BRANDIED APPLE COBBLER

Serve this delicious cobbler with a scoop of your favorite vanilla ice cream. From a March 1984 issue of Bon Appetit Bon Voyage section featuring the Oregon coast. The recipe comes from Janice Willinger, co-owner and chef at The Experience in Waldport, Oregon.

8 cups granny smith apples or 8 cups rome apples, peeled, cored and thinly sliced
3/4 cup walnuts, coarsely chopped
1/2 cup golden raisin
1/2 cup currants
1/2 cup dates, chopped
1/2 cup Applejack or 1/2 cup calvados
2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cut into small pieces, room temperature (1 stick)
1 cup half-and-half
1 1/2 cups light brown sugar, firmly packed
2 tablespoons cornstarch
1 teaspoon cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon nutmeg, grated
1 1/2 cups apple cider

Steps:

  • Preheat oven to 350°F.
  • Generously butter shallow 5-to 6-quart baking pan.
  • Spread apple slices in bottom of pan; sprinkle with walnuts, raisins, currants and dates.
  • Drizzle with 1/2 cup applejack or Calvados.
  • Combine flour,sugar, baking powder and salt in large bowl.
  • Cut in butter until mixture resembles coarse meal.
  • Blend in half-and-half to form thick, smooth batter.
  • Drop by heaping teaspoons on top of apple mixture to cover completely.
  • Blend brown sugar, cornstarch, cinnamon, coriander, salt and nutmeg and sprinkle over batter.
  • Bring apple cider to boil; gently pour over cobbler.
  • Place cobbler on foil-lined baking sheet.
  • Bake cobbler until tester inserted in center comes clean, 1 to 1 1/4 hours, depending on juiciness of apples.
  • Cut into squares and serve warm or at room temperature.

3 cups fresh fruit such as sliced strawberries, peaches, apricots, blueberries, blackberries
1/2 cup fresh orange juice
2 tablespoons apricot brandy or 2 tablespoons other fruit flavored brandy

Steps:

  • Combine the fruit in a medium bowl.
  • Stir together the orange juice and brandy in a measuring cup.
  • Pour over fruit; cover and refrigerate for at least 2 hours or up to 6 hours before serving, enjoy.

2 teaspoons baking powder
¾ cup white sugar
¾ cup milk
¼ cup butter
2 cups sliced fresh peaches

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.
  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

Steps:

  • 1. 2 c. fruit from brandied fruit starter recipe 1 3/4 c. sugar 3/4 c. butter 3/4 c. flour Pinch of salt 2 tsp. baking powder 3/4 c. milk
  • 2. Mix fruit with 3/4 c. sugar. Put butter in 8 inch square pan; set in 350 degree oven. Mix batter using 1 c. sugar, flour, salt, baking powder and milk. Pour over melted butter. Do not stir. Put fruit on top. Bake 1 hour or until crust is brown. (Freezes well).
