Five Minute Bailey's Hot Fudge Sauce image

Thick, luscious Irish Cream and chocolate dessert sauce that you can make in 5 minutes with only 4 ingredients!

1/2 cup Bailey's (or other Irish Cream Liqueur or Irish Cream-flavored coffee creamer)
1/4 cup unsweetened cocoa powder
1/4 cup brown rice syrup (or corn syrup)
2 oz. semisweet chocolate (chopped, or about 1/3 cup semisweet chocolate chips)

Steps:

  • Whisk together the Bailey's, cocoa powder, and brown rice or corn syrup in a small pot until smooth.
  • Bring to a boil, stirring frequently, then reduce heat to low and simmer for about 3-5 minutes, until thickened slightly.
  • Remove from the heat and add the chocolate. Stir until smooth.
  • Cool slightly and use immediately, or store in the refrigerator. It will be thick once chilled, so if you want it pourable, you may need to warm it slightly.

This recipe for a classic hot fudge sauce came to The Times in 2004, from Kay Rentschler. "A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

Number Of Ingredients 8

2 cups heavy cream
4 tablespoons unsalted butter
1/2 cup light brown sugar
3/4 cup granulated sugar
1/4 teaspoon fine sea salt
2 ounces bittersweet chocolate in small pieces
1 1/4 cups sifted high-fat Dutch-process cocoa like Valrhona, Pernigotti or Droste (sift, then measure)
1/2 teaspoon vanilla extract

Steps:

  • In medium saucepan, combine cream, butter, sugars and salt. Bring to a simmer over medium-low heat. Simmer 45 seconds. Add chocolate, and whisk to dissolve. Remove from heat, add cocoa, and whisk until no lumps remain.
  • Return pan to low heat, and simmer sauce until glossy, whisking constantly, 20 seconds. Remove from heat, and stir in vanilla. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.

2 cups semisweet chocolate chips
1 cup butter
4 cups confectioners' sugar
2 ⅔ cups evaporated milk
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • In a large saucepan, combine the chocolate chips and butter. Cook and stir over low heat until melted.
  • Gradually mix in the sugar and milk. Increase heat to a boil. Cook, stirring constantly, for 8 minutes. Remove from heat, and then stir in vanilla and salt. Serve warm. Store in refrigerator.

Microwave boozy fudge image

Also known as miracle fudge, this indulgent sweet treat is made in minutes in the microwave, and makes for an ideal last-minute edible gift - no sugar thermometer required

Number Of Ingredients 5

400g golden caster sugar
397g can condensed milk
140g salted butter, chopped into pieces
1 tsp vanilla bean paste
2 tbsp coffee liqueur (or another alcohol of your choice - amaretto or brandy works well)

Steps:

  • Grease and line a 20cm square baking tin with baking parchment. Put the sugar, condensed milk and butter in a large heatproof bowl (the mixture will bubble up as it cooks to roughly double its size), add a good pinch of salt and stir together.
  • Heat the mixture in the microwave on High for 10 mins, stirring every 2-3 mins. Keep an eye on the mixture, as it will bubble up and may go over the sides of the bowl.
  • Add the vanilla and liqueur to the mixture, whisk together and heat on High for another 2 mins. The mixture should be caramel-coloured and thickened. Scrape into the tin and set aside for 45 mins to 1 hr until cool and firm before cutting. Pack into a box and eat within 3 weeks.
