1 cup warm milk
2 eggs, room temperature
1/3 cup margarine or 1/3 cup butter, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup margarine or 1/3 cup butter, softened
3 ounces cream cheese
1/4 cup butter
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Place all ingredients in bread machine in order recommended by manufacturer. Select DOUGH cycle press Start.
  • In separate bowl combine cinnamon and sugar.
  • After dough has finished, turn it out onto lightly floured surface and roll into a 16x24 rectangle. Spread dough with butter and sprinkle evenly with cinnamon and sugar mixture. Roll up dough and cut into 12 rolls. Place rolls in lightly greased 9x13 pan. Cover and let rise until almost doubled (about 30 min). Preheat oven to 400 degrees F.
  • Bake rolls for 14-16 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners sugar, vanilla extract and salt. Spread frosting on warm rolls.

1 cup water
2 tablespoons butter or margarine, softened
1 egg
3 1/4 cups Gold Medal™ Better for Bread™ flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons bread machine or active dry yeast
Butter or margarine, melted, if desired

Steps:

  • Measure carefully, placing all ingredients except melted butter in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
  • Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Heat oven to 375°F. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm, or cool on wire rack.

3 ½ cups White Lily® All Purpose Wheat Flour, or more as needed

1 (.25 ounce) package active dry yeast
Crisco® Original No-Stick Cooking Spray

Steps:

  • Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
  • Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.

1 cup water (70° to 80°)
1/4 cup butter, cubed
1 large egg
1-1/4 teaspoons salt
3-1/4 cups bread flour
1/4 cup sugar
3 tablespoons nonfat dry milk powder
1 package (1/4 ounce) quick-rise yeast
EGG WASH:
1 large egg
4 teaspoons water

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting. 1 pkg active dry yeast (equals 2 1/4 tsp. of bottled "bread machine" yeast)
1/4 c warm water
1/3 c white, granulated sugar
1/4 c soft butter
1 c hot milk
1 egg - lightly beaten
4 c sifted "all purpose" flour or unsifted "bread machine" flour
3/4- 1 tsp salt (use lesser amount if butter is salted)
1/2 stick butter, melted (for brushing rolls)

Steps:

  • 1. Sprinkle yeast over warm water in small bowl. Stir until yeast dissolves.
  • 2. In separate bowl, add sugar and 1/4 cup softened butter to hot milk. Stir until sugar dissolves and butter is melted. Cool mixture to 105-115 degrees.
  • 3. Pour milk mixture into bread machine pan. Add foamy yeast mixture to milk mixture in bread pan. Mix in lightly beaten egg.
  • 4. Add 4 cups of flour on top of liquid mixture in bread pan. Add salt on top of flour. Place pan in bread machine. Set to "dough only" cycle.
  • 5. When "dough only" cycle is complete, pour dough ball out onto lightly floured cutting board. Dough may be slightly sticky, but use as little flour as possible for flouring hands and cutting board. Otherwise, rolls may not be as feathery light as should be!
  • 6. With large knife, cut dough ball into four (4) pieces. Cut each piece into 4 more pieces OR simply pinch off small chunks of dough and roll into round balls about 1 & 3/4 inches in diameter. As you roll into balls, pull sides down and under to shape roll. Place bottom side down in neat rows, not quite touching, in well-buttered 13 x 9 x 2 inch pan.
  • 7. Cover rolls and allow to rise in warm place until doubled in bulk; 30-45 minutes. When doubled in bulk, brush tops with melted butter and bake in 375 degree F oven for 16-20 minutes or until nicely browned.
  • 8. If desired, brush baked rolls with more melted butter when they come out of oven. The butter will sizzle down sides and bottom of rolls for a buttery and soft crust! For leftover rolls: 10 seconds in your microwave will create that "just out of the oven" warm roll magic!

DOUGH
1 c warm milk (110 degrees f/45 degrees c)
2 large eggs, room temperature
1/3 c butter, melted
4 1/2 c bread flour
1 tsp salt
1/2 c white sugar
2 1/2 tsp bread machine yeast
FILLING
1 c brown sugar (i used light)
2 1/2 Tbsp cinnamon (i used ceylon cinnamon)
1/3 c butter, softened
chopped nuts, walnuts or pecans
raisins or diced apples
FROSTING
1 (3-ounce) package cream cheese, softened
1/4 c butter, softened
1 1/2 c confectioner' sugar
1/8 tsp salt
1/2 tsp vanilla extract

Steps:

  • 1. DOUGH: Place ingredients in bread pan in order they are listed. Set on 2 lb loaf and select the dough cycle.
  • 2. Once the bread machine had done the work, turn dough out onto a floured surface. Cover with a clean dish towel and let rest for 10 minutes.
  • 3. Meanwhile, mix brown sugar and cinnamon together, cover; set aside.
  • 4. Once dough has rested for 10 minutes, roll out into a 16 x 21-inch rectangle. Spread dough evenly with 1/3 cup softened butter and sprinkle evenly with brown sugar/cinnamon mixture. If desired sprinkle with nuts and raisins (or diced apples).
  • 5. Roll dough up (starting with long edge) tightly; slice (using sharp knife) into 12 rolls. Place rolls into a lightly greased 9 x 13-inch baking pan. Cover and let rise until nearly doubled (about 30 minutes). NOTE: You can cover and put in refrigerator over night. They will rise in the refrigerator and this will take a lot of prep time off the next morning. IF baking the next day, take rolls out of the refrigerator 30 minutes prior to baking.
  • 6. Preheat oven to 400 degrees. Bake for 20 to 23 minutes. After 15 minutes when rolls had lightly browned, I tented with a piece of foil to keep from over browning. NOTE: the original recipe called for 15 minutes baking time, however, this was not long enough for the centers of rolls to cook completely in my oven. Watch and check after 15 minutes; add addtional time as needed for your oven.
  • 7. FROSTING: mix all ingredients until creamy. Can store in the refrigerator. Divide evenly; spread over warm rolls.

We think this is the best white bread recipe ever! It is a tender bread with a slightly sweet taste. My dinner rolls using this dough are so good, everyone always loves them. It doesn't take to long to make them when the bread maker does most of the work. The cook time is listed for the rolls only because everyone's bread makers cooks at different rates. Mine is older and a regular loaf will take 4 hours and 10 minutes. I have found that 15 balls of dough fit perfectly in the 9X13 pan with sides touching after raising the 2nd time but they can be made whatever size you want. I hope you enjoy this great bread as much as we do.

  • Cover and let the rolls rise in a warm, draft free place until risen to the desired size.
  • I let them about double in size.
  • Bake in a 350° oven about 12-15 minutes until golden brown.
  • After removing from the oven, brush the tops of the rolls with melted butter.
  • Take out of pan and let completely cool before storing.

1 cup milk

1/2 cup butter
1 1/2 cups brown sugar, packed
3 tablespoons water
1 teaspoon vanilla
3/4 cup pecan halves
1 tablespoon milk, just enough to brush over the dough

Steps:

  • Rolls:
  • Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
  • After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
  • Caramel Pecan Topping:.
  • Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
  • Increase heat to medium and boil, stirring constantly, for 3 minutes.
  • Stir in vanilla and remove from heat.
  • Pour into cake pan, then place pecan halves over the caramel.
  • Filling:
  • Mix together brown sugar, pecans and cinnamon.
  • Moisten the dough by brushing with milk.
  • Sprinkle brown sugar, pecan and cinnamon mixture over top.
  • Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
  • Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
  • Place into pan on top of caramel.
  • Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
  • Bake at 350° for 20 minutes, until golden. Do not overbake.
  • Invert onto a cookie sheet immediately, before caramel hardens.

Every time I make these rolls, I get raving compliments! This is an excellent potluck dish! It is very important to use McCormick brand coconut extract for the right flavor! For the fluffiest rolls, make sure all the ingredients and the kitchen are warm. This was intended to be a copycat of King's Hawaiian Rolls, but according to my husband, these taste way better when done right!

1 cup 100% pineapple juice
1 large egg
1/3 cup milk
4 tablespoons butter
1 -2 teaspoon mccormick coconut extract
1/2 teaspoon ground ginger
1 teaspoon salt
1/3 cup sugar
1/2 cup potato flakes
3 1/2 cups flour
2 1/4 teaspoons active dry yeast
butter, for brushing on roll tops

Steps:

  • Bring all cold ingredients to room temperature (pineapple juice, egg, milk, butter). This will take about 30 minutes, but you can speed it up a little bit with the microwave if you're not feeling patient.
  • Add the pineapple juice to your bread machine.
  • Beat the egg and add to your bread machine.
  • Add the milk to your bread machine.
  • Divide the butter into small pieces (no larger than 1 tablespoon) and add to the bread machine.
  • Add McCormick coconut extract, ground ginger, salt, sugar, potato flakes, and flour to the bread machine, in that order.
  • Make a small well in the flour, and pour the yeast in the well.
  • Run your bread machine on the dough cycle to knead the dough.

  • Grease a 13"x9" pan.
  • Divide the dough into 12-15 rolls and place next to each other in the pan (this will get them soft sides).
  • IMPORTANT! Sometimes the dough will be a little sticky to handle while you're doing this (and that's okay!). Do NOT even think about adding more flour! I mean it! I can't stress that enough! It will toughen your rolls. You can try greasing your hands with cooking spray if you want them to be easier to handle. If that still doesn't work, then just enjoy the stickiness knowing that your rolls will be nice and fluffy!
  • Cover with a towel and let rise until doubled in size - about 1 hour - in a warm place. Meanwhile, preheat your oven to 350 degrees.
  • Bake rolls in preheated oven for 25 minutes or until golden on top.
  • Immediately upon removing the rolls from the oven, brush the tops with butter.
  • Let cool in the pan until the rolls are cool enough to handle. Then remove from pan.
  • TIP: If you will not be eating the rolls right away, transfer the rolls to a large enough bowl to hold them. Place a lid on top and vent it, taking care that no rolls touch the lid. Closing the airflow off while they are warm will make the rolls soggy. Leaving them out in open air will make the rolls crusty. Keeping them in a vented bowl until they are completely cool is very important for obtaining soft rolls! Once the rolls are completely cool, seal the bowl.

I have since adapted it to make on my Kitchen Aid stand mixer, I will be happy to forward the KA measurement adaptations to any who wants them. Prep time is only for the last rising time, and servings is only estimated. This delicious sweet dough can be used for buns or sweet rolls.

3/4 cup warm cup water
1/4 cup warm milk
2 teaspoons dry skim milk powder
1 large egg (room temperature)
1/3 cup soft butter
1/3 cup sugar
1 teaspoon salt
3 3/4 cups flour
3 teaspoons dry yeast

Steps:

  • Place the water, milk, egg, butter, sugar, salt, flour and yeast into the bread machine pan in order stated (starting with water and ending with the yeast).
  • Select dough cycle, then press start.
  • Since all bread machines are different the water or flour amounts will need to be adjusted slightly to your bread machine to create a soft smooth semi-sticky dough, so make certain to check after about 5 minutes of kneading time and adjust water or flour amounts.
  • When the dough cycle has finished (including the rising time) remove and place dough on a lightly floured work surface.
  • Divide into sections; let the sections rest for 5 minutes (important, the dough MUST rest for 5 minutes) then shape as desired.
  • Place the shaped dough onto a greased baking sheet; cover with a light clean towel.
  • Let rise in a warm place for about 1-1/2 hours or until doubled in size (due to the addition of an egg rising time will be longer).
  • Bake in a 375°F oven for about 20-25 minutes or until until browned.

This easy recipe is from my Welbilt bread machine manual. The molasses and honey give the rolls a delicious, but not overly sweet taste. I usually cut this recipe in half but use the same amount of yeast. These rolls are always served for our Thanksgiving meal. Leftover (day old) rolls make perfect croutons or breadcrumbs.

2 tablespoons oil (read NOTE*)
2 tablespoons honey
2 tablespoons molasses
1 1/2 teaspoons salt
4 cups whole wheat flour
1 tablespoon active dry yeast

Steps:

  • Place the ingredients into the bread baking pan as recommended by your bread machine's manual. Use the DOUGH cycle setting.
  • To hand shape the roll, once the dough cycle is complete remove the dough to a lightly floured cutting board. Divide the dough into 12 equal pieces and shape into balls. Place the rolls into greased muffin tins, brush lightly with melted butter or butter substitute. Cover with a piece of wax paper and a clean cloth and let rise in a warm place for about 15-20 minutes.
  • Bake the rolls at 375°F for 15-20 minutes.
  • Refrigerate leftovers.
  • *NOTE: Here's a trick to measure the honey and molasses easily. By measuring the oil first, the oil coats the measuring utensil. Then when you measure out the honey and molasses the two ingredients slide off easily into the bread machine pan.

1 cup water
3 cups bread flour
1 1/2 teaspoons salt
1 1/2 tablespoons butter
3 tablespoons sugar
2 tablespoons nonfat dry milk powder
2 teaspoons yeast
1/4 cup butter, melted
1 garlic clove, crushed
2 tablespoons parmesan cheese, more, if needed

Steps:

  • Place first 7 ingredients in bread pan and select dough cycle.
  • When cycle is finished, turn dough onto a floured countertop or cutting board (use flour sparingly).
  • Gently roll and stretch dough into a 24 inch rope.
  • Grease two 8 inch pie pans or one 13x9 pan.
  • With a sharp knife, divide dough into 24 pieces.
  • Shape into balls; place into prepared pans.
  • In small bowl, combine butter and garlic; pour over rolls.
  • Sprinkle with parmesan cheese.
  • Cover and let rise for 30-45 minutes until doubled.
  • Bake at 375º for 10-15 minutes until golden brown. Remove from oven, cut apart, and serve warm.

MY GRANDMA'S POTATO ROLLS OR POTATO BREAD (FOR BREAD MACHINE)



My Grandma's Potato Rolls or Potato Bread (For Bread Machine) image

This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

1 tablespoon yeast
1 cup water, lukewarm
1 cup honey or 1 cup sugar
1 cup mashed potatoes, REAL (leftovers work great!)
1/2 cup vegetable oil
3 eggs
6 cups bread flour
1 teaspoon salt
1/2 cup water, lukewarm
1/4 cup vegetable oil
1/2 cup honey (do NOT add honey if planning to use sugar. Honey is listed here because it should be added with liqu)
1 egg, whole
1 egg, separated, use white only
1/2 cup mashed potatoes, REAL (leftovers work great!)
3 cups bread flour
1/2 cup sugar (do NOT add sugar if using honey)
1/2 teaspoon salt
2 1/4 teaspoons yeast (or one envelope)

Steps:

  • If making POTATO ROLLS: Preheat oven to 350°F.
  • In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
  • Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
  • Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
  • Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
  • Punch down and then roll dough out on floured surface to 1/2" thickness.
  • Use a canning jar ring to cut rolls - should make 30-36 rolls.
  • Place on a greased pan and allow to rise till almost doubled.
  • Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
  • If desired, slather outside tops with butter while still warm.
  • Enjoy!
  • NOTE: Prep time does not include rise times as they will vary.
  • If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
  • Set for 1 1/2 lb. bread loaf and start bread machine.
  • Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
  • Remove from pan and slather outside of the loaf with butter while still warm from machine.
  • Enjoy!

1 1/3 c milk (1 c. plus 2 t. milk)
4 Tbsp sweet butter
1 large egg, beaten slightly
1/3 c sugar
1 tsp salt
4 c unbleached all-purpose white flour, sifted
2 tsp active dry yeast
for egg wash
1 egg
2 Tbsp milk

Steps:

  • 1. Place ingredients for dough in machine in order given, covering liquid ingredients with flour and adding yeast last. Upon completion of dough cycle, remove dough, divide into 12-18 equal pieces (depending on how large you want your rolls). For the best way to shape your rolls watch the video.
  • 2. Place on lightly greased baking sheet, cover and let rise until doubled. I have baked these on two different kinds of baking pans. A 8 inch round and a 9x13 sheet. The 8 inch round makes them more of a "Pull A Part roll" and you have to bake a bit longer. The 9x13 bakes them all the way around and they come out very nice. I prefer the 9 x 13.
  • 3. Beat together egg and milk and brush rolls with wash just before baking.
  • 4. Bake in preheated, 350-degree oven for 15 - 20 minutes or until golden brown.
