This makes two loaves of long baguette type French bread that has wonderful flavor and is so easy to make!

Steps:
- Place ingredients in bread machine according to manufacturers directions.
- Start machine on dough setting.
- When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.
- Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.
- Place on greased baking sheet and cover with a towel.
- Let rise until doubled, about 1 hour.
- Preheat oven to 450°.
- Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.
- Remove baked loaves to wire racks to cool.

Easy to make enjoyed by all recipe for your bread machine. We make 1 loaf about 12in long often using it for homemade garlic bread as well as sandwich bread. Also we have made dinner rolls (approx 9) and it works just fine for these. This recipe came from our bread machine booklet and after trying several different recipes we always revert back to this no fail one. Please enjoy. - Add Water to your bread machine first, then add the sugar, salt, flour and yeast. Put it on your dough cycle. Check consistency of dough during cycle as you may need to add a little water or flour depending on your bread maker. When complete, roll dough out to a 12in long loaf of bread and allow to rest on a lightly floured baking sheet covered by a towel for 1 hour. With a knife cut three diagonal slashes across the top of the bread and then glaze. Bake in a preheated oven at 400F/205C for 15 to 20 minutes or until done. Allow to cool on wire tray, then enjoy.

FRENCH COUNTRYSIDE BREAD (BREAD MACHINE - ABM)
Our family LOVES French bread. If we have any leftovers, I make croûtons out of it or use it with French onion soup. This recipe came from my Oster bread machine cookbook. You can also use only the "dough" option on your bread machine and bake baguettes in the oven.

- Add all ingredients to your bread machine as your directions instruct.
- Mine go like this:.
- Add liquid ingredients to bread pan.
- Add all dry ingredients, except yeast, to bread pan.
- Make a well in the dry ingredients and carefully add the yeast into the well.
- Select the "French" setting on your machine.
- Select crust color, if applicable.
- Press start!
- OVEN METHOD:.
- To make loaves in the oven, use the "Dough" cycle on your machine.
- When cycle is complete, punch dough down and divide into 2 equal parts.
- On a lightly floured surface, roll each half into a rectangle, about 10 x 15.
- Starting at the long side, roll each rectangle, jelly roll style, into a tight, long loaf. Seal seams and ends by pinching dough together.
- Place loaves seam sides down on a large, ungreased baking sheet. You may sprinkle some cornmeal or flour on the pan under where you'll be placing the loaves.
- Cover loaves with a clean towel and let rise in a warm place for about 30 minutes, until almost double in size.
- Preheat oven to 375*. Place a pan of hot water on the bottom rack of your oven. This will create steam inside the oven while the bread is baking to give you an authentic crust.
- Using a very sharp knife, carefully make 3 or 4 diagonal slashes in each loaf, cutting about 1/2 inch down into dough.
- If you choose, at this time you can carefully brush on an egg white glaze (one egg white beaten with 1 tbl. of water) and sprinkle with sesame seeds, poppy seeds, dried onion or garlic, etc., if desired.
- Bake for 25-30 minutes (or until loaves sound hollow when tapped) on middle oven rack.
- Cool on wire racks and serve warm.

This recipe comes from Fleishmann's Yeast and is absolutely the best french bread recipe I have found. The texture is wonderful and it tastes and looks great. I always get rave reviews when I make this.

- Add 3/4 cup water, salt, flour, parmesan cheese, garlic powder and yeast to bread machine pan in order suggested by manufacturer.
- Select dough/manual cycle.
- When cycle is complete, remove dough from machine to a lightly floured surface.
- Roll dough into a 15x10 inch rectangle.
- Beginning at long end, roll up tightly as for jelly roll.
- Pinch seams and ends to seal.
- Taper ends by gently rolling back and forth.
- Place loaf, seam side down on a greased baking sheet sprinkled with cornmeal.
- Lightly brush loaf with oil.
- Cover and let rise in warm draft-free place until almost double in size, 10 to 15 minutes.
- With a sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across the top of loaf.
- Lightly beat egg white and 1 tablespoon water; brush some of egg white mixture over top of loaf.
- Bake at 375 for 20 minutes.
- Brush again with remaining egg white mixture and sprinkle with sesame seeds.
- Bake 5 to 10 minutes more or until done- bread should sound hollow when tapped.
- Remove the bread from the baking sheet and cool on a wire rack.

BREAD MACHINE SESAME FRENCH BREAD
I make this bread often, especially when I want a bread that has a bit more body than a white bread, but not as rustic as a traditional French bread. I think the sesame seeds give it a really nice flavor. It makes about a 1 1/4 lb. loaf. Unfortunately, I can't remember where on the web I found this.

- Place all the ingredients into the bread machine according to manufacturer's directions.
- Bake using french bread cycle if your machine has it.
- If not, use the dark crust white cycle.
- Start with 2 3/4 cups flour, you might need more depending on a lot of factors.
- My favorite way to get the texture I like is about 10 minutes into the knead cycle I will pinch a good size chunk of dough between my thumb and two or three fingers.
- If it feels just moist and some dough sticks to my fingers, it's just right.
- If no dough sticks, it's a bit dry and add a few teaspoons of water.
- If it feels too soft and very sticky, add more flour until you get the right consistency after about another 5 minutes of kneading.

- 1. Place 1 cup water, bread flour, sugar, salt and yeast into bread machine pan in the order recommended by manufacturer. Select Dough cycle, and press Start.
- 2. When the cycle has completed, place dough in a greased bowl, turning to coat all sides. Cover with a towel, and let rise in a warm place for about 30-40 minutes, or until doubled in bulk. Dough is ready if indentation remains when touched.
- 3. Punch down dough. On a lightly floured surface, roll into a 16x12 inch rectangle. Cut dough in half, creating two 8x12 inch rectangles. Roll up each half of dough tightly, like a jelly roll, beginning at 12 inch side, gently pounding out any air bubbles as you go. Roll gently back and forth to taper end. Place 3 inches apart on a greased cookie sheet. (I fit both on one sheet) Make deep diagonal slashes across loaves every 2 inches, or make one lengthwise slash on each loaf. Cover, and let rise again in a warm place for an additional 30 to 40 minutes, or until doubled in bulk.
- 4. Preheat oven to 375°F. Mix egg yolk with 1 tablespoon water; brush over tops of loaves.
- 5. Bake for 20 to 25 minutes in the preheated oven, or until golden brown.

- Success Hints: To develop the crisp crust that French Bread is known for, use your French cycle.

- 1. Measure and add liquid ingredients to the bread pan.
- 2. Measure and add dry ingredients (except yeast) to the bread pan.
- 3. Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure teh yeast and carefully pour it into the well.
- 4. Snap the baking pan into the breadmaker and close the lid.
- 5. Press "select" button to choose the French setting.
- 6. Choose your crust color and press "start".

- 1. Place all bread dough ingredients in bread machine and select dough cycle.
- 2. When cycle is complete, remove dough and roll into a 12" x 15" rectangle on a lightly floured board. Roll up from long side and pinch seam to seal. Fold ends under. Place seam side down on a greased baking sheet that has been dusted with the cornmeal. Cover loosely with plastic wrap and let rise 45 minutes.
- 3. Make 4 diagonal cuts with a sharp knife across top of bread. Bake 375 degrees for 25 minutes.
- 4. Beat egg white, water garlic powder and italian seasonings, remove bread from oven and brush with egg wash. Return to oven and bake an additional 5 minutes.
EVERYDAY BREAD (FRENCH BREAD) ABM BREAD MACHINE
This is our everyday bread that we use for sandwiches and toast. It's dairy and egg free which makes it a favorite of mine - this also makes it safe to use the bread machine timer. This recipe makes a 2 pound loaf, but you can easily halve it for smaller machines.

- 1. Add ingredients to bread machine according your machines instructions.
- 2. Set machine to "dough stage".
- 3. When done, cut into 2 sections. Roll each out into an 8 x 11 sheet and roll up.
- 4. Sprinkle bottom of loaf pans with cornmeal. Place bread on top. Make 3 slits in bread dough
- 5. Heat a large container of water in microwave. Set pans in microwave and cover with a towel. Set rise again for 1 hour. Heat from the hot water will help bread rise.
- 6. Preheat oven to 430 degrees. Place bread in oven and bake for approximately 17 minutes. Bread is done when golden brown and has a hollow sound when tapped
- 7. Remove from pans and spray with butter and then sprinkle with garlic salt. Let cool, wrap and place in freezer bags. Freeze until ready to use or use immediately.
- 8. NOTE: These can be made into rolls (approximately 22) rolled in fat free Italian dressing then rolled into a mixture of 1 envelope onion soup and 1 cup parmesan cheese that has been mixed together. Let rise and bake as above.

- 1. Put ingredients in bread machine,wet ingredients first, set on dough setting
- 2. Punch down the dough and divide it in half. Shape into 2 baguettes by making a flat rectangle out of your dough, then folding the top and bottom towards the middle, like an envelope, and sealing the seam with your fingers. Keep repeating the folding and sealing, stretching the rectangle lengthwise as you go, until it's about 12 to 14 inches long and 2 inches wide. Fold and seal either end to round. Flip seam-side down and place on a sheet pan or baguette pan that has been dusted with cornmeal. Score the tops of the loaves, making deep diagonal slits 1/2-inch deep, cover with a dishcloth and let rise in a warm environment until they have doubled in size, 25 minutes.
- 3. Preheat the oven to 450 degrees F and position your oven racks with one on the bottom and the other in the middle. Place an oven-safe (non-glass) bowl or pan on the bottom rack. Baste top of loaves with a beaten egg white mixed with 1 tablespoon cold water.
- 4. When your bread has doubled for the second time, remove the towel and quickly and simultaneously, slide the sheet tray with the baguettes onto the middle rack while carefully throwing the ice cubes into the bowl on the bottom rack. The ice will create a burst of steam that will give you a nice crispy crust. Quickly shut the oven door so no steam escapes. Bake the baguettes until golden brown, 15 minutes.
