After years of dry and flavorless banana bread, this recipe was worked out. The secret is using the ripest bananas...Almost too ripe to handle!

1 3/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
3/4 cup butter or 3/4 cup softened margarine
1 1/2 cups sugar
2 eggs
1/4 cup buttermilk
1 teaspoon vanilla extract
1/2-1 cup chopped nuts
1 cup well-mashed over-ripe banana
1 cup confectioners' sugar
2 -3 tablespoons lemon juice

Steps:

  • Preheat oven to 350°F.
  • Grease and flour two 8 1/2-by-4 1/2 inch loaf pans.
  • Combine flour, salt, and baking soda.
  • Cream together butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Add flour mixture and buttermilk alternately.
  • Beat batter 2-3 minutes.
  • Stir in vanilla, nuts, and bananas.
  • Spoon into loaf pans.
  • Bake about 50 minutes, or until a toothpick can be inserted and pulled out clean.
  • Cool before adding glaze.
  • For the glaze, stir confectioners' sugar and lemon juiice until smooth.
  • Pour over cooled loaves.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

SWEET CORNBREAD - BONNIE STERN

I'm such a lover of cornbread, that I couldn't pass up this version. Another wonderful recipe from her book "Friday Night Dinners". Bonnie writes that "she received this recipe from executive chef Anthony Rose of Toronto's Drake Hotel". Very easy and flavourful. She also mentions that the follow may be added: diced olives, sun-dried tomatoes or fresh herbs. We enjoyed the plain version very much. Easily halved and baked in a 9 x 9 pan.

2 cups all-purpose flour
1 1/2 cups cornmeal
2 tablespoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup granulated sugar
2 eggs
1/4 cup extra virgin olive oil or 1/4 cup butter, melted
2 1/2 cups buttermilk (see note below) or 2 1/2 cups soymilk (see note below)
1 cup corn kernel, grilled (optional)
1 jalapeno pepper, seeded and chopped (optional)

Steps:

  • In a large bowl, combine flour, cornmeal, baking powder, salt and sugar.
  • In a separate bowl, combine eggs, oil and buttermilk.
  • Add egg mixture to the large bowl and combine. Add corn and jalapeno, if using. Stir until all ingredients are moistened.
  • Transfer batter to an oiled 13 x 9 baking dish. Bake in a preheated 350*F oven for 35 minutes, or until bread springs back when pressed in center or a cake tester comes out clean.
  • Cool for 20 minutes before cutting.
  • NOTE: If using Soy Milk, sour by adding 1 tbsp of vinegar or lemon juice and let stand for 10 minutes before adding.

1 1/2 cups mashed ripe bananas (about 4)
1/4 cup yoghurt
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 cup chopped chocolate chocolate-covered english toffee bar (Skor bars)

Steps:

  • Combine banana with yoghurt in a small bowl.
  • Cream butter& sugar in another bowl; add eggs& vanilla.
  • Sift flour with baking soda in a third bowl.
  • Add flour mixture& bananas to butter batter alternatively in about 3 additions, beginning& ending with flour.
  • Stir in chocolate toffee bits.
  • Spoon batter into a buttered 9x5 inch loaf pan lined with parchment paper.
  • Bake in a preheated 350F oven for 55- 60 minutes or until a cake tester comes out clean.

I never met Bonnie but I've been making her meatloaf for years! Serve with her glaze on top - or your favourite tomato or mushroom sauce. Add some garlic mashed potatoes & a green vegetable for a great weeknight family dinner. Leftovers (if there are any) make a good sandwich.

2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
2 eggs
1 cup milk
1 1/2 cups breadcrumbs
2 lbs lean ground beef
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
2 tablespoons ketchup
1 teaspoon Dijon mustard

Steps:

  • Heat oil in a medium skillet.
  • Cook onions& garlic until tender; reserve.
  • Combine eggs with milk& bread crumbs.
  • Add onion mixture& remaining ingredients and mix well.
  • Press into a 9" x 5" loaf pan& cover with foil.
  • Bake in a preheated 375F oven for an hour.
  • Combine glaze ingredients in a small bowl.
  • Drain off any fat from meatloaf& brush glaze on top.
  • Bake for an additional 30 minutes, uncovered.
