Time 2h

Yield 36 serving(s)

Number Of Ingredients 10

nonstick vegetable cooking spray
2 cups all-purpose flour
1/4 teaspoon salt
1 cup unsalted butter, room temperature
1 cup sugar
1 teaspoon vanilla extract
1 large egg yolk
6 ounces chocolate (bittersweeit or semisweet chopped)
1/2 cup finely chopped red-and-white-striped hard peppermint candies (about 3 ounces) or 1/2 cup candy cane (about 3 ounces)
2 ounces high-quality white chocolate (such as Lindt or Perugina)

Steps:

  • Preheat oven to 350°F Spray 13x9x2-inch metal baking pan with nonstick spray. Line bottom of pan with long strip of 9-inch-wide parchment paper, leaving overhang on both short sides of pan. Whisk flour and salt in medium bowl. Using electric mixer, beat butter in large bowl until creamy, about 2 minutes. Gradually beat in sugar. Continue beating until mixture is light and fluffy, stopping occasionally to scrape down sides of bowl, about 3 minutes. Beat in vanilla, then egg yolk. Gradually add flour mixture, beating on low speed just to blend.
  • Drop dough by tablespoonfuls into prepared baking pan, spacing evenly. Using moistened fingertips, press dough to form even layer over bottom of pan. Pierce dough all over with fork.

Let stand until chocolate softens, about 3 minutes. Using small offset spatula, spread bittersweet chocolate over top of cookie in thin even layer. Immediately sprinkle chopped peppermint candies over.
  • Stir white chocolate in medium metal bowl set over saucepan of simmering water until melted and smooth. Remove from over water. Using fork, drizzle white chocolate all over cookies. Chill until white chocolate is set, about 30 minutes.
  • Using paper overhang as aid, lift cookie from pan and transfer to work surface. Using large knife, cut cookie into irregular pieces. DO AHEAD Can be made 1 week ahead. Store in refrigerator in airtight containers between layers of waxed paper or parchment paper.

VEGAN CHERRY BON-BON COOKIES

Vegan Cherry Bon-Bon Cookies image

Taste of Home's Cherry Bon Bon cookies were a holiday and gift staple in my house--So imagine how I, now a vegan trying to inspire others to adopt a plant-based and cruelty free diet, felt daunted by the idea of not being able to continue my holiday traditions. So instead of giving it up, I put on my big girl pants and worked at that recipe until it was vegan, and not one of my non-vegan coworkers would be complaining that I deprived them of butter. It is important for a vegan recipe that you use VEGAN sugar-- most people don't know that standard granulated and powdered sugar is refined with animal bone char, therefore making it non-vegan. If you can't find vegan powdered sugar at your grocery store, opt for an equal amount of unrefined CANE sugar and pulverize it in your blender until it becomes a powder. (Worst comes to worst, order vegan powdered sugar online from a reputable source and have it sent to your doorstep.) When cooking for someone with a soy allergy, opt for almond milk. If allergic to almonds, you may also find rice and hemp milk work just as well.

Categories     Dessert

Time 1h20m

Yield 24 cookies, 24 serving(s)

Number Of Ingredients 10

1/2 cup margarine (Vegan option -- I use Earth Balance)
3/4 cup powdered sugar (yegan powdered sugar is available)
2 tablespoons original soymilk (elect almond milk if baking for someone with soy allergies)
1 teaspoon vanilla extract
1 1/2 cups unbleached all-purpose flour
1/8 teaspoon salt
24 maraschino cherries (Merry Cherry brand as a non-GMO, non-dyed, vegan option)
1 cup powdered sugar (elect vegan option)
1 tablespoon margarine (vegan Earth Balance)
2 tablespoons maraschino cherry juice (reserved from jar)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Drain maraschino cherries in a collander, reserving the liquid in a small cup, bowl or jar. Dry off cherries with a paper towel, tossing around to remove all excess juice that may gather at the bottom of the collander. Set aside.
  • 3. In a large bowl, cream Earth Balance and vegan powdered sugar until light and fluffy. Add soymilk and vanilla extract. In a seperate bowl combine flour and salt; gradually add to the creamed mixture.
  • 4. Gather any loose moist crumbs with your hands and press together to form a ball of dough. Divide dough into 24 portions; shape each portion around a cherry. Try to handle lightly and as quick as possible to prevent your hands from getting greasy. Dough should fit around each cherry with no air bubbles inside. Pinch and smooth the dough together and roll around in palms. For a more perfect domed "bon-bon" shape, press cookie into a circle tablespoon, and remove gently to retain shape. Place onto a baking sheet lined with parchment paper.
  • 5. Bake at 350 degrees for 18-20 minutes or until lightly browned. Remove to wire racks to cool.
  • 6. For glaze, combine the powdered sugar, melted Earth Balance and cherry juice until smooth. Drizzle over cookies. Dust with additional powdered sugar if desired.

DORIE GREENSPAN’S SUGAR COOKIES (BON APPETIT DECEMBER 2007)

DORIE GREENSPAN’S SUGAR COOKIES (BON APPETIT DECEMBER 2007) image

Categories     Cookies     Dessert     Bake     Christmas     Easter     Thanksgiving     Valentine's Day     Halloween

Yield 35 cookies

Number Of Ingredients 12

10 tablespoons (1 1/4 sticks) unsalted butter, room temperature
1/2 cup sugar
1/4 teaspoon salt
1 large egg
1 1/4 teaspoon vanilla extract
1 teaspoon lemon zest
2 cups all-purpose flour
Decorations: red hots, silver pearls, etc.
FOR ROYAL ICING:
3 1/4 cups powdered sugar, sifted
2 large egg whites
1 teaspoon lemon juice, strained

Steps:

  • Cream together the butter, sugar and salt in a mixer fitter with the paddle attachment, until pale and fluffy, about 2 minutes. Add egg, beat until well blended, about 1 minute and then add vanilla. Scrape down the sides of the bowl. Add flour and beat on a low speed until just combined. Gather dough into a ball;divide in half. Form each into a flattened disk and wrap in plastic, chill for at least 3 hours. It ca be made up to 2 days ahead. Position rack in center of oven; preheat to 350 degrees. Line 2 baking trays with parchment paper. Working with one disk at a time, roll out dough between two sheets of wax paper to 1/8″ thin. (I didn't have any so I rolled mine out on a lightly floured counter and it was just great. I had to add flour when it seemed that the cookie dough might stick to the counter or rolling pin.) Use cookie cutters, cut out cookies and transfer to a cookie sheet, spacing 1 inch apart. Gather any scraps, roll them out until all the dough is used. If not using icing then decorated with sprinkles before baking. Bake one sheet at a time until cookies are firm and golden around the edges, about 10 minutes for smaller cookies and up to 14 minutes for larger ones. Cook completely on rack. Decorate with Royal icing, sprinkles or other decorations. Let stand until icing sets. FOR ROYAL ICING: Use electric mixer, beat 3 1/4 cups powdered sugar, egg whites & lemon juice until thick & shiny. Add more powdered sugar by the tablespoon if it is too thin to spread, about 3 min. Cover w/ wet towel until use. Fill parchment pastry bag with ~3tblsps of icing. Consistency should be soft enough to pipe but firm enough to hold its shape, like soft mashed potatoes. Cut very small hole at the tip of the bag and draw an outline around the cookie. Separate the icing into little bowls for food coloring. Thin out some icing to flood - make it consistency of molasses. Decorate.

(4 batches at a time doesnʼt work for me). ICING: Mix together 1 cup sifted confectionerʼs sugar, 2 Tbsp cream (or milk) and 1 tsp vanilla. Add pastel food coloring as desired.
