1 cup milk
2 eggs
¼ cup butter
4 cups bread flour
¼ cup white sugar
1 teaspoon salt
1 ½ teaspoons active dry yeast
½ cup chopped walnuts
½ cup packed brown sugar

2 tablespoons softened butter, divided
2 teaspoons sifted confectioners' sugar, divided

Steps:

  • Place milk, eggs, 1/4 cup butter, bread flour, sugar, salt, and yeast into a bread machine in the order recommended by the manufacturer, select the dough setting, and start the machine. When dough cycle is complete, transfer dough to a floured work surface and punch down. Let dough rest for 10 minutes.
  • Mix walnuts, brown sugar, and cinnamon in a bowl.
  • Divide dough in half and roll each half into a rectangle about 9x14 inches. Spread 1 tablespoon softened butter over the top of each dough rectangle and evenly sprinkle dough with half the walnut mixture. Roll dough rectangles, starting from the short ends, and pinch seams closed.
  • Grease 2 9x5-inch loaf pans. Fit the rolled loaves into the loaf pans with seam sides down. Cover and let rise until nearly doubled in size, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake loaves in the preheated oven until lightly golden brown and bread sounds hollow when tapped, about 30 minutes. If loaves brown too quickly, lightly cover with aluminum foil for the last 10 minutes of baking. Let bread cool for 10 minutes before removing to finish cooling on wire racks. Sprinkle tops of each loaf with 1 teaspoon confectioners' sugar.

Now she asks for it constantly and since it is so fun to make, I oblige her, plus I get to keep the other 2 loaves!

1 1/2 cups milk
1 cup warm water (must be between 110-115 degrees)
2 (1/4 ounce) packages active dry yeast
3 eggs
1/2 cup white sugar
1 teaspoon salt
1/2 cup unsalted butter, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
1 cup white sugar
3 tablespoons ground cinnamon
2 tablespoons butter, melted (approx.)

Steps:

  • Warm the milk in a small sauce pan on the stove until it just starts to bubble, stirring occasionally.
  • Remove from heat.
  • Let cool until lukewarm, about 120-125 degrees.
  • Dissolve yeast in warm water and set aside until yeast is frothy, about 10 minutes or so (make sure your water is at the correct temperature or the yeast won't activate.) Then mix in eggs, sugar, butter salt and raisins (stir in the cooled milk slowly so you don't cook the eggs.) Add the flour gradually to make a stiff dough.
  • Knead the dough on a lightly floured surface for a few minutes until smooth.
  • Place in a large, buttered, mixing bowl and turn to grease the surface of the dough.
  • Cover with a warm, damp cloth and let rise (I like to let my bread rise in the oven with the light on. It has just the right amount of heat and keeps the bread out of drafts.) Allow to rise until doubled, usually about 1 1/2 hours.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick.
  • Moisten the dough with 2 tablespoons milk and rub all over the dough with your hands.
  • Mix together 1 cup of sugar and 3 tablespoons cinnamon and sprinkle mixture evenly on top of the moistened dough.
  • Roll up tightly (the long way).
  • The roll should be about 3 inches in diameter.
  • Cut into thirds, and tuck under ends and pinch bottom together.
  • Place loaves into well greased (you can use Crisco or butter for this) 9 x 5 inch pans and lightly grease tops of loaves.
  • Let rise in warm place, uncovered, again for about an hour.
  • Bake at 350 degrees for 45 minutes or until loaves are lightly browned and sound hollow when tapped.
  • Remove from oven and let cool on rack.
  • Take melted butter and spread over tops of loaves.
  • After about 20 minutes, lay loaves on their sides and remove from pans.
  • Allow to cool before slicing.

This bread is just so good, more like a coffee cake than a bread. I didn't have bread flour, so used regular unbleached, all-purpose flour and took it out about 3 minutes before the beeper because I like a less-crispy crust. Well, what a treat. Major keeper. Not only would I make it again, I think it would make some of the most awesome cinnamon roll dough, and I'm definitely going to try that very soon. I would also suggest using this bread to make Cinnamon Toast Deluxe, recipe #93128. A definite cinnamon extravaganza, and a wonderful treat, especially for those of you who are looking for a stronger cinnamon flavor.

DOUGH
1 c warm milk (110 degrees f/45 degrees c)
2 large eggs, room temperature
1/3 c butter, melted
4 1/2 c bread flour
1 tsp salt
1/2 c white sugar
2 1/2 tsp bread machine yeast
FILLING
1 c brown sugar (i used light)
2 1/2 Tbsp cinnamon (i used ceylon cinnamon)
1/3 c butter, softened
chopped nuts, walnuts or pecans
raisins or diced apples
FROSTING
1 (3-ounce) package cream cheese, softened
1/4 c butter, softened
1 1/2 c confectioner' sugar
1/8 tsp salt
1/2 tsp vanilla extract

Steps:

  • 1. DOUGH: Place ingredients in bread pan in order they are listed. Set on 2 lb loaf and select the dough cycle.
  • 2. Once the bread machine had done the work, turn dough out onto a floured surface. Cover with a clean dish towel and let rest for 10 minutes.
  • 3. Meanwhile, mix brown sugar and cinnamon together, cover; set aside.
  • 4. Once dough has rested for 10 minutes, roll out into a 16 x 21-inch rectangle. Spread dough evenly with 1/3 cup softened butter and sprinkle evenly with brown sugar/cinnamon mixture. If desired sprinkle with nuts and raisins (or diced apples).
  • 5. Roll dough up (starting with long edge) tightly; slice (using sharp knife) into 12 rolls. Place rolls into a lightly greased 9 x 13-inch baking pan. Cover and let rise until nearly doubled (about 30 minutes). NOTE: You can cover and put in refrigerator over night. They will rise in the refrigerator and this will take a lot of prep time off the next morning. IF baking the next day, take rolls out of the refrigerator 30 minutes prior to baking.
  • 6. Preheat oven to 400 degrees. Bake for 20 to 23 minutes. After 15 minutes when rolls had lightly browned, I tented with a piece of foil to keep from over browning. NOTE: the original recipe called for 15 minutes baking time, however, this was not long enough for the centers of rolls to cook completely in my oven. Watch and check after 15 minutes; add addtional time as needed for your oven.
  • 7. FROSTING: mix all ingredients until creamy. Can store in the refrigerator. Divide evenly; spread over warm rolls.

CINNAMON RAISIN AND APPLE BREAD (ABM / MACHINE)

This is the nicest spicy fruit loaf I ever made. It is wonderfully moist and really scrumptious! (I make a fruit loaf of one sort or another every other day, and change things a bit from time to time. This is my absolute favourite combination). A note regarding my ingredients - my dried raisins and peel are really quite dry so I increase the water to about 244g (about an extra 3/4 tsp). This means I deliberately make it with the dough looking like it's way too wet during kneading, but the very dry fruit soaks up the excess water. My loaves work out fine despite looking over-moist to start with. I've found through experience that for any bread that will have dried ingredients added late in the kneading process it can be necessary to adjust the water quantity subtly according to how dried the fruit/grains etc are. I use part margarine part butter to reduce fat content slightly. No reason really not to use all butter instead. Butter is nicer :) Makes a loaf of approx 1 1/2 lbs.

350 g white bread flour
1/4 teaspoon vitamin C powder (a flour improver, required if using the wheat bran)
5 g salt (1 TSP, I use 'Lo-Salt')
8 g firm margarine
5 g butter
13 g nonfat dry milk powder (1 1/2 TBLSP approx.)
4 g wheat bran (2 TSP, very heaped)
18 g demerara sugar (1 TBLSP, Brown sugar, basically)
3 1/4 g bread machine yeast
100 g dried seedless raisins
16 g dried mixed citrus peels (2 TSP Heaped)
4 g ground cinnamon (1 TSP heaped)
1 dash nutmeg, to taste (freshly grated)
1 pinch ground cardamom, next to nothing
40 g apples (peeled & chopped into 1/3 inch chunks)
4 g ground cinnamon, mixed with the apple (1 TSP heaped)

Steps:

  • Remove pan from bread machine and place on electronic scales and zero them.
  • Pour in the water (240ml water weighs 240 grams) and weigh in the rest of the dough ingredients in order.
  • Replace the pan in the bread machine and start machine on a raisin or equivalent 'speciality' setting. I prefer 'normal' crust for this.
  • In small bowl weigh the raisins and dried mixed citrus peel. Add the spices and mix together.
  • Into a second small bowl, peel about 1/3 of an average size eating apple (I usually have Braeburn apples handy but pretty much any apple is fine except the tasteless ones like Golden Delicious and Gala). Chop into small chunks somewhere between roughly 1/4 and 1/3 inch in size. Once in the bowl, sprinkle with another teaspoon of ground cinnamon and stir with spoon to cover the bits well (to take the moistness off the sides of apple bits so they mix in better).
  • Add dried fruit & spice mix at 4 minutes before end of final kneading or at the beep if you trust your machine not to mash the fruit like mine always does. (My LG machine beeps nine minutes before end of final kneading which is far too soon - it can reduce dried fruit to the size of grains of sugar during that time!).
  • If you trust your machine not to mash the apple then you could maybe add it a minute or so before kneading finishes. I don't trust mine in the slightest so here's what I do --
  • Wash hands in very cold water and dry well just before the final kneading completes then --.
  • -- when kneading has completed, quickly add the chopped apple and quickly mix it well by hand. (Shouldn't need to remove pan from bread machine to do this (unless it's in an awkward place! :).
  • Slightly more stuff to do for this loaf than usual, but it's absolutely worth it!

1 cup milk

1/2 cup butter
1 1/2 cups brown sugar, packed
3 tablespoons water
1 teaspoon vanilla
3/4 cup pecan halves
1 tablespoon milk, just enough to brush over the dough
1 cup brown sugar
2 teaspoons cinnamon
3/4 cup pecans, chopped

Steps:

  • Rolls:
  • Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
  • After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
  • Caramel Pecan Topping:.
  • Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
  • Increase heat to medium and boil, stirring constantly, for 3 minutes.
  • Stir in vanilla and remove from heat.
  • Pour into cake pan, then place pecan halves over the caramel.
  • Filling:
  • Mix together brown sugar, pecans and cinnamon.
  • Moisten the dough by brushing with milk.
  • Sprinkle brown sugar, pecan and cinnamon mixture over top.
  • Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
  • Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
  • Place into pan on top of caramel.
  • Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
  • Bake at 350° for 20 minutes, until golden. Do not overbake.
  • Invert onto a cookie sheet immediately, before caramel hardens.

I love my Bread Machine because it is a no fuss, no mess way of making bread. This is truly a wonderful loaf of bread! wonderful warm from the oven or toasted.

1 large egg, room temperature
1/4 c milk
3/4 c water
1/4 c softened butter
1/3 c sugar
1 tsp salt
3 1/2 c bread flour
2 tsp active dry yeast
1/2 c raisins
1/3 c butter melted and cooled
1/3 c sugar
3 tsp cinnamon
1 egg white
1 1/2 tsp sugar

Steps:

  • 1. Put milk and egg into a measuring cup Add enough tepid water to make 1 cup pour into bread machine pan Add the softened butter,1/3 cup of sugar,salt,bread flour and yeast Set bread machine to dough cycle add raisins at beep remove the dough at the end of the dough cycle roll dough to 10x12 r3ctangle brush egg white on surface of dough brush with melted butter combine cinnamon and sugar sprinkle over dough; leaving 1 inch on each edge roll from short side pinch where it meets and roll ends under Place in loaf greased loaf pan cover with cloth and let rise for about an hour preheat oven to 350 degrees once the dough has risen,brush top with egg white and sprinkle with 1 1/2 teaspoon sugar Bake at 350 for 35-40 minutes.

APPLE CINNAMON RAISIN PITAS (BREAD MACHINE)

I used to buy these breakfast "pitas" from the grocery store, but figured out how to make them at home - for a heck of alot less. They're more like small, flatbreads, and I slice them in half, toast them, and spread them with peanut butter, honey, or jam. Yum! They're not very sweet, as there isn't much sugar in them.

2 cups whole wheat flour
1 1/2 cups bread flour or 1 1/2 cups all-purpose flour
1 tablespoon dry yeast
1 1/4 cups warm water (120-130F degrees)
1/2 teaspoon salt
1 tablespoon sugar or 1 tablespoon honey
1/2 teaspoon cinnamon
1 cup apple, chopped
1 cup raisins

Steps:

  • 1. Place ingredients except apples and raisins in bread machine in order that your machine specifies.
  • 2. Set to "dough" setting and allow to complete cycle, adding the apples and raisins when your machine alerts you to add nuts/fruit. I actually have found that kneading these in by hand is actually easier, as they're a bit finicky to get worked through the dough.
  • 3. Separate into 10 balls. Press each ball into a 4" round with your hands - you'll likely need to stuff some raisins and apples back in - it's worth it. Place on nonstick cookie sheets and allow to rise for 30 minutes.
  • 4. Preheat oven to 500. Flip rounds, then place in oven for 5 minutes, flip again; turn oven down to 350 and bake for 15-20 minutes longer, until cooked through.
  • 5. Remove from pan onto clean towel and cover while cooling.

3 large eggs
3 tablespoons melted margarine or 3 tablespoons butter
2/3 cup mashed ripe bananas or 2/3 cup applesauce
1 teaspoon salt
3 tablespoons brown sugar
2 tablespoons skim milk powder
2 cups rice flour
2/3 cup potato starch
1/3 cup tapioca starch
1 tablespoon xanthan gum
1 teaspoon plain gelatin
1 tablespoon ground cinnamon
2 teaspoons bread machine yeast

Steps:

  • Add first 4 ingredients to bread machine pan and beat with plastic whisk or fork to mix well. Add rest of ingredients in the order given above. Select rapid or basic white cycle (approximately 2 to 3 hours.).
  • After 5 minutes of mixing, scrape down sides of pan with a rubber spatula. When bread is baked, remove from pan and cool on rack.
  • TIP: Replace 1/4 cup raisins with 1/4 cup chopped nuts.
  • If you use instant yeast, add 1 teaspoons white vinegar or cider vinegar.
  • Try this recipe on a super express cycle (1 to 1 1/4 hours).
  • Do not substitute potato flour for potato starch.

1 egg
3 tablespoons butter, cut up
3 tablespoons sugar
3/4 teaspoon salt
3 cups flour
1 1/4 teaspoons yeast
1/3 cup packed brown sugar
1/3 chopped walnuts or 1/3 pecans, toasted
1 1/2 teaspoons cinnamon
1 tablespoon butter
sifted powdered sugar

Steps:

  • Add the bread ingredients to your machine in the order suggested by the manufacturer of your machine.
  • Select dough cycle.
  • When cycle is complete, remove dough, punch down, cover and let rest for 10 minutes.
  • Meanwhile, make filling by mixing brown sugar, nuts and cinnamon together in a bowl and set aside.
  • In a lightly floured surface, roll dough into a 14x9 inch rectangle.

1/2 cup raisins, presoaked
1 tablespoon cinnamon
1 tablespoon sugar
1 1/4 cups lukewarm water
3 cups white bread flour
3 1/3 tablespoons brown sugar
1 teaspoon salt
2 1/2 teaspoons fast rise yeast or 3 1/4 teaspoons active dry yeast
1 egg
1 tablespoon water

Steps:

  • Soak the raisins in warm water for 10 minutes.
  • Drain and pat dry.
  • Toss with cinnamon and sugar, then place in machine with other ingredients.
  • Remove dough from the machine after the first knead- approximately 20- 30 minutes.
  • Place dough on floured surface.
  • Divide into 8 parts.
  • Form balls, gently press thumb through center of ball and slowly stretch into bagel shape.
  • While bagels rise, bring 3 quarts water and 1 TBS sugar to a rapid boil in a large sauce pan.
  • Drop test dough (see first success hint).
  • Using slotted spoon, drop 2-3 bagels into rapidly boiling water.
  • Boil on each side for 1 1/2 minutes.
  • Remove and cool on rack 1 minute, brush with egg wash.
  • Bake at 400°F on a baking sheet sprinkled with cornmeal, until golden brown- approximately 15 minutes.
  • Bagel Success Hints: When forming bagels, set aside two 1/4" balls of dough.
  • When bagels have doubled in size, drop the test dough into boiling water.
  • Dough should pop to the top right away.
  • When this happens, it is time to boil the bagels.
  • A quick spray of non-stick vegetable coating on the top of the bagel may be substituted for the egg wash.
  • To make bagel chips, slice leftover bagels horizontally into thin slices.
  • Brush with butter or margarine on one side.
  • Lay (butter side up) on ungreased cookie sheet and bake at 325°F for 12-15 minutes or until golden brown and crisp.

1 Tbsp cinnamon, ground
3 c bread flour
1 c rasins
1 c milk, 90 * (milk of your choice)
3 Tbsp butter
1 Tbsp brown sugar

  • 1. Follow instructions for your bread machine, mine says to put all liquids in first then add dry ingredient's.
  • 2. Heat milk to 90* and add your beaten egg. place bread flour, on top of milk and egg, make a dwell (small hole) in your flour and place yeast in the dwell , place butter in one corner and sugar in an other corner, salt in the third corner
  • 3. set bread machine to your desired settings, I like Medium crust, quick bread. Most machine will beep when its time to put in ingredients, this is where you will add the cinnamon and raisins. let the machine do its job and you will have a perfect loaf of bread :)

ANNA'S CINNAMON CARAMEL ROLLS (BREAD MACHINE)

Everything Anna made was wonderful, and these cinnamon rolls are no exception. Although this is an old recipe, my Mom modified the directions to allow mixing and rising of the dough in a bread machine. The ingredients and quantities are exactly the same if you choose to hand mix and let the dough rise without the machine, but I haven't included the directions for that method. If you want to do it that way, then simply follow the basic mix and rise directions of any other roll recipe. I'll add those steps myself when I finally make them that way.

2 1/4 teaspoons yeast (or 1 packet)
1/4 cup warm water
2 eggs
1 cup warm water
1 teaspoon vanilla
4 cups white bread flour
1 1/4 teaspoons salt
1/3 cup shortening, Melted
1/3 cup sugar
1 1/2 tablespoons cinnamon (Approx)
1/3 cup sugar (Approx)
2 tablespoons butter, Softened (Approx)

1/2 cup brown sugar

Steps:

  • DOUGH.
  • Put the yeast in a measuring cup and add warm (yeast appropriate) water to the 1/4 cup line. Add to the bread machine.
  • Slightly stir eggs so that yolks and whites are mixed. Add to the bread machine.
  • Add the remaining dough ingredients to the bread machine in the order listed above.
  • If you bread machine has a "dough" setting, use that. If not, run your machine through the first cycle. My machine beeps at the end of the first cycle, but I also have a dough option.
  • FILLING.
  • When the dough is ready, remove it from the machine and put it on a floured board. Using your hands, spread the dough evenly to approximately to a 15" x 8" rectangle.
  • Spread the butter over the dough and sprinkle the sugar and cinnamon evenly over that. The quantities for the filling are approximate, so feel free to play.
  • Starting on the long side, roll the dough up and cut it into 12 pieces.
  • TOPPING.
  • In the bottom of a 9" x 13" pan, mix butter, brown sugar, syrup and pecans (again, the quantities are approximate, so feel free to increase or decrease). Add the 12 rolls.
  • Cover the rolls with a clean towel and put the pan in a warm place to rise.
  • Let the rolls rise until they're up to the top of the pan (can take up to an hour).
  • Remove and bake in a 350 oven for 30 minutes.
