Straight from the kitchen of Marina Delio of Yummy Mummy Kitchen, these sparkling cranberries are the perfect finishing touch to any holiday dish. From garnishing baked Brie to topping your Christmas cakes, these cranberries look like tasty jewels. We won't deny that the majority of our annual cranberry cooking takes place around the holidays with the typical cranberry sauces. But, some of our favorite cranberry recipes can easily be transformed from a holiday treat to an everyday delight. In this recipe, the cranberries are infused with warmed maple syrup by tossing them and letting them chill in the fridge overnight. Once chilled, toss them in sugar to get that dusted sparkle that looks positively festive. No matter how they're prepared, cranberries add a much-needed pop of color and flavor to any holiday, so use these as an extra sweet excuse to have them well-past Thanksgiving. You'll get a burst of sweet and tart cranberry flavor whenever one sneaks into a bite! As a welcome bonus, you can make these sparkling cranberries for your holiday party up to two days in advance to free your hands for other day-of preparations and make sure you have a secret weapon to whip out.

- Cook the maple syrup in a saucepan over medium-low heat 1 to 2 minutes. (Don't let syrup get too hot or cranberries will pop.) Remove from heat; stir in cranberries. Cover and chill 8 to 12 hours.
- Place sugar in a large bowl or baking dish. Drain cranberries in a colander (about 15 minutes). Add 4 to 5 cranberries at a time to sugar; gently toss to coat. Repeat with remaining cranberries.
- Place cranberries in a single layer on a parchment paper-lined baking sheet; let stand until completely dry.
BOOZY BERRIES AND CREAM

- For the cream: In a saucepan, bring some water to a boil, then reduce the heat to a simmer. Have a mixing bowl ready that will fit over the top of the pan but not sink all the way in.
- Put the egg yolks in the mixing bowl off heat. Add the granulated sugar and whisk until the yolks start to turn pale. Place the mixing bowl over the saucepan with the simmering water. Scrape the seeds from the vanilla bean and add to the egg mixture. Slowly add the rum and whisk to combine. Cook over the simmering water until thick, using a rubber spatula to scrape the bowl, about 5 minutes. Cover with plastic wrap and refrigerate until cool.
- For the orange liqueur raspberries: Add the raspberries, confectioners' sugar, orange liqueur and orange zest to a bowl and mix together. Let macerate for 1 hour.
- To assemble: Pile the fruit into 6 individual martini glasses and top with the cream. Crush a cookie over each one and garnish with mint.
SPARKLING CRANBERRIES
Two simple ingredients create a stunning garnish for holiday desserts, cheese plates, or cocktails. For an unusual sweet-tart snack, these glimmering cranberries may be eaten as is. For a unique salad addition, use them in place of dried cranberries-especially a salad that includes blue cheese!

- Rinse and drain the cranberries, and discard any damaged or squishy ones. Place in a bowl and set aside. Combine the 1 cup granulated sugar and water in a small saucepan over medium-low heat. Bring the mixture to a simmer, stirring until the sugar dissolves. Remove from the heat and allow the simple syrup to cool for 5-10 minutes. Pour the mixture over the cranberries in the bowl. Cover and refrigerate 8 hours or overnight. Drain the cranberries in a colander over a bowl, reserving the steeping liquid, if desired. (The syrup will be infused with cranberry flavor and is delicious in lemonade, cocktails, etc.) Spread them out on a cooling rack (placed over a baking sheet or foil to catch the drips), and let dry for an hour. You want the cranberries to be tacky but not wet. (This helps the sugar to stick to the berries without clumping.) Place the ¾ cup sugar in a zip-top plastic bag-a paper bag works well, too. Add the cranberries, and gently shake to coat them with the sugar. Spread the sugared cranberries in a single layer on a baking sheet, and let stand at room temperature for one hour or until dry. Store in an airtight container in a cool, dry place for up to a week. Use as a garnish or a snack. (Taste-wise, they are tart-sweet and still have a crunch to them. They are meant to keep their structure rather than soften during the soaking process.)

- To make Cran-Rosemary Juice, combine unsweetened cranberry juice, 2 Tbsp. water, and sugar in a small saucepan. Bring to a simmer over medium high heat, stirring to dissolve sugar, then immediately remove from heat. Add 2 rosemary sprigs and let steep 4 minutes. Strain into a liquid measuring cup or 12-ounce resealable jar. Let cool to room temperature and use immediately, or seal and refrigerate up to 2 weeks.
- To make the cocktail, add sparkling wine to a Collins glass, being careful to let fizz settle to get an accurate measurement. Add Campari and Cran-Rosemary Juice, then fill with ice. If you'd like to torch the rosemary sprig, hold it next to the burner of a gas stove or near a match for a few seconds, just to warm a bit. Give the cocktail a very brief, gentle stir, then garnish with rosemary.
BOOZY FRESH CRANBERRY-ORANGE SAUCE
Why buy canned cranberry sauce when you can easily make your own from fresh cranberries, sugar, water, and a little bit of fresh orange? Cointreau®, or another orange-flavored liqueur, gives this sauce an extra flavor boost. It's perfect with ham, chicken, or turkey, whether it's a holiday or not.

- Place brown sugar, water and Crown Royal Maple in a medium saucepan. Heat over medium heat until sugar is dissolved, do not boil. Remove from heat, stir in cranberries, cover and refrigerate overnight. Place about a cup of sugar in a large bowl or cake pan. In small batches, strain excess liquid from cranberries and roll in sugar. Transfer to a baking sheet to dry in a single layer. After cranberries have dried for about an hour, repeat rolling in sugar to thoroughly coat any remaining liquid. Transfer back to baking sheet to dry for at least another hour.
