Steps:
- Pour beer into a bowl and let stand at room temperature for a few hours to go flat.
- Place all ingredients in the pan according to the order in the manufacturer's directions.
- Set crust on dark and program for the Basic cycle; press Start.
- When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
- Let cool to room temperature before slicing.

Steps:
- Measure all ingredients into bread machine pan in the order suggested by the manufacturer.
- Process in basic/white bread or whole wheat cycle: medium/normal crust setting.
- Timed-bake feature can be used.
- Remove baked bread from pan and cool on wire rack.
- To make Crisp Bread Slices: Cool bread at least 2 hours.
- Thinly slice.
- Remove crusts and cut into squares or triangles.
- Or use cookie cutters to cut out holiday shapes.
- To crisp, place slices on baking sheets.
- Brush lightly with melted butter.
- Bake at 375ºF for 5 to 10 minutes or until lightly browned.
- Remove to wire racks to cool.
- Serve with fruit- or herb-flavored cream cheese or thinly sliced meats and cheeses.

- Grease two 9x5-inch loaf pans.
- In a medium saucepan over medium heat, warm beer slightly. Stir in milk and 2 tablespoons margarine to melt. Pour contents into bread machine pan. Pour in flour. Make a well in the center of the flour, and sprinkle salt onto one side of the mound that forms. Into the well, pour the sugar and yeast. Sprinkle with pepper, onion, garlic, and herbs. Begin the dough cycle.
- Meanwhile, slice the cheese into pea-size crumbles. Avoid using shredded cheese, as it may clump. Once the dough forms into a sticky ball, gradually add the cheese crumbles.
- As the cycle continues and the cheese fully incorporates into the dough, the ball should still be somewhat soft and sticky. If it is too dry, add a bit of milk.
- When the cycle has completed, punch down the dough, and divide it in half. Place each half into a greased loaf pan, and allow the dough to rise, about 45 to 60 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- When the dough has risen, bake for 1 hour, or until the loaves are golden brown and make a hollow sound when thumped. Immediately turn out onto a cooling rack, and brush with melted margarine. Cool completely before cutting.

BASIC BREAD MACHINE BREAD (A B M)
This is a very reliable standard bread machine recipe for a 1 lb loaf. Too many people I know have bread machines but don't use them because they don't know how to do anything but use a mix! This will make a nice soft loaf as is, and it's also a great jumping off point for experimentation. Try varying the types of flour, fat, and sugar. Or try adding things like spices, nuts, mustards, or cheeses. My goal with this recipe is to get people comfortable enough with baking in their bread machines that they'll experiment. (If your machine only makes a 2 lb loaf, simply double all the ingredients.)

Steps:
- Add the ingredients to your bread pan in the order listed.
- Set your machine to 1 lb / white bread.
- Alternatively, set your machine for the dough cycle. When it's finished, take the dough out, shape it into a round loaf, cover, and let rise until doubled. Bake in a preheated 375 degree oven for 30-40 minutes.
- In both cases, cool on a wire rack before slicing.
