BAKED BRANDY-CRANBERRY SAUCE
I can't remember where I got this recipe, but it did call for putting the brandy in when serving. I had to change that. So all I have to say is: 3 ingredients, 1 hour - perfection.

Steps:
- Preheat the oven to 300 degrees F.
- In a baking dish, mix the cranberries, sugar and brandy.
- Bake 1 hour in the preheated oven, stirring often.

CORNISH GAME HENS IN CRANBERRY-APRICOT BRANDY SAUCE
Steps:
- 1) Clean and halve the hens. Bake the hens at 375 degrees about 45 minutes. 2) Heat brandy and cranberries over medium heat until simmering. Carefully light brandy and stir until flame goes out. Add honey and vinegar. 3) Mix cornstarch and cold water, thicken with cornstarch as necessary. Serve over hens with wild rice.
CRANBERRY SAUCE WITH CINNAMON AND BRANDY
Steps:
- Combine cranberries, orange juice, brandy, into a pot. Stir the sugar, cornstarch, cinnamon, and nutmeg into the pot, ensuring that they disolve completely into the mixture. Bring the pot to a boil on medium-high heat. Lower heat to a simmer and stir the mixture every so often until it thickens and/or cranberries are to your desired softness. Note: For a less tart flavor, more sugar can be added. For a stronger flavor more brandy, cinnamon, or nutmeg can be added. If additional brandy is desired, it may require more corn starch to thicken sufficiently.
BRANDY CRANBERRY SAUCE

Steps:
- Combine cornstarch and water; mix well.
- Add all ingredients, except liqueur, in metal fondue pot; mix well and heat over moderate direct heat, stirring constantly, until thickened. Stir in liqueur.
- Serve warm on plain or ice cream topped waffles or ice cream.
