GRILLED BOURBON STEAKS

Grilled Bourbon Steaks are full of smoky bourbon flavor. Rib-eye steaks (or any cut of meat you choose) are marinated in a bourbon and Worcestershire mixture and then grilled to get a good char.

1/2 cup bourbon
1/4 cup Worcestershire sauce
2 tablespoons ketchup
2 tablespoons olive oil
1 shallot, finely chopped
2 garlic cloves, (minced)
1 teaspoon Tabasco sauce
4 thick-cut boneless ribeye steaks

Steps:

  • Combine first 7 ingredients in a large ziptop bag. Add steaks. Turn to coat. Refrigerate for 4 to 12 hours, turning bag occasionally.
  • Remove steaks from bag and blot dry. Season well with salt and pepper. Let sit at room temperature for 30 minutes.
  • Heat grill to medium-high. Add steaks and grill for 8 to 10 minutes, turning once. Let rest 5 minutes before serving.

This is a version of the classic with a sweet Southern twist to a great rib-eye steak, which deserves special treatment.

1 cup bourbon (such as Maker's Mark®)
¼ cup soy sauce
¼ cup packed brown sugar
¼ cup Dijon mustard
¼ cup olive oil
¼ cup pineapple juice
3 tablespoons Worcestershire sauce
1 tablespoon minced garlic
¼ teaspoon ground ginger
4 (8 ounce) rib-eye steaks

Steps:

  • Whisk bourbon, soy sauce, brown sugar, Dijon, olive oil, pineapple juice, Worcestershire, garlic, and ginger together in a medium mixing bowl until thoroughly combined and mustard is well broken down in the mix.
  • Place steaks in a large resealable plastic bag. Pour marinade into the bag and squeeze out excess air. Seal the bag and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove steaks from the marinade and shake off excess. Discard the remaining marinade.
  • Place steaks on the preheated grill and cook until they are beginning to firm and are hot and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium. Turn steaks once during cooking and shift twice to mark the steaks with diamond patterns.

1 teaspoon paprika
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Whisk first 8 ingredients in a medium bowl.
  • Place steaks in a large resealable bag and pour in the marinade. Seal and refrigerate for 2 hours, turning occasionally.
  • Remove steaks from fridge for 30 minutes, then remove from marinade and pat dry.
  • Mix paprika, salt and pepper and rub into both sides of the steak.
  • Preheat grill to high and cook 8 - 10 minutes for medium-rare, turning once.
  • Let rest for 5 minutes before serving.
  • Time does not include time to marinate (2 hours).

Eight 1-inch-thick rib-eyes
2 sticks (1 cup) salted butter, melted and slightly cooled
4 tablespoons seasoned salt
4 tablespoons lemon and pepper seasoning
4 tablespoons garlic salt

Steps:

  • Prepare a grill or grill pan for medium-high heat.
  • Put the steaks on a platter and brush one side with half of the melted butter. Sprinkle on half of the seasoned salt, lemon and pepper seasoning and garlic salt.
  • Grill the steaks seasoning-side down for 2 minutes. Brush the top side with the remaining butter and sprinkle on the remaining seasoned salt, lemon and pepper seasoning and garlic salt. Flip the steaks and cook on the other side for 2 minutes for rare. (For medium-rare, cook 3 minutes per side.) Remove to a platter and rest for 5 minutes before serving.
