COLD SOUTHWESTERN BOW TIE PASTA
An easy pasta salad bursting with flavor. It is fantastic for your next potluck. But bring a lot, it goes fast!

Steps:
- Bring a large pot of lightly salted water to a boil. Cook the bow tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain.
- Whisk olive oil, lime juice, cilantro, garlic powder, cumin, ground chile pepper, cayenne pepper, salt, and black pepper together in a large bowl. Stir corn, black beans, diced tomatoes and green chiles, and green onions into the dressing to coat. Gently mix avocados into bean mixture; fold bow tie pasta into the salad. Cover salad with plastic wrap and refrigerate 30 minutes before serving.

BOW TIE PASTA WITH CORN AND CILANTRO
I got this recipe from the newspaper, but instead of using ravioli, I used bow tie pasta and to me, I came out better. My own special touch with also adding frest avocados on top of the pasta when it was served.

Steps:
- Cook pasta as directed on package.
- Drain, Meanwhile, in a large skillet heat oil over medium heat until hot. Add garlic: cook and stir 2 to 3 minutes or until tender. Add corn and salt: Cook until throughly heated, stirring occasionally. Add cooked pasta, toss to coat. Sprinkle with cilantro and add more salt and pepper to your taste.
- When it, is served add fresh slices of avocado.
- Delicious.
