This avocado mousse is really easy to whip together and has so much rich, tangy, and zesty flavor. Super versatile, my favorite ways to use it are as a taco, burrito bowl, or fajita topping, or switch it up for a salad dressing (it's particularly good in a Cobb salad), a dip for a crudite platter, or spread on a sandwich or burger.

2 medium ripe avocados, cubed
¼ cup Greek yogurt
1 medium lime, juiced
1 ½ tablespoons apple cider vinegar
½ teaspoon salt
ground black pepper to taste

Steps:

  • Combine avocados, yogurt, lime, vinegar, salt, and pepper in a food processor or blender. Pulse together until avocado is totally blended and smooth and consistency is thick and whipped.

Pure ambrosia. Tinted a beautiful, pale-green, this South American dessert is irresistible on a hot summer's day. And since avocado is a fruit, and not a vegetable, it makes perfect sense to use it in this way. Enjoy! Cooking time refers to the time it takes to chill.

3 large avocados
5 tablespoons fresh lemon juice (or lime juice)
3/4 cup superfine sugar (more or less to taste)
3/4 cup whipping cream
1/4-1/2 teaspoon salt

Steps:

  • Peel, pit and roughly chop the avocado.
  • An easy way to remove the pit: after halving the avocado, with a flick of the wrist, plunge a knife into the pit, then give a slight twist and remove.
  • Voila!
  • Place avocado flesh into a blender with the lemon or lime juice, and puree until smooth.
  • Transfer mixture to a bowl, and with an electric mixer, gradually blend in the sugar-- slowly, slowly does it.
  • Then add cream and salt (just a little salt at a time, tasting as you go, to avoid over-salting), and blend further until well mixed.
  • Distribute mixture between 6 stemmed glasses and chill at least 4 hours in the fridge.
  • (Freeze it if you wish, but it is nicer just chilled).

½ cup milk
¼ cup white sugar
½ teaspoon vanilla extract

Steps:

  • Mash avocado with an electric mixer, or use a food processor. Blend in the milk, sugar and vanilla until smooth. Chill for about 20 minutes before serving.

2 chilled firm-ripe California avocados
1 1/2 tablespoons fresh lemon juice
3/4 cup whole milk
1/2 cup sugar
1/2 cup well-chilled heavy cream

Steps:

  • Halve and pit avocados and scoop flesh into a food processor. Add lemon juice, milk, sugar, and a pinch salt and puree until completely smooth. In a bowl beat cream until it just holds stiff peaks. Fold avocado mixture into whipped cream gently but thoroughly.

From "Cooking The Brazilian Way", this is a fast and easy pudding. Feel free to reduce the sugar or sub with Splenda or Sun Crystals. It originally called for milk, I decided to use almond milk. Cook time is chill time.

2 -4 tablespoons unsweetened almond milk
cinnamon (or other spices)
orange zest (or lemon zest)

  • Peel and seed the avocados. Place avocado meat, sugar, and lime juice.
  • in a food processor or blender and pulse until smooth. Add just enough milk to give the mixture a creamy, pudding-like consistency.
  • Spoon mixture into 6 dessert dishes, ramekins, etc. Cover and chill for at least 1 hour and serve cold.

A friend of mine got this recipe from her Brazilian friend who says that this shake is very popular during the summer in Brazil. It sounds kind of gross because you might associate avocados with non-sweet foods but I promise it tastes like candy. It's so good!
