1 (300 g) package frozen spinach, thawed and squeezed dry
1 (400 g) package frozen boston bluefish fillets (any white fish would work)
1 (284 ml) can condensed cream of celery soup
2 tablespoons water
1 tablespoon flour
1/2 cup grated cheddar cheese

Steps:

  • Spray a 1-1/2L to 2L dish with non stick spray. Preheat oven to 350°F.
  • Spread thawed and squeezed dry spinach over bottom of dish.
  • Place thawed fillets over spinach and sprinkle with salt and pepper.
  • In a bowl mix the flour and water, add the soup and mix well.
  • Spoon over fillets and top with shredded cheese.
  • Bake 30-35 minutes.

1 1/2 lbs bluefish, filets
6 lemon wedges
2 tablespoons prepared mayonnaise
salt
pepper

Steps:

  • Pre heat oven to 450 degrees Trim dark areas from bluefish filets. Rinse under cold water and pat dry. Place filets on sheet pan skin side down and slather generous even coating of mayonaise on top of fish. Salt and pepper and geneous sqweeze of lemon juice. Place in top third of hot oven and bake until bubbly and brown on top about 10 minutes depending on thinkness.

1 (10 ounce) package frozen chopped spinach, cooked according to package directions,drained well and squeezed dry
1 lb fresh small flounder fillets
salt and pepper (to taste)
1 (10 3/4 ounce) can condensed cream of shrimp soup
2 tablespoons dry sherry
1 tablespoon flour
1/4-1/3 cup fresh grated parmesan cheese
2 tablespoons butter, cut into bits

Steps:

  • Spray a 1 1/2 quart casserole dish with non-stick cooking spray.
  • Layer spinach across the bottom of the dish.
  • Place flounder fillets evenly over the top of the spinach and sprinkle with salt and pepper.
  • In a mixing bowl, add the sherry and flour; stir until well mixed; add the soup; stir to combine.
  • Pour over the fish fillets Sprinkle cheese over the top.
  • Place butter bits evenly over the top.
  • Bake at 350° for 25 minutes.

From an easy recipe card from the fish counter. Boston Bluefish is considered an oily fish with a rich, strong flavor and less white meat. The fat is distributed throughout the flesh keeping it moist during cooking. FYI-If you've never had bluefish before, it's strong taste doesn't work with any preparation the way a milder fish might. I used to have it broiled rather simply, with butter and lemon and a touch of paprika, which is fine but this will be a nice change of pace.

5 sprigs fresh parsley
1 green onion, sliced
1/2 teaspoon herbes de provence
1 stalk celery, small
salt

1 tablespoon olive oil
1 lemon, juice of

Steps:

  • Preheat oven to 425 degrees F.
  • Oil baking dish and set aside.
  • With the fish opened, place parsley, green onion, herbs and celery on flesh and season with salt and pepper.
  • Close fish over but do not tie.
  • Place in baking dish and sprinkle with oil and lemon juice.
  • Bake 14 minutes in the hot oven.

2 tablespoons butter
2 (10 ounce) cans chicken broth
1 (10 ounce) can water
1 small onion
1 (300 g) package frozen spinach
1 (7 ounce) can crabmeat
white pepper
2 ounces heavy cream

Steps:

  • Blend flour and butter in saucepan to make roux. Cook for a few minutes using a wire whisk.
  • Add chicken broth and 1 can water slowly, whisking all the time.
  • Defrost spinach and lightly saute with onion until tender.
  • Add to soup mixture.
  • Add crab, pepper, and finish with cream.
  • Refrigerate 3 days to allow flavors to ripen.

1/4 pound diced country bacon or salt pork
2 large onions, peeled and diced
2 bay leaves
1 teaspoon chopped fresh thyme
6 unpeeled new potatoes, cut in 3/4- to 1-inch dice
3 cups strong fish stock (frozen fish stock is available in many supermarkets)
2 cups heavy cream
2 pounds pollock, haddock or cod, bones and skin removed
Salt and freshly ground pepper to taste

Steps:

  • In a large pot fry the bacon or salt pork for 5 minutes. Drain off some of the fat, then add onions, bay leaves and thyme.
  • When onions are translucent, add potatoes and fish stock; simmer until potatoes are tender, 12 to 15 minutes.
  • Add cream and whole fillets of fish, and simmer 2 to 3 minutes. Season with salt and pepper.
  • Ladle into soup plates, trying not to break up the fish. Chowder is traditionally served with cream biscuits or common crackers.

2 lemons
2 tablespoons fresh dill, chopped

Steps:
