BRAISED BEEF FLANKEN RIBS
Steps:
- 1. Preheat oven to 300"F. Wipe off ribs with paper towels, then sprinkle well with flour, salt, and pepper. 2. Heat oil in dutch oven, and first brown garlic, then push aside and brown flanken on all sides. 3. Remove from heat, add vegetables, and pour in wine. Cover pan and cook for about 2 1/2 hrs. Baste frequently and add more wine if sauce has evaporated. Serving suggestion: Serve with noodles, broccoli, and a good red wine.

Steps:
- Season the ribs with salt and pepper.
- Mix the essence with the flour, dredge the ribs, then, in an oven proof pan, brown in the olive oil.
- Remove and set aside.
- Add the onion and garlic to the pan and cook until the onion is just soft, then add the ribs with the thyme and stir.
- Pour first the beef broth over the top of the ribs and then the wine.
- Cover and roast in a 375 F oven for two hours.
