2 cups sweet potatoes, cooked (peeled)
1 cup Splenda granular
1 cup milk
3 eggs
1 (8 ounce) package reduced-fat cream cheese, softened
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg

Steps:

  • Combine all ingredients in blender; blend well.
  • Pour into greased (I use olive oil cooking spray) pie pan.
  • Bake at 350°F for 25 to 30 minutes.

I love sweet potato pie but needed one I could eat on my "no sugar added" eating plan. I've served this every Thanksgiving and my sons like it just as well as the sugared kind.

2 c mashed sweet potatoes
1 c splenda
1/2 stick butter
2 beaten eggs
2 tsp vanilla extract
1 tsp cinnamon
1/4 tsp salt
1/2 tsp ginger
1/2 tsp nutmeg
1 c milk (can use skim nicely)
1 9 in unbaked pie shell
1 container of sugar free cool whip

Steps:

  • 1. Preheat oven to 350. Put all the ingredients in a bowl. Mix with beater. Pour in pie crust and bake 35-45 minutes. Use the toothpick method to check doneness. Take out and let cool completely. Put a layer of Sugar Free Cool Whip over it before serving.
  • 2. NOTE: USE ONLY FRESH SWEET POTATOES, not canned. Canned usually has sugar in them. To cook sweet potatoes, peel 5 medium potatoes and place all of them in large zip lock bag. Cook in microwave with bag sealed for 7-8 minutes on high. Bag will expand but it won't explode. Poke potatoes with fork to check tenderness. Mash with beater immmediately but let cool before putting in the recipe.

This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

2 pounds of russet potatoes, peeled and sliced very thin
1 medium size onion, peeled and cut in half, and sliced very thin
salt and pepper to taste (light on the pepper)
4 teaspoons of minced garlic
1 cup of grated cheese, divided
2/3 cup of sour cream, whipping cream, or milk (i use a combination of all three!)
1/4 cup parmesan grated fresh
pam spray

Steps:

  • 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
  • 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
  • 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
  • 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!

1 1/4 cups all-purpose flour
3 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 1/4 teaspoons ground cinnamon
1/2 cup unsalted butter, chilled
1 large egg, slightly beaten
2 tablespoons ice water
1 cup finely ground pecans
1 tablespoon light corn syrup
1 tablespoon unsalted butter, melted
2 cups mashed cooked sweet potatoes (about 1 pound potatoes)
2 large eggs, lightly beaten
1/4 cup granulated sugar
1/2 cup heavy cream
1/4 cup unsalted butter, melted
3 tablespoons all-purpose flour
2 tablespoons brandy
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground nutmeg
1/2 teaspoon ground allspice
1 teaspoon vanilla
1/3 to 1/2 cup pecan halves
2 teaspoons unsalted butter
1/4 cup sugar
1 1/4 cups heavy cream
1/2 cup finely chopped pecans, toasted
Whipped cream, for garnish

Steps:

  • Prepare the dough for the crust: stir the flour, sugar, salt, baking powder and spices together in a large bowl. Using 2 knives or a pastry blender cut in the butter until the mixture resembles coarse crumbs. Stir in the egg until well moistened. Stir in the ice water until dough forms. Wrap in plastic wrap and chill for about 1 hour.
  • Preheat the oven to 375 degrees.
  • Stir the ingredients for the nut mixture in a small bowl, and set aside. In a large bowl (or food processor bowl), beat together all the ingredients for the filling until well blended and set aside.
  • Roll the dough out on a floured surface to form a 12-inch circle, and use it to line a 10 inch fluted removable bottom tart pan. Trim the edges of the dough with a sharp knife. Spread the nut mixture evenly over the bottom, and then pour in the sweet potato mixture. Decorate with the pecan halves. Bake for about 1 hour, until the filling is well risen and set. Transfer to a wire rack to cool. Serve with praline pecan sauce and whipped cream.
  • Melt the butter in a medium-sized heavy saucepan. Add the sugar and cook over low heat, stirring, until the sugar has dissolved and browned. 1 pound 3 ounces sweet potatoes, peeled and cubed
1 1/4 cups plain yogurt
3/4 cup packed, dark brown sugar
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
5 egg yolks
Salt
1 (9-inch) deep dish, frozen pie shell
1 cup chopped pecans, toasted
1 tablespoon maple syrup
Special equipment: steamer basket

Steps:

  • Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.
  • Preheat the oven to 350 degrees F.
  • Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.
  • Bake for 50 to 55 minutes or until the custard reaches 165 to 180 degrees. Remove from oven and cool. Keep refrigerated after cooling.

½ cup butter, softened
½ cup white sugar
1 cup low-fat milk

1 (9 inch) unbaked whole wheat pie crust

Steps:

  • Boil sweet potato whole in skin in a small pot until done, 40 to 50 minutes. Drain, cool sweet potato with cold water, and remove skin.
  • Break sweet potato apart in a large bowl. Mix in butter and beat well with an electric mixer. Beat in sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract on medium speed until mixture is smooth. Pour filling into unbaked pie crust.
  • Bake in preheated oven until knife inserted in center comes out clean, 45 to 55 minutes. Pie will puff up like a souffle, then sink down as it cools.
