ONE POT MUSHROOM RICE



One Pot Mushroom Rice image

Easy peasy mushroom rice made in one pot. Really! Even the rice gets cooked right in! It's so creamy and packed with so much flavor!

Number Of Ingredients 11

1 tablespoon olive oil
2 cloves garlic, minced
1 onion, diced
1 pound cremini mushrooms, thinly sliced
2 teaspoons Worcestershire sauce
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
3/4 cup brown rice
1 1/2 cups vegetable broth
2 tablespoons unsalted butter
2 tablespoons chopped fresh chives

Steps:

  • Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic and onion, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in mushrooms, Worcestershire and thyme and cook, stirring occasionally, until mushrooms are tender and browned, about 5-6 minutes; season with salt and pepper, to taste. Stir in brown rice and vegetable broth. Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 40-45 minutes. Stir in butter until melted, about 1 minute. Serve immediately, garnished with chives, if desired.

BOUILLON OF WILD MUSHROOMS AND CORIANDER



Bouillon Of Wild Mushrooms And Coriander image

1 pound shiitake mushrooms, coarsely chopped
1/2 head garlic, peeled and crushed
1 medium onion, quartered
1 pound fresh ripe tomatoes, quartered
8 stems fresh coriander
1 1/2 quarts water
1 1/2 teaspoons salt
Freshly ground pepper to taste
1/4 cup Madeira
1 cup mixed wild mushrooms, stemmed and thinly sliced
8 coriander leaves

Steps:

  • Place the shiitakes, garlic, onion, tomatoes, coriander stems and water in a large pot. Bring to a boil. Reduce heat and simmer for 1 hour. Strain the broth through a fine sieve lined with cheesecloth. Cleanthe pot, add the broth and place over medium-high heat. Simmer rapidly until reduced to 2 cups, about 20 minutes. Strain again. Return the broth to the pot, season with 1 teaspoon salt and pepper and keep hot.
  • Heat the Madeira in a medium skillet over medium heat. Add the wild mushrooms and cook until softened, about 3 minutes. Season with the remaining 1/2 teaspoon salt and pepper. Divide the mushrooms and the coriander leaves among 4 bowls. Ladle in the broth and serve immediately.

1 can Campbell's French onion soup
1 can Campbell's beef consomme
1 carton sliced mushrooms (or 8-oz canned sliced)

Steps:

  • Place stick of butter in 11 x 13 casserole dish.
  • Place in oven; turn temperature to 350 degrees.
  • Remove dish when butter is melted.
  • Add rice, soups, and mushrooms to dish atop melted butter.
  • Stir loosely with fork or spoon so that all rice is dispersed in liquid.
  • Place dish in oven and bake for 30-40 minutes or until top is golden.

WILD MUSHROOM RICE

4 tablespoons unsalted butter
3 tablespoons olive oil
1/2 pound shiitake mushrooms, stems removed and caps cut 1/4-inch thick
2 large portobello mushrooms, stems removed and caps cut 1/4-inch thick
1/2 pound oyster mushrooms, stems removed and caps cut 1/4-inch thick
Salt and pepper for seasoning, plus 1 teaspoon salt
1 Spanish onion, finely chopped
3 cups converted rice
7 cups chicken stock
1/4 cup porcini mushroom powder

Steps:

  • Heat 3 tablespoons butter and 2 tablespoons oil in a large saute pan over high heat. Add the mushrooms, season with salt and pepper, to taste, and saute until golden brown.
  • In a medium saucepan heat remaining butter and oil over medium heat, add the onions and cook until soft. Add the rice and stir to coat with the butter and oil. Add 6 cups of the stock, 1 teaspoon of salt and the porcini powder, bring to a boil, cover, lower the heat and cook until all the liquid is absorbed. Fold in the mushroom mixture, more stock, if needed, and season with salt and pepper, to taste. Cook to heat through, about 5 minutes.

1 cup raw rice. (I use raw brown rice, but not Instant)
1 stick melted butter
1 can Beef Bouillon.
1 small jar Mushrooms
1 small can Dawn Fresh Mushroom Steak Sauce

  • Mix ingredients together and put in pyrex casserole dish. Bake for 1 hour at 350 degrees. For the last 15 minutes, I usually cover with casserole lid or aluminum foil, but not necessary to do.

1 pound mixed wild mushrooms, such as chanterelles, cepes, black trumpets
2 shallots, diced
1 clove garlic, minced
2 tablespoons butter
1/2 cup white port
2 quarts water
Salt and pepper to taste
Chives, finely chopped
Several dashes Osborne aged oloroso sherry

Steps:

  • Melt butter in a large pot. Sweat the garlic and shallots in the butter for 20 minutes, until translucent. Add mushrooms and sweat until mushrooms are soft.
  • Deglaze pot with white port, and cook until reduced by half. Add the water; cover. Bring to a boil, then remove from the heat and allow to steep for 20 minutes. Add salt and pepper to taste.
  • To serve, ladle bouillon into a soup bowl, and top with chives. Finish by floating several dashes of sherry on the surface of the bouillon.

1 Tbsp. light or dark brown sugar
½ cup unseasoned rice vinegar (such as Marukan)
½ cup tamari (such as San-J)
10 garlic cloves, peeled (not smashed)
3 dried bay leaves
1 Tbsp. black peppercorns
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
1 tsp. cornstarch
2 tsp. mushroom bouillon powder (such as Lee Kum Kee)
1½ tsp. freshly ground black pepper
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
2-3 Tbsp. refined coconut oil or vegetable oil
1½ lb. mixed mushrooms (such as hen of the woods, king oyster, and/or pioppino), torn into 2" pieces if large
Steamed jasmine rice (for serving)
2-3 oz. watercress or baby arugula (optional)

Steps:

  • Cook brown sugar, undisturbed, in a small saucepan over medium heat until melted and a shade darker, about 2 minutes (don't walk away, it can burn quickly). Pour in vinegar, tamari, and ½ cup water, stirring and scraping up solidified sugar on bottom of pan with a wood spoon, and bring to a boil. Reduce heat to medium-low, add garlic, bay leaves, peppercorns, and salt, and simmer 15 minutes to infuse.
  • Strain sauce through a fine-mesh sieve into a medium bowl; discard solids. Return sauce to pan and bring to a boil over medium heat.
  • Meanwhile, stir together cornstarch and 2 Tbsp. cold water in a small bowl until smooth and lump-free.
  • Whisk cornstarch slurry into sauce, reduce heat to medium-low, and simmer, whisking often, until sauce thickens slightly, about 5 minutes. Keep warm.
  • Mix mushroom bouillon powder, pepper, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine. Heat 2 Tbsp. oil in a large skillet over medium. Working in 2 batches and adding another 1 Tbsp. oil between batches if needed, cook mushrooms, stirring occasionally, until golden brown, about 4 minutes; transfer mushrooms to a plate as you go. Return all cooked mushrooms to skillet, sprinkle with mushroom bouillon powder mixture, and cook, tossing to incorporate, 30 seconds.
  • Add adobo sauce to pan, scraping up any browned bits stuck to bottom of pan. Bring to a simmer (still over medium heat) and cook 2 minutes to bring flavors together. Taste and season with more salt if needed.
  • Divide rice among bowls and top with mushroom adobo. Top each with a handful of watercress (if using). Do ahead: Mushroom adobo can be made 3 days ahead. Let cool; cover and chill.

  • Saute onions in butter until golden.
  • Dissolve bouillon cubes in boiling water.
