2 1/2 cups milk or 2 1/2 cups light cream
3 eggs
1 teaspoon vanilla extract
3/4 cup brown sugar, packed
8 cups stale white bread cubes
1/2 cup raisins
1/4 cup rum or 1/4 cup apple juice
2 apples, cored and chopped
1 teaspoon cinnamon
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine milk, eggs, vanilla and 1/2 cup of the brown sugar.
  • Stir in bread cubes; let stand for at least 30 minutes; stirring occasionally.
  • In a small bowl, combine raisins and rum or apple juice. Set aside.
  • In another bowl, toss together apples, cinnamon and remaining brown sugar.
  • Add raisin and apple mixtures to the softened bread, mixing well.
  • Spread evenly in a greased 8"x8"x2" baking pan.
  • Drizzle with the melted butter.
  • Bake in a 375 degree Fahrenheit oven for 40 to 50 minutes or until golden brown and apples are tender.
  • Serve warm or cold.

4 slices of chopped bread
1 granny smith apple, peeled and chopped
2 1/2 tablespoons butter
2 tablespoons of dried raisins
1 1/2 bananas
1 cup half and half milk
1 teaspoon nutmeg
1 1/2 teaspoons cinnamon
1 teaspoon honey
2 tablespoons white sugar
1 tablespoon unbleached cane sugar
1 teaspoon vanilla
2 eggs

Steps:

  • Step 1:Heat oven to 350 F.
  • Step 2: Melt 2 tablespoons of butter in a small pan, then add chopped apple. Stir and add honey, cane sugar, 1/2 teaspoon of cinnamon. Then add raisins. Cook until apple soft.
  • Step 2: Mix eggs, milk, vanilla, nutmeg, cinnamon and whip until smooth.
  • Step 3: Grease small bowl with remainder of butter, then layer apple sauce, sliced bananas, then bread. Layer to top of bowl. Then pour milk over top.
  • Bake in oven in shallow pan of water for 45 minutes.
  • Serve warm or cold with vanilla ice-cream or whipped cream. Enjoy your dessert.

CINNAMON RAISIN AND CHOCOLATE BREAD PUDDING

4 large egg yolks
3 large eggs
2/3 cup sugar
4 cups whole milk
1 1/2 teaspoon vanilla extract
Pinch fine salt
Pinch ground nutmeg
One 1-pound store-bought loaf cinnamon-raisin bread, cut into 1-inch pieces and left out overnight to dry out
4 ounces semi-sweet chocolate, chopped
Unsalted butter for preparing the pan

Steps:

  • To make the custard, whisk the yolks, eggs, and half of the sugar together in a large bowl. In a medium saucepan, whisk together the remaining sugar, milk, vanilla, salt, and nutmeg, then bring to a boil. While whisking the yolks constantly, gradually pour the milk mixture into the yolk mixture. Set aside. In a bowl, evenly toss the bread and chocolate together and then put into a buttered 8-cup gratin dish. Pour the custard over the bread. Stir the bread a little so the custard settles evenly in the pan. Cover tightly with foil and set aside for 10 minutes. Place a rack in the middle of the oven and preheat to 325 degrees F. Place the gratin dish in a larger baking dish and place on the rack. Pour enough hot water into the baking dish to reach halfway up the gratin dish. Bake the bread pudding until just set, but still wiggle-y, about 40 minutes. Remove from the oven and cool completely before serving.

1 cup golden raisin
1/4 cup brandy
9 slices French bread
5 tablespoons room temperature butter, divided
1/2 cup sugar

1 egg yolk
1 1/2 cups whipping cream
1 1/2 cups whole milk
2 tablespoons lemon juice
2 teaspoons grated lemon peel

Steps:

  • Stir together figs, raisins and brandy in a medium bowl; let stand for 30 minutes.

1 (20 ounce) can crushed pineapple with juice
1/2 cup low-fat milk
5 cups Italian bread, Packed
2/3 cup raisins
1/2 cup brown sugar
2 tablespoons margarine, melted
1 tablespoon rum
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon margarine
1 tablespoon rum
1 tablespoon light brown sugar
2 tablespoons almonds, Sliced

Steps:

  • Preheat oven to 350F.
  • Combine pineapple, milk and bread in mixing bowl.
  • Stir together and let stand 10 min.
  • Stir in the remaining ingredients.
  • Pour mixture into lightly oiled 9 x 9 in. baking pan.
  • Last 3 ingredients are for glaze.
  • Melt margarine .
  • Add rum and brown sugar and stir just until sugar is dissolved.
  • Spoon in thin layer over top of pudding.
  • Bake for 25 min, top with almonds.
  • Bake for another 15 to 20 min, or until top is golden brown and turning crusty.
  • Serve warm.

RAISIN TOAST BREAD AND BUTTER PUDDING

This is something I made up so that I could use some leftover frozen custard I wanted to get rid of. Luckily I was inspired and it worked really well and the family loved it. I actually had banana custard in my recipe but have listed vanilla custard as it is easier to find though you could add banana essence to vanilla custard and a little yellow colouring if you like.Feel free to tinker with the recipe so that it suits the contents of your fridge.

8 thick slices raisin bread (I used 1cm thick cafe style)
250 ml full fat cream
2 cups vanilla custard
3 eggs
1 teaspoon vanilla essence
125 g fresh raspberries
100 g dark chocolate (roughly cut into small chunks)
4 tablespoons butter

Steps:

  • Pre-heat oven (fan-forced) to 160 degrees Celsius.
  • In a large bowl, add custard, cream, eggs and vanilla essence and whisk until combined. It should be a fairly thick cream.
  • Take each slice of raisin bread and spread it with butter to the edges of the bread. Then cut into half diagonally and arrange into overlapping triangles in a 20 x 30 cm baking dish. Depending on how thick your bread is, you may need more slices to fill up the dish.
  • Scatter the raspberries and chocolate chunks evenly over the bread making sure they go between the slices as well.
  • Gently pour the custard-egg-cream mixture over the bread so that it fully covers the bread but the tops of the triangles are sticking up.
  • Carefully place into pre-heated oven and bake for around 45 minutes. It should have set but still have a little wobble to it. Allow it cool to room temperature and serve.

Thin slices ( 1/4 inch) bread, preferably from a crusty country loaf, lightly toasted, enough to cover the bottom of a 6-cup gratin dish
1 cup golden raisins
4 eggs
3 cups half-and-half
1/2 cup sugar
2 teaspoons vanilla extract
1 teaspoon confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees.
  • Arrange the toasted bread slices to cover the bottom of a 6-cup gratin dish. The number of slices you will need will depend on the size of the loaf. Top with the raisins.
  • In a bowl, beat the eggs; mix in the half-and-half, sugar and vanilla extract. Pour evenly over the bread so that all the slices are moistened.
  • Bake for 40 minutes, or until set. Let cool.
  • Just before serving, sprinkle with the confectioners' sugar. Serve cool, but not cold.

1/2 cup butter, room temperature
2 butter croissants, sliced lengthwise -- into 1/4" slices
6 large eggs
1 cup sugar
1/8 teaspoon sugar
1 tablespoon vanilla extract
4 cups light cream or 4 cups half-and-half
1/2 teaspoon cinnamon, ground
1/8 teaspoon nutmeg, ground
1/8 teaspoon sugar

Steps:

  • Preheat oven to 325 degrees. Butter sides and bottom of 13x9" baking pan.
  • Butter one side of each bread slice and layer in pan alternately with croissants (6 slices bread, croissant slices, 6 slices bread).
  • In large bowl with an electric mixer set on med-high speed, beat eggs until slightly thickened, about 5 min.
  • Add sugar and vanilla and beat at med. speed until thoroughly combined.
  • reduce speed to low and add cream; mix until smooth.
  • Pour egg-cream mixture over bread and croissant slices. the slices will absorb egg-cream mixture slowly, so continue adding liquid until all is in pan.
  • In small bowl combine cinnamon, nutmeg and sugar. Sprinkle sugar-spice mixture over the bread pudding.
  • Fill a baking pan larger than the 13x9" bread pudding pan halfway up with hot water. Place in oven, set bread pudding pan in the water bath.
  • Bake 45-50 min. or until custard is set. When set, remove the bread pudding from the oven, and discard water in larger pan.
  • Cool to room temperature. refrigerate for 2 hours or until firm.

• 1 1/3 cups raisins (6 ½ oz)
• 1 1/3 cups white Italian dessert wine such as Moscato, Torcolato or Dindorello from Maculan
• 2 firm-ripe pears (3/4 lb total)
• 1 large Gala or McIntosh apple
• 1 stick (1/2 cup) unsalted butter plus additional for buttering pan
• 1 ¼ cups granulated sugar
• 3 cups course fresh bread crumbs (from a Tuscan round)
• 4 cups whole milk
• 1 teaspoon pure vanilla extract
• ¼ teaspoon cinnamon
• 3 large eggs
Zest of 1 lemon
• ¼ teaspoon fine sea salt
SPECIAL EQUIPMENT: a 9 ½ to 10 inch (24 – 26 cm) round non-stick springform pan.
GARNISH: confectioner’s sugar for dusting

Steps:

  • Soak raisins in wine, covered, at room temperature, about 12 hours Peel, quarter, and core pears and apple, then cut quarters crosswise into ¼ inch thick slices. Melt butter in a 2 to 3 quart heavy saucepan over moderate heat, then add sliced fruit and sugar and bring to a boil, stirring. Reduce heat and simmer uncovered, stirring occasionally, until fruit is very tender, about 15 minutes. Mash fruit in pan with a potato masher or a wooden spoon to a coarse puree and then simmer until liquid is thickened and mixture resembles a chunky applesauce, 5 to 10 minutes more. Transfer to a wide shallow dish and cool to room temperature. Put oven rack in middle position and pre heat oven to 400 degrees F. Put a sheet of foil on bottom rack to catch any drops. Butter bottom and side of spring form pa; sprinkle bottom with ½ cup bread crumbs. Stir together milk, vanilla and cinnamon in a bowl and add remaining 2 ½ cups crumbs. Soak at least 10 minutes (up to 1 hour). Whisk together eggs, zest and sea salt in a large bowl, then stir in milk and raisin mixtures and fruit puree and pour into pan. Bake until golden and evenly set, 45 to 60 minutes. Cool completely in pan on a rack, 1 to 2 hours, then chill, covered, 4 hours for flavors to develop. COOKS NOTES: Fruit puree can be made 1 day ahead and cooled completely, uncovered, then chilled, covered. Pudding is best made 1 day ahead and can be chilled 2 days.

5 slices white bread, cubed
2 (12 ounce) cans evaporated milk
4 large eggs, slightly beaten
4 tablespoons butter, melted
1/2 cup dried cranberries
1/2 cup golden raisin
3/4 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon vanilla
1/2 cup walnuts, chopped (optional)
1 tablespoon caramel sauce (smuckers icecream topping)
1 tablespoon non-dairy vanilla coffee creamer

Steps:

  • Place the cranberrys, raisins and nuts in a small bowl with just enough boiling water to cover.
  • Let stand a few minutes until they are plumped out and then drain.
  • In a large bowl blend the bread, cranberrys, raisins and nuts.
  • In a medium bowl mix the remaining ingredients together and pour it over the bread mixture and blend.
  • Pour the mixture into a lightly oiled 8x12 baking dish and allow to stand for 10 minutes before placing in oven.
  • Bake in a hot 350 degrees oven for 40-45 minutes.
  • COOL before cutting into serving size portions.
  • THE CARMAMEL SAUCE.
  • It is so simple - You make the choice in how much you want to make up at a time.
  • Place ingredients in a microwave safe dish and just slightly warm up until the caramel is slightly melted.
  • Blend well and pour over the bread pudding servings.

If mention of "pinto" brings to mind pink beans, think again this time: The following "pinto" bread pudding contains none of those beans beloved of chili fans but is named for the distinctive calico splotches that pattern the West's pinto pony.

2 1/2 cups water
1 1/2 cups firmly packed light brown sugar
1/2 teaspoon cinnamon
5 slices of homemade-style white bread, toasted and the crust discarded
5 slices of homemade-style raisin bread, toasted and the crusts discarded
1/2 stick (1/4 cup) unsalted butter, softened
1/2 pound Longhorn (Colby) or mild Cheddar, grated
2 Granny Smith apples
1 cup apple jelly, melted
vanilla ice cream as an accompaniment

Steps:

  • In a saucepan simmer the water with the brown sugar until the sugar is dissolved and stir in the cinnamon. Spread the 10 bread slices on one side with the butter and halve each slice diagonally. Arrange half the white bread and half the raisin bread, buttered sides down, decoratively in a buttered 13-by 9-inch baking dish and sprinkle half of the Longhorn over the bread. Peel the apples, grate them coarse, and sprinkle them over the cheese. Top the apples with the remaining cheese and arrange the remaining bread, buttered sides down, decoratively on top, trimming the bread as necessary to fit in one layer. Pour the brown sugar syrup evenly over the bread pudding, pressing down on the top slightly with a spatula, and let the pudding stand, covered, for 1 hour.
  • Preheat the oven to 350°F. Bake the pudding in the middle of the oven for 30 minutes, spread the jelly over the top, and let the pudding stand for 5 minutes. Serve the bread pudding warm with the ice cream.
