Wisconsin may be the cheese state, but bratwurst (ground meat sausages that are grilled, or in this case, pan-fried) are the state's culinary claim to fame. Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. (Madison, Wisconsin is home to an annual "Brat Fest") Michael Symon's simple recipe calls for the links to be cooked with onions, garlic and tangy sauerkraut and then served on a baguette.

2 tablespoons oil
2 pounds fresh bratwurst links
2 onions, chopped
2 garlic cloves, minced
3 cups chicken stock
1 tablespoon paprika
1 tablespoon caraway seed
4 cups sauerkraut, drained
2 tablespoons chopped fresh dill
1 baguette

Steps:

  • In a large pan, heat oil over high heat. Brown bratwurst in oil and reduce heat to medium. Add onions and garlic and cook until lightly caramelized. Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes. Remove from heat and stir in fresh dill. Serve on baguette.

I've made many variations of this excellent main dish. The bratwurst can be plain, smoked or cheese-flavored, served whole or cut in slices, with a bun or without. It would be popular at a party or potluck.

8 uncooked bratwurst links
1 can (14 ounces) sauerkraut, rinsed and well drained
2 medium apples, peeled and finely chopped
3 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1/4 cup finely chopped onion
1 teaspoon ground mustard
8 brat buns, split

Steps:

  • Place the bratwurst in a 5-qt. slow cooker. In a large bowl, combine the sauerkraut, apples, bacon, brown sugar, onion and mustard; spoon over bratwurst. , Cover and cook on low until a thermometer inserted in the sausage reads 160°, 6-8 hours. , Place brats in buns; using a slotted spoon, top with sauerkraut mixture.

3 tablespoons vegetable oil
4 large links or 8 small links bratwurst (1 1/2 pounds)
1 large yellow onion, halved and thinly sliced (about 2 cups)
1 teaspoon fennel seeds
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
One 1 1/2- to 2-pound red cabbage, halved, cored and very thinly sliced (about 8 cups)
1 cup acai berry juice
1/2 apple cider vinegar

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat. Add the bratwursts and brown on all sides, about 5 minutes total. Transfer to a plate.
  • Lower the heat slightly (between medium-high and medium), add the onions and fennel seeds and sprinkle with salt and pepper. Cook until the onions are softened and lightly browned on the edges, about 5 minutes. Stir in the garlic and cook just until softened, 1 to 2 minutes. Add the red cabbage and cook just until starting to wilt, 2 to 4 minutes, stirring occasionally. Stir in the acai berry juice and vinegar. Nestle the bratwursts into the cabbage, partially cover the pot with a lid and cook at a low simmer until the cabbage is tender and the bratwursts are cooked through, 10 to 15 minutes, stirring occasionally. Season with salt and pepper.
  • To serve, divide the cabbage and bratwursts among 4 to 6 plates. Alternatively, this dish could be served family-style on a large platter.

1 teaspoon ground dried chile (ancho is good)
1 teaspoon salt
3/4 teaspoon garlic powder
1/2 teaspoon caraway seed
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon cayenne
1/4 teaspoon ground mace
2 tablespoons vegetable oil
4 cups julenne onions
1 head cabbage, cut into julienne strips 1/4 to 12 inch wide (about 10 to 12 cups)
2 -4 unpeeled apples, cut into thin wedges (2 if large, 4 small)
2 tablespoons minced fresh garlic
2 tablespoons minced fresh ginger
1 cup balsamic vinegar
1 cup dry white wine
1/4 cup firmly packed dark brown sugar

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • Heat the oil in a 6 quart pot over high heat just until the oil begins to smoke, about 4 minutes.
  • Add the onions and cook, stirring occasionally, until they start to brown, about 8 minutes.
  • Stir in the cabbage, apples, garlic, and ginger and cook, stirring frequently, for 4 minutes.
  • Add the vinegar and scrape up all the brown bits on the bottom of the pot.
  • Stir in the wine, brown sugar, and the seasoning mix.
  • Cover, reduce the heat to medium, and cook, stirring occasionally, until the cabbage is tender and cooked down very well, about 25 to 30 minutes.
  • Can be served hot or cold, almost anytime, almost anywhere.

4 bratwurst sausages 1 package, found in
packaged meats case
1 tablespoon extra-virgin olive oil
1 pound sauerkraut rinsed, drained
1 cup sweet red pepper relish
1 loaf pumpernickel cocktail bread 2" square
loaves of bread, Pepperidge Farm
brand recommended (or quarter several slices of any
sliced, store bought dark or whole grain bread, as substitute)

Steps:

  • In a medium skillet, bring 1 inch of water to a boil, reduce heat to simmer. Pierce the casings of 4 pieces of bratwurst and set into the skillet. Simmer sausages 10 minutes, then remove to a cutting board, pour water out of pan and return pan to stovetop, adjusting heat to medium-high heat. Slice sausages on an angle, 6 cuts per wurst. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and set slices into hot skillet. Brown 1 to 2 minutes on each side. Place sauerkraut into a colander. Rinse and squeeze dry. Add to the browned bratwurst slices. Stir in sweet red pepper relish and warm through another 1 to 2 minutes. Transfer to a serving dish and place along side cocktail or quartered sliced dark bread. To serve, spoon sliced wurst and sauerkraut onto bread. This recipe yields 8 servings, 3 brat-bites each.
