BAKED BANANA DOUGHNUTS

These baked banana doughnuts are quick and easy. They can be stored in an airtight container but are best when fresh. My kids love them for breakfast or as a dessert. Serve plain or top with Nutella®.

¾ cup white sugar
2 eggs
2 ripe bananas, mashed
⅓ cup low-fat Greek banana yogurt
3 tablespoons canola oil
1 teaspoon vanilla extract
1 cup whole wheat flour
¾ cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 12-cavity doughnut pan with cooking spray.
  • Combine sugar and eggs in a large bowl; beat with an electric mixer until smooth and creamy. Add bananas, yogurt, oil, and vanilla extract; mix until incorporated. Add whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, and salt; mix until combined. Transfer batter to a resealable plastic bag.
  • Snip off one corner of the bag and pipe batter into the prepared doughnut pan.
  • Bake doughnuts in the preheated oven until slightly browned on the bottoms, 10 to 12 minutes. Remove from pan and transfer to a wire rack to cool completely.

Fried banana & peach donuts. My grandmother who is chamorro frequently made these donuts when the bananas got to ripe. She added canned peaches to make it sweeter. Recipe not for those who don't like fried food!!

3 very ripe bananas (not the plantain)
1 (15 ounce) can peaches, halves
1 teaspoon baking powder
1 cup flour
5 teaspoons sugar (optional)
vegetable oil (for Frying)

Steps:

  • Drain the can of peaches.
  • Peel and smash the bananas add the peaches and continue to mash together.
  • Sift the baking powder & flour into the mashed mix, add sugar if using.
  • stir the mix
  • Heat oil in pan or wok (about 320ml or 1/3 cup 4x) should be enough to allow the dough to float.
  • Place tablespoon worth of mix into hot oil, the dough will begin to turn golden brown and float, turn the donut over to get same likeness of color.
  • remove and place on a plate w/ paper towels.

I am not much of a baker or dessert maker, but I gave this the old college try for a recent Sunday brunch. I've been wanting to make these because I love bananas so much. Friends liked them, but I had mixed feelings. Please let me know what level of success (or lack of) you have with this - thanks.

5 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons salt
1 teaspoon nutmeg
1/4 cup butter
1 cup sugar
1 1/2 teaspoons vanilla extract
3 eggs, well beaten
3/4 cup mashed banana (about 2 good-sized bananas)
1/2 cup buttermilk
1/2 cup flour, for rolling
deep oil (for frying)

Steps:

  • Sift flour, measure and resift 3 times with baking powder, soda, salt, and nutmeg.
  • Cream butter then blend in sugar, add vanilla, and eggs, and beat until light and fluffy.
  • Add combined bananas and buttermilk, and stir until well mixed.
  • Add flour mixture in 3 or 4 portions, stirring thoroughly after each addition.
  • Chill for at least 2 hours before rolling.
  • Remove 1/4 of dough from refrigerator at a time, knead it lightly 4 or 5 times, roll to 3/8 inch thickness, and cut with floured 2-1/2 inch doughnut cutter.
  • Liberally sprinkle rolling surface with flour so dough won't get claggy and stick.
  • Fry in deep oil heated to 375 ° F. until golden brown, then lift out and drain on absorbent paper.
  • If desired, the dough may be covered tightly and kept in the refrigerator for 1 to 2 days, to be fried as needed.
  • Sprinkle with brown sugar or powdered sugar, or if you have the tools, put whipped cream inside.

½ cup butter, softened
1 tablespoon brown sugar
1 tablespoon instant hot chocolate mix
3 bananas, peeled
1 large fresh peach - peeled, pitted, and diced
¼ cup milk
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
½ cup chopped walnuts
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 5x9-inch loaf pan.
