5-ounce sourdough bread or other leftover bread
1 tablespoon butter, plus 1/2 stick unsalted butter
4 (6-ounce) sea bass fillets
Salt and freshly ground black pepper
1 lemon, zested and juiced
Few sprigs thyme, leaves removed
3 cloves garlic, smashed
1 cup fresh parsley leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Pulse the bread in a food processor to get slightly coarse bread crumbs.
  • Coat a casserole dish just large enough to hold the fillets with 1 tablespoon butter. Place the fillets in the dish and season with salt, pepper, lemon zest and juice, and thyme leaves.
  • Melt the remaining 1/2 stick of butter in a large skillet with the smashed garlic. As soon as the butter starts to bubble, turn off the heat and let the garlic infuse the warm butter.
  • Remove the garlic chunks from the butter. Add the bread crumbs and lightly toss until all the butter has been absorbed. Turn the heat off, stir in the parsley and season, to taste, with salt and pepper.
  • Spread a layer of bread crumb mixture over the top of each fillet and bake for 12 to 15 minutes until bread crumbs are golden brown and fish is cooked through.

1 cup white sugar
4 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place blueberries, sugar, butter, and salt in a saucepan. Bring to a boil; boil for 5 minutes. Separate blueberries from sauce using a colander or strainer and set both aside.
  • Combine flour, sugar, butter, and vanilla extract in a bowl for the topping. Knead with a fork until all ingredients are combined. Set aside.
  • For the bread, mix 1/2 cup blueberry sauce, sugar, sour cream, eggs, and butter together in a bowl.

My mom often served a version of this dish when I was a kid, and it was one of my favorites. I guess it makes sense that it has become one of my go-to fast and easy dinners too. It's a weeknight trifecta-simple, tasty, and family friendly. All you need to do is sprinkle seasoned buttered bread crumbs onto a white, flaky fish fillet, and in less than 10 minutes the fish is done and the bread crumbs are crisped. I made it healthier by using freshly made whole-grain bread crumbs (which are a cinch to make) and adding some olive oil to the mix to keep the butter minimal. Roasting asparagus right alongside makes it a real two-for-one. Enjoy with some whole-grain rice, quinoa, or orzo.

1 bunch asparagus (about 1 pound)
4 teaspoons olive oil
1/2 teaspoon salt
1 medium clove garlic
2 slices whole-wheat sandwich bread
1 1/2 teaspoons unsalted butter
1 medium lemon
1/2 teaspoon dried oregano
4 sole fillets or other thin, flaky white fish (6 ounces each)
2 tablespoons fresh Italian parsley leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • Trim the asparagus spears, then place them in a baking dish. Toss with 2 teaspoons of the oil and 1/4 teaspoon of the salt. Roast until they are crisp-tender, 10 to 15 minutes depending on the thickness of the spears.
  • Meanwhile, place the garlic in a food processor and pulse until chopped. Cut off and discard the crusts from the bread, then add the bread to the processor and pulse until fine crumbs are formed.
  • Heat the remaining 2 teaspoons oil and the butter together in a medium skillet over medium heat. While the oil is heating, finely zest the lemon until you get about 1 teaspoon of zest.

2 eggs
1 cup mashed ripe banana
3 tablespoons water

Steps:

  • For the bread:
  • Preheat the oven to 350°F, and grease and flour a 9-inch round cake pan. In a large bowl, beat together the softened butter and granulated sugar until smooth. Add the eggs, mashed banana, water, and vanilla and mix to combine. In another bowl, combine the flour, salt, baking soda, cinnamon, and nutmeg. Add the flour mixture to the butter mixture and beat until combined. Fold in the chopped walnuts, and pour the batter into your prepared pan, spreading it evenly
  • For the crumb topping:
  • In a bowl, mix the flour, brown sugar, oats, walnuts, melted butter, cinnamon, and salt together with a fork until medium crumbs form. If yours comes out too dry, add a teaspoon of water. If it's too wet, add a teaspoon of flour. Evenly sprinkle the crumb mixture over the top of the batter.
  • Bake for 40 minutes. Then place a piece of foil over the top to prevent overbrowning, and bake until a cake tester inserted into the center of the bread comes out clean, 10 to 15 minutes longer. Cool in the pan completely before removing. Cut into wedges and serve.

1 pound fresh scrod, fillets
Romano Mashed Potatoes, recipe follows

3 large red potatoes, chopped into large chunks
Milk
Romano cheese, to taste
Salt and pepper
Chopped parsley leaves, to taste
1 pound asparagus
1 lemon, juiced
Olive oil, for sauteing
Salt and pepper
1 pound bacon
1 red pepper, diced
1 green pepper, diced
1 onion, diced
2 cloves garlic, diced
Chopped parsley leaves, to taste
Hot pepper sauce, to taste (recommended: Tabasco)
1/3 cup bread crumbs

Steps:

  • In a medium bowl, combine 2 tablespoons of olive oil and the juice and zest of 1 lemon. Place the scrod fillets in the bowl and allow the fish to marinate for approximately 20 minutes. In a medium sized saute pan, sear the scrod fillets over medium heat until both sides are evenly brown. Remove the fillets from the pan and set aside.
  • Serve with Romano Mashed Potatoes, Fresh Vegetables with Crispy Bread Crumbs, and Sauteed Asparagus.
  • In a large pot, combine the potatoes and just enough water to cover them. Boil the potatoes over medium-high heat until the water comes to a rolling boil. Continue boiling the potatoes until they are fork tender. Drain the water from the pot and add milk to desired creaminess, cheese, parsley and salt and pepper to the potatoes. Mash the ingredients all together with a hand masher until they are all thoroughly combined. Serve with the fish and vegetables.
  • In a medium sized saute pan, sear the asparagus spears with olive oil and lemon juice. Cook the asparagus until it is tender. Add salt and pepper, to taste.
  • In a medium-sized pan, cook the bacon strips until they are crispy. Remove the slices from the pan and crumble the pieces. Reserve the pan of bacon grease and add in the diced red pepper, green pepper, onion, parsley, and garlic. Saute the vegetables in the bacon grease with hot pepper sauce until they are tender. Add the bread crumbs to the pan and thoroughly combine all of the ingredients.

This is delicious as a dessert or a make ahead breakfast or brunch item. The pudding can easily sit overnight in the refrigerator before baking and tastes good cold too. I use any leftovers from my Oatmeal Molasses Bread for this recipe, but as long as the bread is not sliced sandwich bread, most breads will work. The dairy can be done in a variety of ways, depending on what you have on hand. I have even made this with 1% and it turns out fine, but not as creamy.

1/3 cup raisins
2 1/4 cups light cream
1/2 cup sugar

1/4 cup all-purpose flour
1/4 cup light brown sugar

Steps:

  • Grease a 2 quart, oven safe dish or casserole.
  • Put dried bread cubes in dish and sprinkle with dried fruit.
  • Mix together eggs, cream, vanilla, cinnamon and nutmeg until well combined.
  • Pour egg mixture over top of bread cubes.
  • Allow to sit at least 30 minutes, but more time is better.
  • Mix crumb topping by cutting the butter into the flour and brown sugar.
  • Sprinkle topping over the pudding mixture and bake in an oven preheated to 350 degrees F.
  • Bake for 45 minutes to an hour.
  • Remove from oven when a skewer inserted near the center comes out clean, but there is still a little pudding on it. There will be carry over cooking, so keep that in mind.
  • Let cool to desired temperature. This is great warm or cold.

3 live lobsters, about 1 1/2 pounds each
1 cup dry bread crumbs
2 tablespoons chopped fresh Italian parsley
3/4 teaspoon kosher salt
1/4 cup plus 3 tablespoons extra-virgin olive oil
2 cups dry white wine
Lemon wedges for garnishing
RECOMMENDED EQUIPMENT
A half-sheet pan (12 by 18 inches) or other large, rimmed baking sheet; heavy aluminum foil; moist napkins and bowls for the lobster shells, on the table

Steps:

  • About 1/2 hour before you plan to cut up the lobsters, put them in the freezer. They will become inactive as their temperature drops (but don't let them freeze).
  • Arrange a rack in the center of the oven, and heat it to 400°.
  • Split the lobsters in half lengthwise, one at a time. Hold each lobster flat on a cutting board, and place the point of a heavy chef's knife through the shell just behind the head, with the blade lined up between the eyes. Bring the blade down firmly, splitting the head in two. Turn the lobster so you can align the knife blade from behind the head along the tail, and cut down through the entire body and tail in one stroke.
  • When all the lobsters are split, remove and discard the sac and nerve tissue in the head cavity, and the thin intestinal tract that runs along the back between the shell and tail meat. Arrange the six lobster halves on the baking sheet, cut sides up, claws extended to keep the lobsters in place without rolling.
  • Toss together the bread crumbs, chopped parsley, and 1/4 teaspoon of the salt in a bowl; drizzle in 1/4 cup of olive oil, and toss well, until the crumbs are evenly moistened. Sprinkle the crumbs over the cut surfaces of the lobster halves, covering all the meaty parts; lightly press crumbs into the cavities, too. Pour the wine and the remaining 3 tablespoons olive oil into the pan around the lobsters (not on the crumbs); sprinkle the remaining salt into the wine and oil, and stir.
  • Tent the pan of lobsters loosely with a sheet of heavy aluminum foil (don't let it touch the topping), and carefully set the pan in the oven. Roast for 10 minutes, remove the foil, and roast another 20 to 25 minutes, until the lobsters are cooked through and the crumbs are crisp and golden.
  • Serve the lobsters immediately, placing a half on each dinner plate, or all the halves on a big platter to share family-style. Spoon any juices in the pan over the lobsters; place lemon wedges on the plates or platters. Make sure the napkins and bowls for the shells are handy, and dig in.

  • Preheat the oven to 375° F. Drizzle the bottom of a 13 × 9-inch baking dish with 1 tablespoon of the olive oil. (If you're using the infused oil, spoon a few of the garlic pieces into the dish as well.) Cut the peppers in half through the stems. Pull out the cores, stems, and seeds and, using a paring knife, cut out the ribs. Arrange the peppers side by side in the prepared dish. Drizzle 1 tablespoon of the olive oil over the peppers and season them with salt.
  • Stir the bread crumbs, the remaining 3 tablespoons of the oil, the grated cheese, 2 tablespoons of the parsley, the thyme, and the crushed red pepper together in a small bowl. Divide the crumb mixture among the peppers, making an even coating over the pepper halves. Pour in the stock and cover the dish tightly with aluminum foil. Bake until the peppers are tender, about 20 minutes.
  • Remove the foil and continue baking until the crumbs are lightly browned, about 10 minutes. This is a fantastic recipe. It's one that my husband really loves. Most men seem to love peppers, don't they? It originally came from the cookbook "Lidia's Italian-American Kitchen" by Lidia Bastianich. I've tweaked it a little for our tastes and made some changes to make it a little bit simpler to do. You can serve them hot or at room temp. for an appetizer or a wonderful, tasty side dish. I use them both ways.

3 bell peppers (I use red ones)
1/2 cup seasoned bread crumbs
1/2 cup crushed garlic flavored Club crackers
4 garlic cloves, minced
3 tablespoons grated romano cheese
3 tablespoons chopped fresh parsley
1/2 teaspoon dried thyme (optional)
1/4 teaspoon crushed red pepper flakes, chopped coarsely
1/2 cup chicken stock
1 cup grated mozzarella cheese
olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Drizzle the bottom of a baking dish with 2 tablespoons of olive oil and one clove of the garlic. I use a basting brush to spread everything around evenly.
  • Cut the peppers in half. Pull out the cores, stems and seeds. Arrange the peppers side by side in the prepared dish with the insides facing up. Drizzle a tablespoon of olive oil over the peppers. (I use a sprayer and spray the oil over them).
  • Stir the bread and cracker crumbs, the other 3 cloves of garlic, 3 tablespoons of olive oil, Romano cheese, 2 tablespoons of parsley, the thyme, and the crushed red pepper together in a small bowl. Spoon the crumb mixture over the tops of the peppers.
  • Pour the stock into the bottom of the dish and cover tightly with aluminum foil. Bake until the peppers are tender, about 30-40 minutes.
  • Remove the foil and evenly scatter the grated mozzarella over the peppers. Continue baking until the crumbs are lightly browned and the mozzarella is melted, about 20 minutes.
  • Transfer the peppers to a serving platter, stir the remaining 1 tablespoon of parsley into the juices in the baking pan, then spoon the juices over the peppers. (I always skip this step).
  • Serve hot or room temperature.

3 tablespoons extra-virgin olive oil, plus about 2 cups for frying
1 onion, finely chopped
3 garlic cloves, very finely chopped
Two 28-ounce cans whole, peeled Italian tomatoes, drained
Kosher salt and freshly ground pepper
8 small eggplants ( 1/2 pound each), cut lengthwise 1/2 inch thick
3 tablespoons coarsely chopped basil
1 pound lightly salted fresh mozzarella, thinly sliced and torn into small pieces
1 cup freshly grated Parmigiano-Reggiano cheese
3 tablespoons dry bread crumbs

Steps:

  • 1. In a large skillet, heat the 3 tablespoons of olive oil. Add the onion and garlic and cook over moderate heat until tender, about 5 minutes. Using your hands, crush the whole tomatoes into the skillet. Bring to a simmer and cook over moderately low heat, stirring occasionally, until the sauce is very thick, about 25 minutes. Transfer the tomato sauce to a food processor and puree until smooth. Season with salt and pepper. 2. Meanwhile, in a very large skillet, heat 1/4 inch of olive oil. Season the eggplant slices with salt and pepper. Working in several batches, cook the eggplant over moderately high heat, turning once, until golden on both sides, about 8 minutes per batch; add more olive oil to the skillet between batches. Drain the eggplant slices on paper towels. 3. Preheat the oven to 400°. Spread 1 cup of the tomato sauce in a 9-by-13-inch glass or ceramic baking dish. Arrange one-third of the fried eggplant slices in the baking dish and sprinkle all over with 1 tablespoon of the chopped basil. Top with one-third of the torn mozzarella and sprinkle with 1/3 cup of the grated Parmigiano-Reggiano. Repeat this layering twice. Sprinkle the bread crumbs all over the top of the eggplant Parmesan. This is not diet food. But oh so yummy. Wonderful for pot luck meal or picnic. It is one of the few meal I make that is not from scratch but I find canned baked beans have a nice taste and bake well. I have used french fried onions on top instead of bread crumbs for variation.

1 package(s) hot dogs
1/3 cup(s) catsup
1/4 cup(s) spicy mustard
2 tablespoon(s) horseradish
1 stick(s) butter
1 pound(s) bacon
1-2 cup(s) bread crumbs
1/2 cup(s) chedder cheese grated

Steps:

  • In a crock pot put the 2 cans of beans. Cut the bacon into small pieces and add to the beans. Add the catsup, mustard, horseradish and stir well. Put on high and cook for 3 hours.
  • Once the beans are cooked, put the oven on 400 deg to pre heat. In a sauce pan, melt the butter and once melted pour in the bread crumbs and stir until coated.
  • Remove the bean mixture from the crock pot and put into a baking pan. Put the cheddar cheese on the top then add the bread crumb mixture. Smooth out evenly.
  • Bake for about 30 minutes until the top is browned and slightly crunchy. Let it sit for 5 or so minutes before serving.

This topping always reminds me of holidays at Grandma's. The only vegetable I ate as a kid was corn, but I hear Grandma used this topping on most of her vegetables. It really makes veggies just a little more special. I tend to only make it on holidays myself. I've never known anyone who's heard of bread crumb topping which is why I'm posting it. My aunt found the recipe in a Scottish cookbook and was even served vegetables with crumbs while on vacation in Scotland. Grandma was of German descent so I don't know how or why she started making vegetables this way. :) Homemade dried bread crumbs are the best, but I've used plain packaged kinds also.
