Slow Cooker Greek Chicken. Moist, juicy chicken with a bright Mediterranean flavors, roasted red peppers, and feta. Easy, healthy, and absolutely delicious!

1 tablespoon extra-virgin olive oil
2 pounds boneless skinless chicken breasts (or thighs)
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 jar roasted red peppers ((12 ounces), drained and chopped)
1 cup kalamata olives (drained)
1 medium red onion (cut into 1/2-inch chunks)
3 tablespoons red wine vinegar
1 tablespoon minced garlic (from about 3 large cloves)
1 teaspoon honey
1 teaspoon dried oregano
1 teaspoon dried thyme leaves
1/2 cup feta cheese (optional for serving)
Chopped fresh herbs: any mix of basil (parsley, or thyme, optional for serving (I used fresh thyme))

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Heat the oil in a large skillet over medium high. Sprinkle the chicken with salt and pepper, then place it in the hot pan, seasoned side down. Let brown on the first side for 1 to 2 minutes until golden, then flip and brown on the other side for 1 additional minute. If your skillet isn't large enough to fit all of the chicken pieces, work in batches so that the chicken does not overlap. Transfer the chicken to the slow cooker.
  • Arrange the peppers, olives, and onions around the chicken (do not place on top).
  • In a small bowl or measuring cup, whisk together the red wine vinegar, garlic, honey, oregano, and thyme. Pour over the chicken and vegetables. Cover and cook for 1 1/2 to 2 hours on high or 3 to 4 hours on low, until the chicken is cooked through and the center reaches 165 degrees F. Serve warm, sprinkled with feta and fresh herbs.

CHICKEN
6 chicken thighs, bone in, skinless
1 can mushroom soup
1/4 teaspoon kitchen bouquet
1 teaspoon cavender's seasoning
1/2 cup white wine
1 can sliced mushrooms, drained (or fresh mushrooms)
vegetable oil for frying
egg noodles for 6 cooked and drained
frozen or fresh green peas
COATING MIX
1 cup flour
2 teaspoons cavender's seasoning

Steps:

  • 1. Prepare the chicken thighs, removing the fat and skin. Dredge in the Coating Mix made with 1 cup flour and 2 teaspoons of Cavender's Greek Seasoning.
  • 2. Fry in 2 tablespoons hot oil until golden brown on both sides and remove and place the chicken in the crockpot
  • 3. Deglaze the pan with the white wine, and pour it over the chicken. Add the mushroom soup, sliced mushrooms, and 1 teaspoon Cavender's Greek Seasoning. Cook on low in the crockpot for 4 hours or until fork tender.
  • 4. Cook the egg noodles when the chicken is done. Drain. Mix a pat of butter and toss it in the drained noodles until the butter is melted. Add a dash of kosher salt.
  • 5. Cook the green peas in just enough water to cover. add 1 teaspoon of Cavender's seasoning and simmer until tender.
  • 6. When the peas and noodles are done, serve a chicken thigh on the plate, add some mushroom gravy to the chicken. Ladle a spoon of noodles and a spoon of peas on the plate. Add a spoon of the mushroom gravy to noodles. Garnish with parsley if desired.

This turned out great and is one of the best crock pot meals I've ever had. When I was throwing it all together in the slow cooker I decided to add in a couple handfuls of baby carrots... delicious!

4 medium potatoes, peeled and quartered
2 chicken breasts (I used bone-in, skin on but I'm sure you could use 3-4 boneless, skinless)
1/4 cup lemon juice
3 garlic cloves, minced
1/2 cup chicken stock
1 teaspoon dried oregano
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1/2 teaspoon onion powder
carrot (optional)

Steps:

  • Place potatoes in the bottom of crock pot (top potatoes with carrots, if using).
  • Top with Chicken breasts.
  • Combine the remaining ingredients and pour over the chicken and potatoes.
  • Cook on the low setting for 10-12 hours.
