SWEET POTATO CASSEROLE WITH BOURBON AND PINEAPPLE



Sweet Potato Casserole with Bourbon and Pineapple image

5 1/2 lb sweet potatoes, raw
1/2 c brown sugar, dark
1/4 c bourbon
4 Tbsp butter, unsalted
1 1/2 tsp kosher salt
1 tsp cinnamon, ground
1 tsp ginger, ground
1/2 tsp allspice, ground
1/2 tsp freshly grated nutmeg
1/2 tsp ground black pepper
2 eggs
1 can(s) pineapple, crushed (8 oz can)
1 c sugar
1 tsp vanilla extract
4 egg whites

Steps:

  • 1. Heat oven to 350°. Place potatoes on a foil-lined baking sheet; bake until tender, about 1½ hours. Peel and transfer to a food processor along with brown sugar, bourbon, butter, 1 tsp. salt, cinnamon, ginger, allspice, nutmeg, pepper, eggs, and pineapple; puree. Transfer to a 9" x 13" baking dish; bake until heated through, about 25 minutes.
  • 2. While casserole bakes, bring sugar, and ¼ cup water to a boil in a 1-qt. saucepan over high heat; attach a candy thermometer to the side of the pan, and cook, without stirring, until syrup reaches 250°. Meanwhile, place remaining salt, vanilla, and egg whites in a large bowl; beat on medium-high speed of a hand mixer until soft peaks form. While beating, slowly drizzle in hot syrup, and beat until meringue is thickened and cooled.
  • 3. Heat broiler to high. Spread meringue over casserole; broil until lightly browned, about 2 minutes.
  • 4. Personal NOTE: You can probably use canned chunk sweet potatoes to decrease prep time. Just add the ounces on each can until you get 5 1/2 lbs (88 ounces) or thereabouts (cans may weigh less or more than 16 ounces--it's okay to have slightly less or slightly more than the given amount). Since I am unsure if the can's measurement includes the liquid, you might want to get one extra can, just in case; so when you taste it before baking, if it seems like it needs more sweet potato flavor you can add some. Also, the instructions do not indicate whether the pineapple should be drained, so I would drain it first and reserve the liquid, then if the pineapple-sweet potato mixture seems like it's too dry you can add in the pineapple water.

For those who don't usually like sweet potatoes - they love this! I made this for a Thanksgiving potluck at work and everyone loved it so much they requested it year after year and for every pot luck we did!

1 (40 ounce) can sweet potatoes, drained and cut up
3 medium eggs
1 cup brown sugar
1 (8 ounce) can crushed pineapple in juice
1/4 cup condensed milk
1/2 cup oleo, melted
2 tablespoons Bourbon
1/2 cup chopped pecans

Steps:

  • Put sweet potatoes in blender with eggs, brown sugar, milk, oleo and bourbon.
  • Blend.
  • Add pineapple last to avoid completely liquifying it.
  • Blend.
  • Pour mixture into a greased 2 1/2 qt casserole.
  • Scatter nuts over mixture.
  • Bake at 375 for 45 minutes or until it bubbles well.

6 pounds sweet potatoes
1 lemon, zest and juice
3 tablespoons pure maple syrup
2 tablespoons light brown sugar
3 tablespoons bourbon
8 tablespoons butter, at room temperature
1½ teaspoons salt
1 teaspoon white pepper
3 cups miniature marshmallows

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes on a foil lined baking sheet and roast until very soft to the touch, 45 minutes to 1 hour. Remove from the oven and let cool, about 20 minutes. When cool enough to handle, peel them by hand and put the flesh in the bowl. Using a mixer with a paddle attachment, mix in the lemon zest and juice, maple syrup and brown sugar. Place the bourbon in a small saucepan over high heat. Let it come just to the boil and then tilt the pan slightly towards you to set it aflame*. Add to the potatoes along with the butter. Mix well. Add salt and pepper and transfer to a 13 by 9-inch oven-safe casserole dish. (This recipe can be made to this point up to 2 days before, refrigerated.) Sprinkle topping over potatoes and bake for 20 minutes until the top is golden brown. If reheating, preheat oven to 350*F. Heat for 20 minutes. Sprinkle topping over potatoes and broil for 1 minute.

3 ½ cups chopped sweet potatoes
1 cup white sugar
½ cup butter, melted
¼ cup milk
¼ cup bourbon
2 large eggs
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup brown sugar
⅓ cup all-purpose flour
⅓ cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
  • Combine sweet potatoes, sugar, 1/2 cup melted butter, milk, bourbon, eggs, and vanilla in a bowl. Transfer to the prepared casserole dish.
  • Bake in the preheated oven for 25 to 30 minutes.
  • Meanwhile, mix pecans, brown sugar, flour, and 1/3 cup melted butter in a bowl; set aside.
  • Remove casserole from the oven and sprinkle pecan mixture over top. Return to the oven and bake until topping is golden brown, about 15 more minutes.
