PUMPKIN SPICE HEALTHY BRAN MUFFINS

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line 2 muffin tins with paper liners.
- Place raisins in a microwave-safe bowl; cover with water. Microwave on high until plump, about 70 seconds. Drain.
- Beat milk and eggs together in a bowl; mix in bran cereal. Let stand until cereal softens, about 5 minutes.
- Mix raisins, canned pumpkin, honey, apples, and butter gently into the cereal mixture. Add flour, baking soda, pumpkin spice, and baking powder; mix batter gently until combined.
- Spoon batter into the lined muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer muffins to a cooling rack; let cool for 40 minutes.

These moist, tasty muffins are chucked full of things that are good for you. Muffins can be wraped in foil and and placed in freezer plactic bag or stored in airtight freezer container up to 1 month. Maybe reheated in microwave or oven. The recipe comes from Better Homes and Gardens .

Steps:
- In a large mixing bowl combine cereal, milk, oil, and eggs; let STAND 10 minutes; Stir in carrot, coconut, and raisins.
- In another bowl combine flour, brown sugar, sugar, baking powder, soda, cinnamon, and salt.
- Add cereal mixture to flour mixture; Stir until just combined.
- Grease muffins cups or line with paper bake cups; fill each 2/3 full; Bake in a 375 degree oven for 15 to 20 minutes or until toothpick inserted comes out clean, serve warm.

- Preheat oven to 400 degrees.
- Line muffin tin with paper cupcake liners.
- Cream butter with both sugars in a large mixing bowl until fluffy.
- Add egg, egg whites, sour cream, yogurt, molasses, and vanilla - mixing until well combined.
- Add flour, bran cereal, baking powder, bakng soda, pumpkin pie spice, salt, raisins and apple pieces until just barely combined. Don't overmix - batter will be lumpy.
- Spoon into prepared muffin tin. Bake about 15 minutes if using gem sized muffin cups or 20 minutes if using regular sized muffin cups. Tops of muffins will spring back when lightly touched.

- Preheat the oven to 400 degrees F.
- Lightly grease two non-stick muffin pans or line with paper muffin cups.
- In a large bowl, combine the bran, flour, cranberries, cinnamon, baking powder, baking soda, salt, ginger, nutmeg and orange zest.
- In a separate bowl, beat together the applesauce, sugar, oil and eggs until well mixed.
- Stir in the milk and molasses.
- Add to the dry ingredients, stirring just enough to moisten. Be careful not to overmix.
- Spoon into the prepared muffin pans.
- Bake for 20 minutes or until the tops are firm to the touch.

Slowly stir in cereal, raisins, flour, cinnamon, baking soda and baking powder, stirring until flour is just incorporated. Coat a muffin pan with cooking spray; fill 3 cups with batter. Bake until muffins spring back to the touch and a toothpick comes out clean when inserted in center, 30 to 35 minutes. 253 calories per muffin, 9.6 g fat (1.3 g saturated), 42 g carbs, 5.5 g fiber, 3.8 g protein
