BONNIE'S POTATO AND ONION PIE



BONNIE'S POTATO AND ONION PIE image

This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

Number Of Ingredients 8

2 pounds of russet potatoes, peeled and sliced very thin
1 medium size onion, peeled and cut in half, and sliced very thin
salt and pepper to taste (light on the pepper)
4 teaspoons of minced garlic
1 cup of grated cheese, divided
2/3 cup of sour cream, whipping cream, or milk (i use a combination of all three!)
1/4 cup parmesan grated fresh
pam spray

Steps:

  • 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
  • 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
  • 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
  • 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!

These mashed potatoes are rich and creamy and made with a secret ingredient that is going to make your next dinner extra special!

5 pounds Potatoes
3/4 cup Milk
3/4 cup Butter
8 ounces Cream Cheese
3 tablespoons Kosher salt

Steps:

  • Wash and peel the potatoes then cut them into 1-2 inch pieces.
  • Put the potatoes in a large pot and fill the pot with enough water to cover the potatoes. Add 2 tablespoons of salt to the pot.
  • Cover and place the pot on the stove over high heat. Bring the potatoes to a boil and let them cook for 15-20 minutes or until the easily break apart with a fork.
  • Drain the water from the potatoes and then place them back in the pot.
  • Add the butter and cream cheese and use a potato masher or a hand mixer to begin mashing the potatoes. Slowly add the milk 1/4 cup at a time until you reach the consistency you want.
  • Add the salt a teaspoon at a time until you reached your desired level of saltiness.

4 pounds Idaho russet potatoes (about 5 potatoes), peeled and cut into 1-inch pieces
1 pound celery root, peeled and cut into 1/2-inch pieces
Kosher salt
2 sticks butter, 1 softened and 1 melted, plus more for greasing
6 ounces cream cheese
1 cup half-and-half, warmed
1/4 cup prepared horseradish
1 teaspoon garlic powder
1/2 teaspoon ground white pepper
1/4 cup fresh minced chives

Steps:

  • Add the potatoes, celery root and 1 tablespoon salt to a large saucepan and cover with water. Bring to a boil and cook over medium-high heat until fork tender, about 15 minutes. Drain the potatoes and celery root.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking pan.
  • Whip together the cream cheese and softened butter in a large bowl with a hand mixer on medium speed until thoroughly blended, about 2 minutes. Add the hot potatoes and celery root slowly, alternating with the half-and-half. Whip until blended. Sprinkle with salt and stir in the horseradish, garlic powder and white pepper.
  • Pour the potato mixture into the prepared baking pan. Pour the melted butter over the potato mixture. Bake until bubbly and slightly brown, about 45 minutes. Garnish with the chives.

Mama usually just throws together whatever amounts she thinks taste good. But I did get her to give me a recipe with measurements.

5 pounds potatoes, peeled and cubed
1 cup sour cream
½ cup butter
½ cup grated Parmesan cheese
6 ounces cream cheese, softened
4 ounces extra-sharp Cheddar cheese, shredded
4 stalks green onions, chopped
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
  • While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
  • Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.
  • Bake in the preheated oven for 45 minutes. Serve piping hot.

They are the ultimate in comfort food, and the most requested dish she has at holidays. (Granny adds: Don't scrimp on the salt. If they taste bland, you need more salt.)Mama adds this hint: If you warm the milk before adding, the potatoes stay hotter longer for serving.

1 3/4 cups evaporated milk (1 tall can)
2 tablespoons sour cream
1/4 cup butter (no margarine)

Steps:

  • In large saucepan, cover potatoes with water and boil until you can easily smash one against the side of the pot with a fork.
  • Drain off water.
  • Add butter and salt. With electric mixer, whip potatoes until butter is melted.
  • Add sour cream and mix again.
  • Then slowly add milk while mixing. Taste.
  • If necessary, add more salt and mix again. Serve with gravy.

This is my grandma's recipe for plain old potatoes. They always come out fluffy and tasty! This is one of those old classics at our house...one of the 'nobody makes these like Momma' dishes.

1 egg white
¼ cup butter
½ cup half-and-half cream

  • Place potatoes and lemon juice in a large saucepan, and add enough water to cover. Bring to a boil over medium-high heat, and cook until tender, about 15 minutes.
  • Drain water from potatoes, and use a potato masher to mash. Stir in egg white and butter, and gradually mix in the half-and-half using the masher. Use more or less cream to reach your desired consistency. Season with salt and pepper to taste.

A good looking cowboy from Texas gave me this recipe. I count on him for good recipes from the ranch he runs. This is one that I've had for a long time and get many requests for. It has weird ingredients, but it sure does make a tasty side dish!

1 lb red potatoes, peeled and cubed
1 lb yellow potato, peeled and cubed
1 fresh jalapeno, seeded and chopped
4 garlic cloves
2 cups carrots, shredded
1 (10 ounce) package frozen white corn, thawed
1/4 cup butter
1/2 cup cheddar cheese, shredded
salt and pepper

Steps:

  • Cook potatoes, carrots, garlic, and jalapeno in a large pot covered with water bring to a boil over high heat.
  • Cook 15 to 20 minutes until potatoes are tender.
  • Drain water from pot.
  • Microwave corn for a few minutes to heat.
  • Stir corn into potatoes along with butter.
  • Mash the mixture with a mixer or potato masher until butter is melted and potatoes have reached desired consistency.
  • Mix in cheese, salt and pepper.
  • Serve hot.
