BRATWURST WRAPS
Steps:
- Empty beer into large pot and bring to boil.
- Add bratwurst and boil for at least 5 minutes
- Remove bratwurst and allow to cool enough to handle. Split bratwurst lengthwise (optional). Place bratwurst on grill until done to your liking.
- Place 1 bratwurst in burrito wrapper, add kraut, mustard and smoked Swiss to taste. Fold burrito wrapper to enclose filling and place on grill until toasted, flip to toast both sides.

Steps:
- Place bratwurst and beer in medium saucepan; bring to a boil.
- Reduce heat to low; cover and simmer 10 minutes.
- Remove from heat; let bratwurst cool in beer.
- In 10-inch frying pan cook onion in oil over medium heat until browned, 8 to 10 minutes.
- Add sauerkraut, sugar, salt, and red pepper; mix well.
- Continue cooking for 5 minutes to blend flavors.
- Place bratwurst in center of cooking grate.
- Grill 5 to 6 minutes or until browned and heated throughout, turning once halfway through grilling time.
- Split each in half lengthwise.
- Place 1/4 of sauerkraut mixture down center of each tortilla.
- Place 2 bratwurst halves on top of filling.
- Spread 1 tablespoon mustard on bratwurst and top with a slice of cheese.
- Fold two sides of tortilla over cheese; fold remaining bottom and top halves of tortilla to close.
- Place tortilla wraps flap-side down on grill; grill 3 to 4 minutes or until browned and heated through, turning once halfway through grilling time.

- Place the bratwurst and beer in a medium saucepan and bring to a boil. Reduce heat to low, cover and simmer for 25 minutes. Remove from the heat and allow the bratwurst to cool in the beer.TO MAKE THE SAUERKRAUT: In a large sauté pan over medium heat, cook the onion in the vegetable oil, stirring occasionally, until browned, 8 to 10 minutes. Add the sauerkraut, sugar, salt, and red pepper flakes and mix well. Cook for 5 minutes more to blend the flavors. Set aside.Remove the bratwurst from the beer and grill them over Direct Medium heat until browned, 6 to 8 minutes, turning once halfway through grilling time.TO ASSEMBLE THE WRAPS: Halve each bratwurst lengthwise. Place about a quarter of the sauerkraut down the center of each tortilla and lay two brat halves on top. Spread 1 tablespoon of the mustard on each bratwurst and add a slice of the cheese. Fold two sides of the tortilla over the cheese, then fold the top and bottom to close.
