6 skinless, boneless chicken breast halves
1 (16 ounce) bottle Italian-style salad dressing

Steps:

  • To Marinate: Pour salad dressing into a large, resealable plastic bag. Add chicken breasts, seal bag and shake to coat. Place in refrigerator for at least 1 hour or overnight (the longer you marinate, the more taste the chicken will absorb).
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove chicken from bag, discarding remaining marinade. Place chicken in a lightly greased 9x13 inch baking dish and bake at 350 degrees F (175 degrees C) for 1 hour, or until chicken is cooked through and juices run clear. Note: Turn chicken occasionally while baking.

1/4 lb. whole wheat spaghetti, uncooked
1/4 cup KRAFT Lite Zesty Italian Dressing
2 cloves garlic, minced
1/2 lb. boneless skinless chicken breasts, cut into strips
2 cups broccoli florets
1/2 cup chopped tomatoes
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided
4 tsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, heat dressing and garlic in large nonstick skillet on medium heat. Add chicken and broccoli; cook and stir 5 to 7 min. or until chicken is done. Stir in tomatoes and 1/4 cup mozzarella; cook 1 to 2 min. or until heated through, stirring occasionally.
  • Drain spaghetti; place on serving plate. Top with chicken mixture, remaining mozzarella and Parmesan.

1 medium eggplant, peeled and cut into 1-inch cubes
1 teaspoon salt
4 boneless skinless chicken breast halves (5 ounces each)
1/4 teaspoon italian seasoning
1/4 teaspoon pepper
1 1/2 cups shredded part-skim mozzarella cheese
1 (24 ounce) jar tomato basil pasta sauce

Steps:

  • Place eggplant in a colander over a plate; sprinkle with salt and toss. Let stand for 30 minutes.
  • Meanwhile, sprinkle chicken with Italian seasoning and pepper. In a large nonstick skillet coated with cooking spray, brown chicken on both sides. Transfer chicken to a greased 13-in. x 9-in. baking dish; sprinkle with 3/4 cup mozzarella cheese.
  • Rinse eggplant; pat dry with paper towels. Transfer to a large bowl; add pasta sauce and toss to coat. Spoon over chicken; top with remaining cheese.
  • Cover and bake at 350° for 35-40 minutes or until a meat thermometer inserted into the chicken reads 170°.
