!.
  • Divide and spread pesto on each chicken breast, adjusting the quantity depending on how much you like pesto - I use a lot!
  • Bake at 350 for 30-40 minutes until chicken is done (juices run clear). The exact amount of time will vary depending on the size/thickness of your chicken, so you have to watch them (I recommend a meat thermometer).
  • About 5-10 minutes before chicken is done, top each breast with shredded cheese.
  • Serve chicken breasts with or without pasta, spooning sauce from the pan around or on top of chicken.

2 1/2 tablespoons cornstarch
1 tablespoon milk
10 -15 garlic cloves, can change depending how much you like garlic
6 basil leaves
3/4 cup parmesan cheese
1 -2 tablespoon olive oil
5 -6 boneless chicken breasts
2 1/2 cups breadcrumbs, Italian Seasoned Bread Crumbs are preferred
4 minced garlic cloves
2 -3 cups parmesan cheese
1 lb penne pasta

Steps:

  • SAUCE:
  • ~~NOTE: Before you start the sauce, put your breasts on a griddle and cook them, be sure to keep an eye on them.~~.
  • Put the garlic, basil and olive oil in the food processor and whirl it up until it is mixed well throughout. A blender or just slicing by knife works fine if you do not own a food processor. Set aside.
  • In a small saucepan: combine cornstarch, milk, and cheese. Mixture should be kind of runny, if not add some milk until desired consistency.
  • Once you have reached a desired consistency, add the garlic mixture to the cause and bring to a low boil.
  • After the sauce has boiled put it through a small wire sift to get any clumps of starch out. Set aside
  • CHICKEN:
  • ~~NOTE: Before you start the chicken, start the water for your pasta~~.
  • Cut your cooked chicken breasts into 2-3 inch pieces and put into a frying pan on low heat.
  • Add the cheese, breading, and garlic and turn the heat to Medium-High so that the cheese can melt and the breading will stick.
  • ~~Check your water, if it is boiling, add the pasta.~~.
  • When all the cheese is melted and the chicken pieces are covered, remove them from the heat.
  • FINISHING:.
  • Drain the pasta and then re-sift the sauce onto the noodles.
  • Mix the sauce and noodles and then add the chicken.
  • Mix all together in a pot and serve warm.
