1 cup milk
3 tablespoons water
1 egg, beaten
1/4 cup butter
3 1/3 cups all-purpose white flour
3 tablespoons granulated sugar
3/4 teaspoon salt
2 teaspoons yeast
3/4 cup packed brown sugar
3 3/4 teaspoons cinnamon
2 tablespoons softened butter or 2 tablespoons margarine
3/4 cup powdered sugar
1/4 teaspoon vanilla
2 -3 teaspoons milk

Steps:

  • Put yeast in bread machine first on bottom, then flour, sugar and salt.
  • Then melt butter in microwave. Add beaten egg, milk and water.
  • Pour onto dry ingredients in bread machine on the dough setting.
  • When dough is done, put it onto a lightly floured surface.
  • Knead in enough flour to make it easy to handle.
  • If it is too elastic, cover and leave 10 minutes.
  • Use floured rolling pin to roll out dough on floured surface.
  • Roll out into rectangular shape to approx 1/4-inch thick.
  • Use filling and spread over entire surface of dough with spoon.
  • Roll up dough.
  • Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
  • Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
  • Bake in a 350° oven for about 25 minutes, light brown on top.
  • When done, make glaze and swirl over buns.

1 1/4 cups warm milk (300ml)
1 cup cooked mashed butternut squash (alternatively Sweet Potato or Pumpkin)
2 eggs, beaten
4 tablespoons butter
1/4 cup sugar
3/4 teaspoon salt
4 cups bread flour (580g)
2 teaspoons active dry yeast
1 teaspoon ground cinnamon
1/2 cup butter, to spread on rolled out dough (120ml)
1/2 cup finely chopped pecan nuts
1/2 cup tightly packed brown sugar
4 teaspoons ground cinnamon
2 cups icing sugar
1/4 cup finely chopped pecan nuts
1 teaspoon ground cinnamon
hot water, to make a liquid icing

Steps:

  • Method for Buns:.
  • 1. Place flour, sugar, cinnamon, yeast, salt and butter in the pan of your bread machine.
  • 2. Mix milk, butternut and eggs together and pour this on top of dry ingredients and butter already in your bread machine pan.
  • 3. Select the dough cycle of your machine according to your manufacturer's directions (about 2hours), (alternatively you can mix by hand, kneading and allowing time to rise).
  • 4. When cycle is complete, remove dough to a lightly floured board and punch down.
  • 5. Line a baking tray about 9 x 12 x 2 with butter.
  • 6. Mix together the dry ingredients for the filling (pecan nuts, brown sugar and cinnamon) and put to one side.
  • 7. Roll the dough out to form a rectangle about 18 x 12 inch's.
  • 8. Spread the 120ml of butter from the filling evenly on the one side of the rolled out dough.
  • 9. Evenly spread the filling ingredients (pecan nuts, brown sugar and cinnamon) over the buttered dough rectangle and roll up from the shortest side to make a cylinder of rolled up dough.
  • 10. Divide the rolled up dough by cutting it into 12 equal pieces and place these in the baking sheet 3 rows of 4. .
  • 11. Now cover and let rise in a warm place until doubled (about 40mins to 1 hour).
  • 12. Bake at 160°C or 350°F for 18 to 20 minutes or until lightly browned.
  • 13. Remove from the oven and let cool for 5 mins before topping with the icing.
  • Method for Icing:.
  • 1. In a bowl mix together the icing sugar, finely chopped pecan nuts and ground cinnamon and pour in a few teaspoons of warm boiled water to get a stiff liquid consistency.
  • 2. Pour a tablespoon of the icing liquid on top of each bun and allow it to cool and the icing to set.
  • 3.Enjoy with a cuppa.

3 tablespoons skim milk powder
1 1/4 teaspoons salt
1 egg, beaten

3/4 cup pecan halves
3 tablespoons melted butter

  • Measure first 8 ingredients into bread machine (refer to your bread machine instructions for the proper order- my machine would require the order listed here).
  • Select the dough cycle.
  • Meanwhile, prepare syrup.

  • Immediately, pour into a 9 X 13 pan; tilt pan to cover bottom evenly.
  • Arrange pecans, flat side up on syrup.

These are so easy to do and you can put the stuff in the machine while you shower and get the kids off to school. Because there is no second rising time after the dough is rolled out they are so quick.

0.5 (102 g) box instant vanilla pudding
4 cups flour
1 tablespoon yeast

1 cup brown sugar
2 teaspoons cinnamon
4 ounces cream cheese
1/4 cup butter
1/2 teaspoon vanilla

1 1/2 cups icing sugar

Steps:

  • Put in breadmaker in order given.
  • Select dough cycle.
  • When cycle is finished put dough on a lightly floured surface.
  • Roll into a rectangle 1/4 inch thick.
  • Spread on 1/2 c soft butter.
  • Sprinkle on a mix of 1 c brown sugar and 2 t cinnamon.
  • Roll tight and cut into 12.
  • Place in a greased 9x13 pan cut side down.
  • Bake 350' 15-20 minutes.
  • Remove from oven, let stand 10 minutes and frost with cream cheese icing.
  • I do this right in the pan so that it is easy to take it with me.

This is a take on recipe #43744: Bread Machine Cinnamon-Pecan Buns, which I changed a little. The dough is so wonderful and rises incredibly, and the sauce - oh, the sauce! They're just packed with walnuts and raisins, too - a real treat! I've also added an optional drizzle, for those that must have icing on their cinnamon buns!

1 1/4 cups water
1/4 cup sugar
3 tablespoons skim milk powder
1 1/4 teaspoons salt
1 egg, beaten

2/3 cup brown sugar, packed
3 tablespoons water
3/4 cup walnut halves
3/4 cup golden raisin
3 tablespoons melted butter
2/3 cup brown sugar, packed

2 cups icing sugar
1/2 teaspoon cinnamon
2 tablespoons maple syrup

Steps:

  • Measure first 8 ingredients into bread machine (refer to your bread machine instructions for the proper order). Select the dough cycle.
  • Meanwhile, prepare syrup: Boil together butter, water and brown sugar for 1 minute.
  • Immediately, pour syrup into a 9 X 13 pan; tilt pan to cover bottom evenly.
  • Arrange walnuts, flat side up on syrup; scatter raisins on top.
  • When bread machine cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle.
  • Roll dough into a 12 X 18 inch rectangle. Brush with melted butter.
  • Sprinkle evenly with the mixture of brown sugar and ground cinnamon. Sprinkle chopped walnuts and golden raisins on top. Starting at large side, roll up jelly-roll fashion. Pinch edge to seal. Cut roll into 12 equal pieces. To avoid too much filling from escaping, I first cut the roll in half, then each half in half, and then each quarter in thirds. Place rolls flat over syrup.
  • Cover and let rise 30 minutes or until double in volume.
  • Remove cover and bake at 375 for 30-35 minutes, until golden brown.
  • Loosen edges and carefully invert onto serving tray.
  • To make icing: Mix icing sugar and cinnamon together; add maple syrup and 1 tbsp milk, mix. If needed, add more milk. Icing should be stiff - but not too stiff - and not too runny either. I like to leave the icing on the side to allow folks to decide to use it or not.
  • Enjoy!

2 tablespoons butter
3 tablespoons sugar
1 1/4 teaspoons salt
3 1/2 cups flour (Canadian or 3 2/3 cup flour American)
1 teaspoon yeast
3/8 cup Splenda brown sugar blend
1/2 cup Splenda Sugar Blend for Baking
4 teaspoons cinnamon
2 tablespoons margarine
3/4 cup icing sugar
1/4 teaspoon vanilla
2 tablespoons milk

Steps:

  • For dough, add all ingredients in a bread machine pan in the order listed.
  • Select the Dough/Pasta setting. Press Start.
  • When beeps to "Add ingredients", don't do anything. Let it go all the way.
  • When dough is finish, remove from machine.
  • Knead dough for about 10 minutes using flour if sticky.
  • Roll out into a rectangle (about 14 by 16 inches). Cut dough into 4 rectangles.
  • For each smaller rectangle, spoon 1/4 of the mixture on the dough.
  • Roll into a long pinwheel. Pinch the end the dough to keep in place.
  • Cut into 1/2 inch pieces; makes about 18.
  • Do the same thing for the other 3 pieces of dough and the rest of the filling.
  • Place onto a greased baking pan. Cover.
  • Let rise for 30-40 minutes.
  • Preheat oven to 350°F.
  • Bake for 12-15 minutes, or until lightly brown on top.
  • Remove from oven and let cool completely.
  • Mix together sugar, vanilla, and milk.
  • Drip icing on top of buns.
  • Enjoy!

1/2 cup milk
8 tablespoons unsalted butter, plus 1 tbsp for greasing the pan
1/2 cup water
1/4 cup sugar
2 egg yolks
1 egg
1 1/2 teaspoons salt
4 -4 1/2 cups unbleached all-purpose flour, plus more for work surface
2 1/4 teaspoons instant yeast
8 ounces cream cheese
2 tablespoons corn syrup
2 tablespoons heavy cream
1 cup confectioners' sugar
1 teaspoon vanilla extract
1 pinch salt
3/4 cup light brown sugar
3 tablespoons ground cinnamon
1/8 teaspoon salt

Steps:

  • 1. Melt milk and butter in the microwave for 1 minute and put this in the bread machine.
  • 2. Add in water and the rest of the ingredients, the yeast should be on the top.
  • 3. Select the dough function and then start.
  • 4. When the dough is ready, remove from the bread machine bucket.
  • 5. Punch down the dough and form into a ball, rest the dough for another 15 minutes.
  • 6. While the dough is resting, preparing the filling.
  • 7. Roll dough out into a rectangle 16 X12 inches and spread the filling evenly over the dough , except for the top 1/2 inch of the dough.
  • 8. Roll the dough, beginning with the long edge closest to you and using both hands to pinch the dough with your fingertips.
  • 9. Moisten the top border with water and seal the roll.
  • 10. Lightly dust the roll with flour and press on the ends to make a uniform 16 inch tube.
  • 11. Grease a 9 X13 inch baking dish.
  • 12. Cut the roll into 12 pieces using dental floss. Place them cut-side up in the greased baking dish.
  • 13. Cover and place in a draft-free warm spot until doubled , 1 1/2 to 2 hours.
  • 14. When the rolls have risen, adjust an oven rack to the middle position and heat the oven.
  • 15. Bake at 350 for about 25 - 30 minutes or until golden brown.
  • 16. Allow to cool for 10 minutes. Ice with cream cheese frosting. Delish.

Steps:

  • Add ingredients according to manufacturer's suggested order and set on dough cycle.
  • Turn onto lightly floured board.
  • Roll out to a rectangle about 10x18 inches.
  • Brush with melted butter; sprinkle with cinnamon-sugar mixture and pecans, if used.
  • Starting at long end, carefully roll up; pinch seams together.
  • Measure and cut 1-inch slices.
