Bowties with Spinach and Barley image

This is such a simple meal for those late night dinners.

Number Of Ingredients 8

10 oz frozen chopped spinach - thawed
1 medium spanish onion - sliced
4 cloves garlic - chopped
½ cup instant barley
1 cup chicken broth
juice of 1 lemon
2 tbs. olive oil
1 lb. bowtie macaroni

Steps:

  • 1. Heat a large frying pan with the olive oil. Add the onions and garlic and sauté on medium-low heat until the onion is transparent and the garlic is fragrant. Place the spinach in the pan; sauté on medium low heat with the onion and garlic and toss. Add the chicken broth and lemon juice and continue to sauté on low heat; until everything is well heated. Prepare the instant barley and the macaroni as directed. Drain the bowties and the barley; add to the pan and toss. Plate and serve with a lemon wedge for garnish.

1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
6 cups fresh baby spinach (about 6 ounces)
2 cups fresh broccoli florets
2 plum tomatoes, chopped
1 medium sweet red pepper, chopped
1/2 cup cubed part-skim mozzarella cheese
1/2 cup pitted Greek olives, halved
1/4 cup minced fresh basil
1/3 cup reduced-fat sun-dried tomato salad dressing
1/4 teaspoon salt
1/4 cup chopped walnuts, toasted

2 tablespoons olive oil
2 large onions, chopped
1 cup pearl barley
1/2 pound mushrooms, sliced
2 cups canned vegetable broth
1 cup small bow-tie pasta, freshly cooked

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onions and sauté until deep brown, about 15 minutes. Add barley and stir 30 seconds. Add mushrooms; sauté until barley browns and mushrooms begin to soften, about 5 minutes. Add broth. Bring mixture to boil. Cover pan; reduce heat to medium-low. Simmer until barley is tender and broth is absorbed, about 25 minutes. Mix in pasta. Season to taste with salt and pepper and serve.
